One of the #food #writers I read and respect a great deal is @felicitycloake . Her #recipes, even when they’re well-known tried and tested #dishes, always feel fresh. This time around it was my turn to tweak one of her offerings. I’d never made #caldoverde, but I knew about this traditional Portuguese recipe from a couple of friends from that European country. The ingredient that does most of the heavy lifting in this dish is the #chouriço (#Spanishsausage). Now, try telling a #vegan that you’re planning to use a highly seasoned #porksausage in your cooking. My solution was to throw in a seeded #Scotchbonnet (I like my food with a bit of a kick), Cumberland #vegansausages and vegan “smoky bits” (similar to bacon rashers) to add flavour. Also, I didn’t blend or mash the soup. I did crush a few potatoes, but I don’t belong to the “water-like, liquid broth” brigade. I belong to the “lumpy bits” one. We ate our caldo verde with #homemadebread.
