Muffuletta Sandwich Serves 6 Prep time 6 hours, 30 minutes
Ingredients
1 x round crusty loaf of bread (boule, cob or sourdough - about 6" or 15cm diameter) 2 tablespoons extra virgin olive oil (can use herb infused oil) 2 tomatoes, thinly sliced 2 to 3 sprigs of fresh oregano (leaves only or 1/2 teaspoon dried oregano) 1 tablespoon capers 1/2 red onion, peeled and thinly sliced 75g pimento stuffed green olives (cut in half) 4 x slices smoked pork loin (or smoked ham) 6 slices provolone cheese (or provoletta cheese) 8 slices coppa (or salami) 100g mozzarella cheese (cut into thin slices) Sea salt and freshly cracked black pepper to taste Cling-film, greaseproof paper and string
Note A Muffuletta Sandwich is a popular sandwich originating among the Italian immigrants in New Orleans, Louisiana, using a Sicilian sesame round bread loaf, it is stuffed with ham, salami, cheese and an olive salad.
Directions
Step 1 Cut the round loaf of bread in half horizontally, and scoop some of the crumb out, to make a hollow. Keep the breadcrumbs for later, I usually freeze them. Step 2 Drizzle the olive oil inside the bread, top and bottom and season to taste with sea salt and freshly cracked black pepper. Step 3 Start to fill and layer the sandwich as so: sliced tomatoes, oregano leaves, capers, sliced red onions, olives, 2 slices of pork loin or ham, 3 slices of provolone cheese, 4 slices coppa or salami, the mozzarella slices and the remaining 3 slices of provolone cheese and 4 slices of coppa. Step 4 Place the lid of the sandwich loaf on top, pressing down to make a seal; wrap tightly in cling-film and then in the greaseproof paper tying it all up with string. Step 5 Place some heavy weights on top of the sandwich and keep it in a cool place, such as the fridge, for up to 6 hours or until you need to serve it. Take the weights off the sandwich and unwrap the sandwich, then slice it to serve in wedges, or in thick slices. Step 6 This is better if made several hours before serving, or even the night before. Serve with side salad and extra olives and pickles.

My mom, and her mom, were and are great cooks, but we were also very much the kind of family that relied on basic (and essentially timeless) recipes, and my grandma was born around the 1920s, and my mom was born at the beginning of the 60s.
Both my mom and her mom worked full-time and raised multiple kids (and my mom lost her dad when she was young, so my great-aunt who I've mentioned before many times, moved in to help raise her and her four brothers) and so they needed affordable, filling, easy recipes.
Which meant we had a lot of meatloaf (with fries or potatoes of some kind, and if we were feeling fancy or wanted to stretch it, with cheese and sliced ham in the center), casseroles of all kind (to this day I still crave her tuna casserole, which is basically canned tuna, white sauce - canned white sauce pre-my dad's celiac - and crushed potato chips for the topping and in the mix? I don't think there was any pasta or noodles involved), grilled hot dogs and hamburgers (the latter with 80/20 ground beef, ketchup or bbq sauce, and onion soup mix or other seasonings) with fries (and steak or pork chops or chicken if we wanted to step it up a bit), breakfast for dinner during lent or when not wanting to do too much (so pancakes and scrambled eggs and bacon or sausage), tacos and burritos (seasoned ground beef or shredded chicken or, if my dad was feeling it, carnitas, with tortillas and taco shells and cheese and other toppings), big things of baked pastas (and just regular cooked pasta), chili (sometimes with cornbread or french bread) and the infamous hamburger rice - which is basically ground beef and onions in a tomato sauce (homemade/from scratch if so inclined but otherwise canned or jarred) with canned corn and a fuckton of rice, mixed together (sometimes baked but otherwise just a big pot of rice mixed with a beefy tomato sauce and canned corn and onions) and with cheese sprinked on or included. (This is the dish we ate a ton because of my dad's celiac and because it was cheap, quick, and easy, and it's why I have to fight to get over my avoidance of rice dishes to this day).
My mom's potato salad (and macaroni salad, since the only difference is whether you use potatoes or noodles) is basically just potatoes (or noodles) parboiled and then cubed, mixed with onion, pimento, mayo, ketchup, mustard, a small amount of paprika, and salt and pepper - and I also crave it to this day. (When I was an infant I once ended up in the trunk of my parents' car and proceeded to help myself to the bowl that was there for the picnic the family was having at Kennedy Grove.
That's not all we ate (because it was the 90s and early 2000s, and both me and my mom love chinese takeout and prime rib, and because there is always some evolution and differentiation) but that was basically what we had, and it was pretty much what she had when she was growing up too, so we basically ate mid-century meals well into the beginning of the 21st century.

PLEASE DO NOT try to push people to eat if they say no.
You don’t know if it’s diet, or food too hot it’ll affect the person’s core temp if they do, allergies, faith (of pork for example.)

I say this because I refused supper at a VBS while waiting to get photos. (hot food when I know it’ll affect me - found out with hot coffee).
They kept pestering me to a point I’m - thankfully - mildly overloaded.
I even refused no bake oatmeal cookies, which I love, because of the push on the a sandwich.
It also made me nauseous when I smelled pico de gallo and peppers.
My supper is cool and refreshing (pimento cheese wrap and imitation crab sticks) but the push had never push back so hard I’m having to wait until the overload calms down.

Folks, please just respect a refusal for food/drink/etc. It isn’t an insult… if someone refuses there are reasons.

  It’s made of a mix of bison and ox meat stuffed with Buu cheese (bleu cheese), topped with bourbon-glazed bacon, and crunchy Piccolos (pickles). The buns are buttered and lightly toasted in a pan to add additional flavor. The finishing touch? A napkin with two eyeholes cut out, carefully draped over the top.

Christmas 🎄 Eve appetizer (staying on the night's "round filled food" theme, with runzas coming later) - baked scotch eggs. Steam the eggs to hard-boil, then shake to loosen the shells and membranes for peeling (I love my little gadget for that bcz otherwise fresh farm eggs are tough to peel). Cut in half to replace yolks with pimento cheese (favorite of Elijah's, the Southern boy), reassemble, cover in pork sausage, roll in bread crumbs, and bake. Pimento cheese was a little runny - next year, we will make that from scratch. But still, oh yeah

Today, peach cobbler is a traditional dessert served in the Deep South, usually accompanied by a scoop of vanilla ice cream. Here is how to make a fresh Southern Peach Cobbler that you’ll look forward to each summer.
Fresh Peach Cobbler Ingredients
½ cup unsalted butter
1 cup all-purpose flour
2 cups sugar, divided
1 tablespoon baking powder
pinch of salt
1 cup milk
4 cups fresh peach slices
1 tablespoon lemon juice
Ground cinnamon or nutmeg (optional)
Directions
Melt butter in a 13- x 9-inch baking dish.
When the dry ingredients are barely moistened, add the milk and whisk briefly before adding the flour, 1 cup sugar, baking powder, and salt. Add batter to butter (do not stir).
Pour over batter after bringing the remaining 1 cup of sugar, the peach pieces, and the lemon juice to a boil over high heat while continually stirring (do not stir). If desired, add a little cinnamon.
Bake for 40 to 45 minutes at 375°F, or until golden brown. Pie can served warm or cold.
Can frozen peaches be used in this cobbler recipe if fresh peaches are not available?
When using frozen peaches in your peach cobbler, there are a few things to keep in mind. If you use frozen peaches instead of fresh, make sure to thaw and drain the fruit first before adding it to the cobbler batter. Moreover frozen fruit will typically release less juice because of its density, resulting in a drier final product.
