MARBLED PUMPKIN CHEESECAKE

- 1 1/2 c (375mL) gingersnap cookie crumbs (about 32 cookies) - 1/4 c (60mL) unsalted butter, melted - 2 pkgs (8oz/227g each) cream cheese, softened - 3/4 c (180mL) sugar, divided - 1tsp (5mL) vanilla extract - 3 eggs - 1 c (350mL) canned or cooked pumpkin - 1 1/2 tsp (7.5mL) pumpkin pie spice

Preheat oven to 400*F (205*C). Combine crumbs and butter. Press firmly onto bottom and up sides of pie plate. Bake for 5 minutes, remove from oven, cool.

Reduce temperature to 325*F (165*C). In a large mixing bowl, beat cream cheese, 1/2 c (125mL) sugar, and vanilla until blended. Beat in eggs, one at a time. Reserve 1 c (250mL) batter.

Add remaining sugar, pumpkin, and pumpkin pie spice to remaining batter; mix well. Alternately layer pumpkin and cream cheese batters over crust; cut through batters with knife several times for marbled effect.

Bake for 45-50 minutes or until cheesecake springs back lightly when slightly touched. Loosen cake from rim of pan. Let cool to room temperature; then chill.

Makes 12 servings.

Haven't seen one of these pie plates with the recipe on the bottom in ages. But my mom found this one at one of the local thrift shops.

“Hey.” The Sith returned the smile, sitting beside her and grasping her wrist gently. “You wanna talk about what’s up? I’m sorry to startle you, I just... figured you could use someone here.” 

His eyes were full of concern, a burnt amber in color rather than the stained yellow associated with his kind, but he didn’t want to push it if she didn’t feel like talking. If she just needed him to sit and be with her, that was fine as well.

As someone who is musically trained and knows that the right vowel can make or break a word, I can assure you that those are in fact different. You can feel it in the subtle shape of your mouth, but it’s definitely there. I didn’t think about it much either, but it helps a LOT when you’re trying to mimic accents and voices as well.

I got a spam email about a convention that said “THE CON IS ON!” but how much of the world pronounces “on” like it’d rhyme with “con?” That seems really rare to me but now I wonder how wrong I am
