Simple Cheesecake with Shortbread Crust and Jam Swirl Recipe

Crust
Ingredients:
-1 cup (2 sticks) unsalted butter
-1/2 cup brown or white sugar (white sugar recommended for cheesecake)
-2 tsp vanilla extract
-1/2 tsp salt
-2 cups + 2 tbsp all purpose flour (spooned and leveled)
To make:
Preheat oven to 325F, and butter your pan. Melt the butter and mix it with the sugar, vanilla extract, and salt. Sift in flour and combine, kneading into thick dough, then press into the pan as evenly as possible. Bake 20-22 minutes, until lightly brown. Prick inside with a fork, then set aside to cool. Turn off oven to cool while you make the filling (filling requires colder oven)
Filling
Ingredients:
-2 8oz blocks cream cheese (room temperature)
-1 cup sugar
-3 tbsp heavy whipping cream
-1/2 tsp vanilla extract
-1/2 tbsp lemon juice (or 1tbsp, if high sourness desired)
-2 large eggs, room temperature
-Jam of your choice (optional)
To make:
Mix the cream cheese, sugar, cream, extract, and lemon juice by hand or in mixer (puree, pulse). Add eggs one at a time, ensuring that they blend in. Avoid chunks of cream cheese with high heat (warming the cheese), or by using a blender/food processor/mixer.
Pour into cooled crust and preheat oven to 300F. Bake for 65-70 minutes, or until crust is golden and the edges are carmalized. Turn off oven and open the door to let it cool slowly if cracks are undesirable, or cool on countertop if not. Store in fridge/freezer to set fully before serving.
BONUS: Jam bits + swirl
-Before baking, scoop amount of jam of your choice (~ 1 spoonful) into a small cup, and heat until liquid. Scoop up kam and lavishly swirl in center (refilling as necessary) with a spoon for decoration. Sporatically drop in remaining jam along crust edge and center for chunks of flavor. Bake as usual.

The most delicious, moist cake recipe ever. And it’s only three ingredients!
-Preheat your oven to 350 degrees Fahrenheit
•28 Crushed up Oreos (most efficient through a blender)
•1 Teaspoon of baking power
•1 Cup of milk
-Whisk it all together and put it in a cake pan
-Pop it in the oven for 15-20 minutes
-After cooking, put some chocolate icing on it (or any other icing you may want)
-Devour

Hot Chocolate Mug Cake
Hey all, I just made this again tonight and thought that others might enjoy. I found the recipe a while ago on an ancient, now-deleted blog and wanted to make sure it wasn’t forgotten because it is delicious and infinitely customizable! You don’t need any fancy tools or baking expertise, just some simple ingredients and a microwave.
Ingredients:
Packet of hot cocoa mix (I use Swiss Miss Dark Chocolate but whatever floats your boat!)
4 tbsp all purpose flour
4 tsp granulated sugar
4 tbsp milk of choice
1/4 tsp baking soda
All you’ll need to use is a microwave-safe mug (please double check, I accidentally used a mug with metallic paint once! Luckily I caught it before anything caught fire), a spoon, and a microwave!
Directions:
Mix all the ingredients together in the mug. Doesn’t matter what order. Stir them well, you want it to be a smooth consistency without any dry or powdery spots left. It should look something like this when you’re ready.

Once you’ve got everything mixed well, you’re gonna put the mug in the microwave for about 1 minute and 30 seconds (maybe a touch more or less depending on your wattage, but luckily there’s no raw ingredients in this so it’s okay if it’s a bit underdone. You can always microwave it longer if needed!)
Afterwards it should look something like this!

It’ll have a thick, cakey texture. You can then top it with whatever you like (marshmallows, ice cream, powdered sugar, etc) or just eat it as-is! I use a spoon and eat it straight out of the mug. Experiment! Enjoy!

- basil
Cooked at 350°F for 25 mins
Outcome:
Could use more salt maybe? Otherwise great. I'll add breakfast sausage to the next batch

Shh, Don't cry, instead,
Grab a bowl or a big mug
Add 3 ts (sunflower)oil
Add 2 ts cocoapowder
Stir with a fork (or a small wisk)
Add 3 ts milk
Add 3 ts sugar
Add 4 ts self rising flower
Stir again with a fork (or a small wisk)
Put it in the microwave for a 140 seconds/2.20 minutes on high
Now you have a little chocolate cake (:
Bonus:
If you are feeling up to it, you can add some nutella, chocolate chips, or caramel syrup at the end <3
It's also not required to stir after the first 2 ingredients but i find it helps with removing globs of cocoa

It's October, which means it's now seasonally appropriate to post my hot chocolate recipe
1 cup (~237 ml) - milk 2 tbsp (~30 ml) - hot chocolate mix 2 tbsp (~30 ml) - creamer (I like to use a french vanilla coffee cream powder, but you can use anything really. Whipped cream, half and half, etc) 2 tbsp (~30 ml) - sugar Optional: 1/2 tsp (~2.5 ml) - vanilla extract (can be replaced with vanilla flavored creamer) 1/4 tsp (~1 ml) (or less) - ground cinnamon (cinnamon can be hard to mix in on it's own. So if you add any, mix it into the sugar/chocolate mix first.)
End result will be about 1 1/3 cups (~316 ml)
Microwave the milk at minimum 2 minutes, milk may bubble over if microwaved for too long, so be sure to use a mug/cup that can hold a bit more than 1 1/3 cup.
Mix in all other ingredients until combined. If you're using a smaller mug, this can be easier if you transfer the warmed milk into a taller cup or bowel. You can then transfer it back to the still warm mug, which will help keep it from cooling off as fast.
It should not need to cool off after this, if you prefer yours hotter, then you can either microwave it an extra minute after mixing or add a minute to the initial heating. However, be careful when trying to microwave it longer than 2 minutes at once, as it's more likely to bubble over and spill when you do this.

Hi!
I'm sorry, it's been a minute since I've posted. I've been quite busy and tbh my mental health hasn't been too good. But! I'm back with something simple :)
Blue cheese butter
It's really good on steak and burgers 💕
Ingredients:
I don't have an exact measurement for this I just used about half a wedge of blue cheese crumbled. You can less if you're working with a stronger cheese. The one I used I got from wholefoods it's 1924 Bleu from Herve Mons.
1 stick of unsalted butter (bc we're gonna be adding our own salt) softened
1 tbsp of finely chopped mushroom. I used shitake
1 finely chopped clove of garlic
1/4 tsp salt
1/4 tsp black pepper
1/8 tsp paprika
1/4 tps of basil
1/4 tps of thyme
1/4 tps of rosemary
Instructions:
Heat a small pan on medium low heat. Lightly grease the pan with a little bit of the butter
Cook garlic and mushroom until the garlic becomes fragrant and the mushroom begins to brown. Set aside
In a small mixing bowl mix together butter, blue cheese, spices, and garlic and mushroom until it's thoroughly mixed (but don't whip it)
Get a piece of plastic wrap or wax paper and roll the mixture into a log
Refrigerate until you're ready to enjoy 💕

if ur ever looking for an easier, cheaper and more balanced meal ive got the "recepie" for you
it's just instant noodles with eggs and veggies but it fills me up, and while it is high in sodium, is helpful if cooking is a bit of a challenge for you/you'd eat something worse for you otherwise
basically all of this can be changed to taste/appetite, but i have a big stomach, so I'll be making a larger bowl. recepie can easily be cut in half.
ingredients:
- 2 eggs
i love eggs and they're good for you duh. i eat lots of eggs because they help meet daily nutritional needs and if you buy an 18 pack, they can be kinda cheap; as well as the fact they can be easily used up if they're about to go bad
- seasoning salt (optional)
can be found at dollar store, can be replaced with reg salt and spice of choice
- frozen variety vegetables
i buy frozen because they're already chopped, alot cheaper, won't go bad (unless you thaw and refreeze them), and obviously vegetables are good for you. pick any veggie you want, i usually go with carrots, broccoli, or parisian mix.
- 2 packs of mr.noodle
base of the meal, cheap as hell. especially if you buy a full palette of them.
- butter/oil/lard
to fry the eggs
- spices & herbs of choice
spices really make this bad boy. i usually use garlic, paprika, pepper, oregano and ginger but honestly, throw pretty much a little of anything in here. as i type this, im using a bit of curry powder and sage in addition to the other ones.
steps:
- begin with a frying pan or pot. ive even used a steel mixing bowl, get crazy with it. set the stovetop to low-medium heat, on my stove i use 3.5/9. add butter and once it's melted and spread out easily, wait a minute for it to heat up more.
-crack the eggs in, there should be a nice sizzle. i like my yolks runny, and it mixes better with the "broth" later, so take a fork and carefully try to grab the clear membrane around the egg yolk. attempt to pull it off slowly, but if it doesnt come off fully, no biggie. this is just so the egg cooks more evenly while leaving the yolk soft. i use the seasoning salt to sprinkle onto the eggs, the broth does not need it.
-continue to cook until the white is solid. the yolk should still be almost all soft by now, but even if it isn't, itll still go well with the rest of it.
-put them into a bowl from the pan. if there are egg bits stuck on the pan after, they'll come off.
-put water, ¼-½ the bag of frozen vegetables, spices, and flavour packets into the pan. crank that baby to max heat. once it's boiling, put the noodles in. could probably turn the heat down a bit now. cook until the veggies are soft enough to be poked by fork without much effort. if there's not enough water, just add a bit more.
we're done! put the noodles into the egg bowl, or if you're crazy like me, put the eggs into the pan of noodles.
now, this makes alot of noodles, so for some it should probably be halved, but it works for me, and it works if you haven't eaten all day and are ravenous.

recipe #1: eggs with rice
it's as simple as it sounds!
if you or someone you live with is able to make rice, i recommend it. i think regular rice tastes better than instant rice, and it isn't as full of preservatives. however, i often find myself using a bag of instant rice for my meals, so its up to what you can do <3

what you'll need:
a pot or pan to cook the eggs in
1-3 eggs (3 is a serving size, but don't push yourself if you can't eat that much!)
about 1-2 cups of rice (most instant rice comes as a single serving)
butter or cooking spray
seasonings (always to taste): salt, pepper, cayenne, furikake, soy sauce
optional: dried seaweed or some fruit of your choice <3
what to do:
gather everything you need in one place. it's a lot easier to do things if you're not moving around a ton!
pop your rice into a microwave or reheat it on a stovetop (or whatever you've got to cook with) for about 1-2 minutes. if it's instant rice, follow the directions on the package
turn your stovetop on and place your pan onto the burner. set it to medium to low heat and after a few moments, slice a sliver of butter or spray on some cooking spray. you only need enough butter to coat the bottom of the pan.
once the butter is melted, crack an egg and drop it on! cook them however you like, i prefer to do mine fried when i'm eating with rice. salt and pepper the uncooked side of the egg before flipping. you can also add the cayenne here if you like!
take out your rice as you're letting the eggs cook and drop some furikake on it - if you like that
put the eggs onto the rice when they're cooked!
pour a little soy sauce (to taste) over your eggs and rice.
enjoy with seaweed or a portion of fruit! don't forget your water!

hiii!!
mussels in creamy garlic sauce.
i roasted some garlic in the oven, heated up cream, squeezed the garlic in and sprinkled some salt, threw the mussels in. the were bought frozen, and also precooked.. i think.. so i heated them up on a dry pan beforehand, simply to warm ‘em up.
and that’s it, the shortest post for now >3<
i like putting in on a bread piece, it also helps clean the inside of the bowl later lol.
sorry for only two pictures, there wasn’t much of a process to document.
