Hey all!
I’ve been gone a while, but I return with food 😋
I have a Ninja Creami, that I’ve used to make ice cream a few times. But I didn’t like that all the “official” ice cream recipes call for cream cheese…which is a weird ingredient I think.
Also ever had frozen milk? That gross texture, was how my ice cream turned out.
Barf.
So I trolled around online, and found a recipe for coffee ice cream that looked promising. Except for the fact that I HATE coffee lol
Instead, I brewed some strong black tea that I love.
It’s butterscotch. ‘Nuff said.
And it turned out AMAZING!!

But it needed a little something more…something like caramel!
I had some I’d bought from the store, pre low waste journey, but it soon ran out.
And by now my hunger for butterscotch black tea ice cream was insatiable.
So what was a gal to do?
Simple! I’ll just make my own caramel.
For the first time…
It’ll be fine right?
And it WAS!

So proud of me, making low waste ice cream and caramel sauce 💖
*tea is loose leaf, and is composted after brewing. The milk/cream I used for ice cream is purchased in recyclable containers. Only the lids themselves are garbage. Sugar, salt, and vanilla extract are purchased from my local bulk foods store-in reusable bulk bags, and one small glass container I reuse for the vanilla.

Made the creme brulee for work tonight. First time in a while, but ya girls still got it. Made homemade salted caramel for the filling.. topped with caramel almond tuille, caramel drizzle and a sprinkling of coarse salt 💜☺️

Spiced-Up Caramel Recipe:
Ingredients:
- 1 cup granulated sugar
- 6 tablespoons unsalted butter, cut into pieces
- ½ cup heavy cream
- ½ teaspoon sea salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
- 1 teaspoon vanilla extract
Instructions:
1. In a heavy-bottomed saucepan, heat the sugar over medium-high heat. Stir continuously until the sugar melts and turns into an amber-colored liquid.
2. Carefully add the butter to the melted sugar, stirring constantly until the butter is completely melted and mixed in.
3. Slowly pour in the heavy cream while stirring constantly. Be cautious as the mixture will bubble up.
4. Stir in the sea salt, cinnamon, nutmeg, cloves, and ginger. Cook the mixture for another 1-2 minutes, stirring constantly.
5. Remove the pan from the heat and stir in the vanilla extract. Let the caramel sauce cool for a few minutes before using or transferring it to a jar for storage.
This spiced caramel sauce is perfect for drizzling over ice cream, dipping apples, or using as a topping for desserts!

Chocolate chili caramel
Combine in a pot and boil until it reaches the consistency you prefer. I usually do soft ball, but this time I think I went for around 140C, so quite hard but still chewy caramel. Stir occasionally and make sure you push down the mixture that stuck on the edges.
3.5 dl (1 can) dark syrup 3.5 dl double cream 3.5 dl sugar 1 dl dark cocoa powder 1 tsp chili powder
Stage Fahrenheit Celsius Hard Ball 250-266 F 122-130C Soft Crack 270-290F 132-143C Hard Crack 295-310F 146-155C Caramel 320-360F 160-182C

Espresso caramel brownies
In 100 Cookies cookbook
Fun to make (includes making homemade caramel!) and the texture is nice. I don’t love the flavors personally but I could see espresso/caramel lovers adoring these. People who tried them enjoyed!

Karameliserede nødder! 🧑‍🍳⚠️

Caramelized nuts. Good as "candy" or as a sprinkle on ice cream or chocolate cake or other dessert. Very easy, very delicious, very dangerous.
Ingredients:
150 g nuts (whatever nuts you like/can have)
140 g sugar
30 ml water
500 ml boiling water for clean-up
How to:
If you dislike the skin on nuts, remove that first. Of course remove the shell, should you get your hands on nuts in shells. (bake hazelnuts at 200 c for like 5 minutes for the skin to rub off. Soak almonds 2-3 minutes in boiling water for the skin to shoot off)
Chop nuts roughly
Heat a non-stick pan to medium high heat (like 6-7 out of 9). Also turn on your kettle so you have the boiling water ready for cleaning.
When pan is hot you pour in water and sugar. Stir gently with a wooden spoon until the sugar is dissolved
Wait until your sugar water starts to turn golden. Do NOT stir while it does this. Stirring will make it crystallize and be weird.
Put the nuts in and quickly, but gently, stir the caramel goop unto the nuts
Let caramelize until the hue of golden brown you like. This will smell like you're burning the sugar, which, to be honest, you are doing, but that's the point.
When caramelized to the desired color place on a piece of baking paper, preferably on a baking sheet or cutting board
Make it be one thin-ish layer and let cool completely
While you wait for it to cool you boil the remaining caramel out of your pan by simply adding boiling water and stirring it.
When cold, break it up for candy or chop it up for sprinkles
⚠️ Melting sugar is extremely hot (160 C) and leaves lifelong burn scars should it touch your skin. And they are ugly scars; bulbous and other weird textures. Should you be so unlucky that it hits you, leave the thing and wash with cold water until you turn numb from the cold and then soak in cold water. Get someone else to remove the caramel from heat and do the cleaning. So, just be careful when you work with caramel :] ⚠️
