Vegan Galouti Kebab🔥 (A royal affair 🤴👸)
Galouti Kebabs are a speciality of Lucknow, India. They are made with minced meat but due to vegetarians in India, a lot of people have come up with their own vegetarian recipes. I saw different versions where they either used only Rajma (red kidney beans) or mixed it with a combination of vegetables. These recipes were good but Galouti Kebab is supposed to be velvety in texture. I don't think you can really achieve it with just Kidney beans and vegtables. It's should be delicate and melt in your mouth. Also, every vegtarian recipe used Ghee (clarified butter) which is disappointing for me. So I took up a challenge to create a version vegan Galouti Kebabs.
I must say, making Indian Kebabs is the most tedious job. That's because they are a part of Mughali cuisine, the recipe includes at least 15 to 20 ingredients and it needs a preparation time of at least 2 hours. It might sound daunting but it is a Royal cuisine which was developed by some of the most talented chefs of Mughal era. If you are still reading that means you are up for the challenge 😊
So, the first thing is to soak the Rajma/ kidney beans overnight and boil it until it's soft and mushy. I boiled mine in a pressure cooker with some salt. After it's done, drain the water and keep it aside to dry. After its dry, grind it to a thick paste until it's smooth. Now shift it in the mixing bowl. (You can boil it a day before and keep it in the fridge to make things less hectic).
Next thing is to boil some Soy nuggets or soy granules and grind it in a food processor. Make sure to squeeze out any water. These comes in dry form but after a boil, they become soft, spongy and tender like meat. They are easily available online or in any Indian store. (These too can be boiled and kept in the fridge a day before).
For the flavouring I used 1 cup fried onions, 1 teaspoon of oil, 1 teaspoon lemon juice, 1 teaspoon a paste of green chillies, ginger and garlic, 2 teaspoon roasted besan/ gram flour (you can use it as raw), 1 teaspoon of spicemix including 2 black cardmoms, 4 green cardamoms, 4 cloves, 1 teaspoon cumin seeds, 1 small piece of cinnamon stick, 1 teaspoon of black pepper and some salt. You can also add a few drops of rosewater.
Now just mix everything in the mixing bowl and bring it together. I don't think a spoon or spatula would work here. This mixture is sticky so It's best to use your hands 🙏. Make sure you have washed your hands thoroughly before this process. Check for the salt and spices. If you like more, adjust accordingly. Wash your hands and dry them properly for the next step.
Shaping these kebabs is also a little messy 😊. So before shaping, apply some oil on both your palms and give it a round, flat shape. You can see how I shaped mine in the picture above. I don't really know if you can store them in the fridge for later use but you can try.
For frying I applied very little oil on a non stick pan and fried these kebabs until they were slightly crunchy and brown on both sides. Mind you, these are not your regular kebabs. These are soft and delicate so it's obvious it's not going to retain the proper shapes you have created. Don't bother. That's the beauty of this dish 😎❤️.
You can either serve it like a falafal sandwich with some pita bread or you can eat it in Indian style like a starter or as a main dish like me with some roomali rotis, fresh salad, pickled onions, chillies and coconut and mint chutney.
Phew....I know it's a long process but we are talking Mughlai cuisine here. Trust me you will feel like a Nawab after a few bites 🤴👸

Localizado perto do ‘Sushi Buffet’ (em baixo está o post desse restaurante), no meio da conhecida Praça Brasil, Vegan Dealer é um dos meus restaurantes veganos favoritos em Santiago!
Por que é o melhor?
É fácil, gosto da localização cêntrica, adoro o carácter que tem, as paredes estão adornadas com ilustrações coloridas e contemporâneas (até o teto tem uma pintura maravilhosa) e a vista que tem da praça é muito linda. Os garçons e garçonetes são amigáveis e eficientes, a comida demora pouco em chegar. 
Esse dia a gente passou comer algo rapidinho e leve na tarde. Pedimos uma cesta de anéis de cebola com salsa barbecue e uma cesta de ‘sopaipillas’ com ‘pebre’ junto a duas ‘cheladas’ com cervejas tipo lager (definições no seguinte parágrafo).
As sopaipillas são massas salgadas fritas típicas chilenas, usualmente de forma redonda, feitas com farinha, óleo vegetal, sal, fermento em pó e abóbora, o ingrediente que lhe-dá o sabor e a cor característicos. São ideais para mergulhar em pebre: molho picante ícone do Chile, feito com tomate, cebola, alho, pimenta, coentro, óleo de oliva, sal, vinagre (opcional) e algumas gotas de limão. E as cheladas são copos com sal na borda que vem com um pouco de suco de limão no fundo, então você serve a sua cerveja (no nosso caso Heineken e Cusqueña) e se mistura com o suco. Fica MUITO gostoso!
Eu recomendo este local para os veganos que desfrutam da comida, tanto típica chilena como inovadora, porque sempre os sabores sorprenden agradavelmente! Vegan Dealer tem pratos variados, menu do dia, postres e boas cervejas.

I made super easy vegan nut cheese today, so I thought I’ll share the recipe here! I kind of went on a quest this week to make all sorts of creamy dips and cheeses using different nuts and seeds. This one is made of cashews, but I prefer using nuts or seeds that are regional and more sustainable. My favorite replacement for cashews has always been sunflower seeds. So I’ve got some of those soaking in water for the next one. But I’ll also try using walnuts and hazelnuts - let’s see 🤪 I spent a looooot of time in the kitchen the last weeks, so o thought I’ll start sharing some of my recipes here again.. it’s been a while ;) For this one you’ll need 2 cups (200g) of cashews, soaked over night and rinsed 2 cloves of garlic, minced 4 tbsp of nutritional yeast 1 lemon, juice and zest 1/2 cup water 2 tbsp olive oil Salt + pepper 1 bunch of chives Place all ingredients except the chives in your food processor and blend until very smooth. Chop half a bunch of chives and blend just quickly to mix it well. Add salt and pepper as you like it, i added quite a bit of pepper. Place a clean kitchen cloth into your strainer and scoop the cashew mix into it. Wrap the cloth above it and squeeeeeze the liquid out of your cashew cheese. Repeat a couple of times. Carefully unwrap your cashew cheese ball, place on a plate or a bowl and cover with the rest of the chives. Your cashew cheese should be creamy and soft.
