Mike is sick so chicken noodle soup seemed like a good idea. And a Thai-inspired one sounded even better to me. 
I made several modifications of this recipe:
I didn’t have any curry paste (I know, I know! That’s the main thing! But I was also feeling too lazy to go to the grocery store, so I subbed a teaspoon of curry powder instead. Totally different flavor but still good.)
I used red, orange, and yellow bell peppers, since that’s what I had.
I used stir-fry rice noodles, which I cooked separately as the recipe suggested.
I used a block of tofu instead of chicken.
I used more ginger than was called for (probably 1.5 or 2 tablespoons), and more garlic.
I topped it with cilantro and extra lime juice; Mike added sriracha to his, Michaela added soy sauce (don’t ask me why).
I wish I’d bought peanuts to chop and put on top. But otherwise, I would say this came out really well. Michaela asked for seconds, which doesn’t often happen when I cook. (LAME.)
Today, when I warmed some soup up for Mike’s lunch, I added crispy jalapenos to it (like the French fried onions used in green bean casserole, but jalapenos) and that added a delicious crunch and extra spice.

january 9, 2024 — dinner
NACHOS! using o organics white corn tortilla chips + fajitas (white onion and green bell pepper w oregano and cumin) + ground beef (using my brother's recipe) + 2024 recipe 1 queso via gimmesomeoven + quick pico de gallo (diced tomato, white onion, jalepeno, cilantro, lime) + diced avocado
these tortilla chips are soooo interesting. they are coarser and taste ... nuttier? than other chips. very pleasant. they hold up decently under nacho toppings — i needed a fork but they didn't disintegrate.
and overall — YUMMY. i love nachos!!!! heated chips, beef, fajitas in the oven at 400 for like, 5-10min and then piled om queso and cold ingredients.
and now i have enough of everything except the pico de gallo left over to make 2 more quick meals of this. note to self that just dicing tomato and dressing w lime juice will capture most of what i want out of pico de gallo. do NOT skip the lime!!

Carrot Cake Cupcakes
Ingredients (for cupcakes):
3/4 cup avocado oil (or any mild-flavored oil)
1/2 cup granulated sugar
1/2 cup packed brown sugar
3 eggs
2 teaspoons vanilla extract
1 2/3 cups flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
8 ounces finely-grated* fresh carrots
Ingredients (for frosting):
1 (8-ounce) package cream cheese, room temperature
1/2 cup butter
1 teaspoon vanilla extract
3-4 cups powdered sugar
Directions:
Make the cupcake batter.  Mix together the oil and sugars, followed by the eggs and vanilla, then the dry ingredients, and then the shredded carrots.
Fill and bake.  Fill your cupcake liners about 3/4 of the way full of batter.  (Do it with an ice cream scoop.) 
Make the frosting.  Be sure that your cream cheese and butter are both room temperature.  Then stir them together with the vanilla until smooth. Stirring it with your hands is the best. And finally, stir in however much powdered sugar you need to reach your desired consistency.
Frost the cupcakes.

Special Notes:
1. Baked in NuWave Oven for 20 minutes or until toothpick came out clean.
2. Spaghetti-style frosting done with a Starbucks caramel bottle.
3. For EXTRA crispy top I added cinnamon powder on top of mixture in mold.
4. Sprinkled a little bit of cinnamon into the frosting as well.
5. First batch was made with only half a teaspoon of sea salt and was milder, sweeter and better.

When a friend came down with COVID, I offered to make her soup. I figured something with big, bold flavors -- that’s what I always like when I’m sick -- so gave her a choice of my carrot ginger soup or this. She picked this, which I was happy to make because 1) I’ve had this receipt bookmarked for ages but never tried it and 2) I had all the ingredients on hand!
It was extremely easy to make. Since I was doing it in the Instant Pot and knew I was going to puree it, I didn’t worry about going too crazy dicing the carrots and onions; I just threw them in my food processer, then sautéed. Used some frozen corn I partially defrosted and otherwise followed the instructions (I didn’t have saffron, but I did use cayenne). Pureed it with my immersion blender and voila. 
Because I used brown lentils, not red, I didn’t get the bright yellow color in the picture, but the flavor was great. My friend said it was delicious and that she loved the consistency and the flavor. I consider that a win!
