Foods of Thedas: Prepared Ingredients
I separated these from raw ingredients because they either are foods/drinks on their own but are included in recipes, or involve a certain amount of cooking/processing to make them that separates them from those listed in raw ingredients. However, like with raw ingredients, I’ve only included items that are mentioned or shown in game for easy reference. Should you want to find additional and “speculative” ingredients you can visit this post or the master post.

30 days of productivity challenge
days 6 and 7:
i snuck in a picture of my family's dog, chloe, that loves to hang out with me while i take over my dad's office desk to grind out some work.
are you a tea person or a coffee person? or neither?
i am definitely not a tea person...but i also don't consider myself a coffer person per say. i drink a decent amount of coffee, especially while studying, but i would say I drink more diet mountain dews and energy shots than i do coffee. but, my go-to coffee order these days is between a caramel macchiato and the salted caramel cream cold brew from starbucks.
what is your go-to song/playlist for studying?
depending on my mood, i'll either put on my chill playlist that is a mix of all of my comfort songs/artists (brandi carlile, noah cyrus, renee rapp, and other similar styles of music) or i will just put on the harry potter soundtracks.
🎵: broken horses | brandi carlile

Note
My grandmother once told me “a way to a man’s heart is through his stomach,” which to be fair considering her may have been sword technique advice. However, I was curious if you’ve ever done food for seduction. If you wanted to get someone into your bed, what would you cook them before hand? And do Tamrielic cultures have a standard “come hither” meal?
If it's a romantic meal you're after, you've come to the right place. Whether it's Heart's Day or something a little more low key, you'll make anyone in Tamriel drool over you and your kitchen prowess with these meals!
Altmer
Just like with anything else in the Summerset Isles, subtlety is key when wooing. Relationships can take centuries to build between Altmer, so some choose to speed things up a little with what's known as a courtship basket: a not-so-simple picnic that's bound to wow. First, pick a stunning picnic location and an even more stunning wine. Load up that basket with all of Summerset's finest, from peach blossom indrik ricotta and Russafeld Heights grape honey to freshly baked spiced loaves and caviar. The rest is up to you!
Argonians
As many know, Argonians become life mates through bonding ceremonies, which are a quintessential part of Saxhleel culture. Bonding ceremonies usually entail a feast, usually with foods purported to put the happy couple in an amorous mood. One of the most famous aphrodisiac dishes is juicy Moss-Foot Croaker tree frog legs grilled in pandan leaves with wild bush honey, served atop gratinated witchetty grubs and Spotted Seatrout roe.
Bosmer
Love is a precious thing in Valenwood, and courtship often involves lots of food to test a potential spouse's skill in the kitchen and as a homemaker. The much-loved Husband's or Wife's Pie (known to some as Courtship Pie) tests those culinary skills from the fiddly all-butter thunderbug carapace crust to the twelve-hour meat and jagga filling. It's an exercise in patience and love to be sure!
Bretons
Nothing is quite as romantic as a night in Wayrest at a nondescript, candlelit gourmet restaurant with a two-year waitlist. If you can't wait that long, do the next best thing and host that dinner at home (the bedchamber is just around the corner, no?). Popular courtship dishes are generally rich and include foie gras with wild berry and shallot coulis, lamb saddle served medium rare with black truffle sauce, and salted caramel and brandy custard mille-feuille.
Dunmer
The famous Queen and lover Barenziah was particularly fond of a certain dish, which Dunmer in the many years after her influence still present to potential mates as a not-so-subtle hint at something more. The dish is none other than the notoriously finicky marshmerrow and comberry choux-fflé, which is exactly what it sounds like: a feat of culinary engineering that combines delicate marshmerrow and scuttle soufflé in a clamshell of sweet saltrice choux pastry. Guaranteed to make any Dark Elf fawn over you as if you were Narsis Dren.
Imperials
Imperials aren't exactly renowned for being the best with big feelings (it's all the Divine guilt), so showing someone you love them with food is the most common love language in the Province. Whether it's one of Salmo's sweetrolls, a hearty home cooked meal, or an unforgettable stay at one of the Imperial City's top hotels, there's no wrong way to go about Imperial courtship food. However, if you really want to impress, go for a dark chocolate and pomegranate torte, with a fudgy melting chocolate centre and topped with pomegranate treacle. Indulgent!
Khajiit
It's said that Khajiiti love is as fiery as their curries, but we all know better than to eat a hot curry on a date. So, what does one offer their partner when romantically inclined in Elsweyr? Try a silk-wrapped box of moon sugar bonbons from the closest gourmet sweet shop! A box of moon sugar candy is one of the most thoughtful gifts you can woo a Khajiit with, whether it's cardamom-milk cakes or hard boiled coconut and ginger sweets. Just be careful at the confectioners, because clashing flavours are a sign of bad taste...
Nords
If there's one race whose digestive system is directly linked to their nether regions, it's Nords. Just the mention of a romantic meal of buttery mudcrab legs with sourdough, twice-roasted elk basted in juniper spiced Honningbrew Mead, and snowberry pudding with a Nord Ale caramel drizzle is enough to make any Skyrim native do that thing where they brush their hair behind their ear while biting their lip at you.
Orcs
Historically speaking, there are two food items that are a must for wooing an Orc: echatere cheese, and proper Wrothgarian ale. Put the two together and you'll be planning a spring wedding. Echatere cheese and Orcish ale fondues, pies, sauces, and much more are the best way to use these star ingredients, but I prefer a bit of a twist: echatere cheesecake with a caramelised biscuit crust and berry-ale compote.
Redguards
Redguards are known for being passionate lovers, who write rambling love poetry and frantically check their birthsigns for relationship compatibility. With that in mind, you're going to have to work hard in the kitchen to gain a Redguard's love. If you're not sure where to start, skip the Middas special camel-stomach meatloaf at the inn and get right to the kitchen to make some rasmalai! This unique spiced dessert of sweet cottage cheese balls are served with crushed pistachios, and a cardamom, saffron, and rose-infused cream. The punchier and more balanced the spices, the more likely you are to pull that date.

Sweet Holiday Breads
So by this I'm talking about those cinnamon raisin breads you might see in the store, or a generic rich bread that might have chopped fruit in it. This isn't brioche, or laminated bread, or even something using tangzhong.
Here, a half loaf is about 8 bucks, which is ridiculous.
I've done this with leftover dough, but you will need to have an idea of how much flour you've got in there, or an approximate amount compared to your loaf pan.
A basic recipe, using Bernard Clayton's Babka bread, would be this:
2 cup flour (this will likely need another 1/4 cup to come together)
1 Tb yeast (You can go down to 1 tsp, but we're aiming for cheap and fast)
3/4 ish cups milk (potato cooking water for an ultra tender dough, milk and water, etc.)
1 tsp salt (you might be able to get by with 3/4 tsp, but I find that this amount works nicely)
2 eggs or 1 yolks 1 egg depending on the dryness of the day and size of eggs you have. Save extra whites if you want to brush the top.
1/4 cup very soft or melted but not super hot butter (can go down to 2 TB, but you do need some.)
1/4 cup sugar (I do not add this. I do add 1 TB honey for rising speed + helping the bread keep longer, but it will get you closer to the commercial levels of sugar.)
Mix up with flavorings of choice, and let rise. You do not need to knead heavily, but you do want no flour lumps and at least a minute of vigorous troubling. When you're ready to fill it, work in enough flour that it's not sticking to your hands, but do not go until it's not sticking to a dry board. Prep a greased loaf pan before you get to filling, since your hands might be too sticky afterwards.
Flavorings:
1/4 tsp vanilla extract
small pinch ground cardamom. I buy the seeds and run them through a mortar and pestle for price reasons. You could also do a pinch of saffron in the milk, but that's not cheap.
Do not mix in cinnamon in the dough unless you have plenty of time. Cinnamon slows the action of yeast, and can make your bread take twice as long to rise.
Fillings:
(Pat out your dough to about a 6 inch by 10 inch rectangle and spread out to taste. You can knead chopped fruit in, but hold back having it break the surface. Raisins or the like will turn very dark and puff up, which is a favorite treat for my father, but can be aesthetically unpleasing. PIck about three of these at most at first.)
1/2 cup raisins / dried mixed fruit (rehydrate in rum / brandy / water that you've heated up if it seems very dry.)
1/2 cup nuts (toasted pecans, walnuts, slivered almonds. Cut up into smaller pieces for easier cutting.)
1/2 cup chocolate chopped (do not get near the surface of the dough, since it will make a mess.)
1/2 cup almond paste (make your own with 50 g almond flour, 50 g sugar of choice, 1 egg, almond seasoning.)
1/4 cup cinnamon sugar paste (2 TB butter, 2 TB sugar, as much cinnamon as you deem necessary. 2 TB?)
8 sugar cubes, smashed lightly with 1 TB cinnamon
Roll up, put in greased pan, cover to not dry out, and it'll rise in about an hour. Brush with egg if you want.
Bake 350 for 45. You may find it done at 35, and want to roll it out of the pan to brown the bottom a little more. Allow to cool to barely warm, or it will crush itself when you try to cut it. Freezes well.
Combinations:
Cinnamon sugar paste, raisins, pecans or walnuts: a standard fancy breakfast bread here
Dried fruit of choice, almond paste, chocolate: Babka esque
Double the dried fruit (must add prunes / figs if you're being super traditional) and nuts, knead it in: a version of schnitzbrot
Make the dough in rolls fill with cinnamon and sugar or the sugar paste, put cinnamon and sugar paste in the bottom, add pecans to taste inside and below: Pecan sticky buns. Be careful when you remove from the pan because the sugar + butter will make lava like cinnamon caramel.
Sugar cubes and cinnamon = A fast version of Danish sugar lump bread.

STICKY DATE PUDDING WITH CARAMEL SAUCE
Tumblr media
Ingredients
Caramel Sauce: 3/4 cup butter 1 cup + 2 tablespoons brown sugar 1 cup + tablespoon heavy cream 3 tablespoons brandy or rum
>>> Get a FREE EBOOK With 101 Recipes Here <;<<
Date Pudding: 3 cups pitted dates 1/2 cup granulated sugar 1/2 cup packed brown sugar 15 fluid ounces of warm water 3 eggs 1 1/2 teaspoons vanilla 7 tablespoons butter, melted 1 3/4 cup all-purpose flour 3/4 teaspoon baking powder 3/4 teaspoon sea salt *Optional: Whipped Cream and orange zest for garnish
Instructions
Preheat your oven to 350* Using butter generously grease a 9" x 9" square baking pan. Set aside.
Prepare Caramel sauce:
In a large saucepan melt butter
Add the brown sugar and whisk until blended.
Add the cream along with the brandy or rum. Bring to a boil, then reduce to a gentle simmer, instead of using a spoon to stir, gently swirl the pan occasionally, for 10 minutes. Remove from the heat and allow to cool.
Cake batter:
Using a food processor, blend the dates, granulated sugar, and brown sugar until a paste forms.
Add the water, eggs, and vanilla; purée until smooth.
While the machine running, slowly add the melted butter and mix until blended. Using a plastic spatula scrape the date mixture into a large bowl and set aside.
Whisk together the flour, baking powder, and salt.
Add to the date mixture and whisk until just combined. Do not over-mix!
Pour the batter into the prepared 9"x9" pan. Use a spatula or knife to level the top of the cake.
Bake until the center of the cake is set and just barely jiggles, about 30 minutes. Remove from the oven and allow the cake to rest for 5 minutes.
Using a wooden skewer or toothpick, poke random holes all over the top of the cake. Pour a cup of the prepared caramel sauce evenly over the cake.
Return the cake to the oven and bake for another 8-10 minutes.
Remove from oven. Cool for five minutes.
To serve, slice the cake into individual servings while it’s still warm. Top each with a bit of prepared caramel sauce.
*Optional: Top with whipped cream and orange zest.

1/4 teaspoon each ground allspice, cloves, ginger and nutmeg and cardamom
1/8 teaspoon salt
1 tablespoon cornstarch
1 tablespoon lemon juice

7 ounces plain or lightly toasted sugar (about 1 cup; 200g)
3/4 ounce cornstarch (about 3 tablespoons; 20g)
1/8 teaspoon (0.5g) Diamond Crystal kosher salt; for table salt, use about half as much by volume or the same weight
2 large eggs (about 3 1/2 ounces; 100g)
10 ounces cultured, lowfat buttermilk (about 1 1/4 cups; 285g)
8 ounces heavy cream, straight from the fridge (about 1 cup; 225g)
1 tablespoons finely grated cheddar
1/2 ounce apple brandy, or other fruity spirits like whiskey (about 1 tablespoon; 15g), optional
1/4 teaspoon orange blossom water, optional
Instructions
Honey Cake
Heat oven to 350F.
In a deep bowl, combine farina, baking powder, sugar and coconut then mix well.
Melt the ghee in the microwave or stove top then dissolve the honey in it.
Add the ghee mixture to the bowl of dry ingredients and mix well to combine.
Add the yogurt and mix, just until everything is well incorporated.
Brush a round 12 inch baking sheet with the tahini and spread the basbousa mixture evenly.
Spread nuts on top evenly to decorate.
Bake in the middle of your oven until edges start to brown, this took about 10 minutes. Then move the basbousa up to the higher shelf and let it continue cooking until golden brown will take anywhere from 15 to 20 minutes.
Honey Cake Syrup
When you move the basbousa to the upper shelf start making the syrup.
In a small saucepan over medium heat, combine syrup ingredients and bring to a boil.
When it boils, reduce heat and simmer for 10 minutes.
Turn heat off and keep the syrup warm.
When basbousa is done, turn off your oven and take it out.
Pour the syrup evenly and cover the basbousa immediately with foil. Return to the TURNED OFF oven for 5-10 minutes.
Take it out, cut and enjoy
Caramel apples
Melt butter in a large skillet over medium heat. Stir in brown sugar until dissolved. Add the apples, cinnamon, allspice, cloves, ginger, nutmeg and salt. Cook and stir until apples are crisp-tender, about 8-10 minutes. Combine cornstarch and lemon juice in a small bowl until smooth. Add cornstarch mixture to skillet. Cook and stir 1-2 minutes longer or until caramel has thickened. Remove from the heat. Transfer apple mixture to a bowl. Cool to room temperature. Cover and refrigerate.
Ice cream
In a 3-quart stainless steel saucier, whisk together sugar, cornstarch, salt, and eggs, followed by the buttermilk. Cook over medium-low heat, whisking constantly but gently, until warm, about 3 minutes. Increase heat to medium and continue whisking until thick and steaming hot, about 3 minutes longer. When the custard begins to bubble, set a timer and continue whisking for exactly 1 minute to neutralize a starch-dissolving enzyme found in egg yolks (or just achieve 170F). Grate cheddar into the hot custard before straining.
Strain into a non-reactive container, then whisk in cream, brandy, and orange blossom water, if using. Season to taste with additional salt, if needed. Cover and refrigerate until no warmer than 40°F (4°C), or cool to the same temperature in an ice bath. Meanwhile, place a 1-quart container and flexible spatula in the freezer.
Churn the chilled base immediately in an ice cream maker according to the manufacturer’s directions, until fluffy and thick enough to gather in the dasher. When the ice cream is ready, shut off the machine and, using the chilled spatula, scrape into the chilled container, layering in caramel apple, honey cake, and apple cider caramel. Enjoy as soft-serve, or cover with plastic pressed directly against surface of ice cream, then close lid and freeze until firm enough to scoop, about 4 hours. Serve with additional cheddar grated on top.
Notes
Historically, buttermilk has always been lowfat by nature, because it was a byproduct of churning butter. Modern manufacturing methods may not produce buttermilk the same way, but low-fat styles best mimic the flavor and body prized in the original.
