This bento is for my father-in-low, my husband's father who is 81 y.o. and lives alone.

It consists of Stuffed Shiitake mushrooms stuffed with ground meat, grilled pumpkin with Parmigiano Reggiano, thick omelet with spring onion, and decorative cut Kamaboko.

A student of my cooking class asked me to make 9 boxes of lunch meal.

I was little nervous on the day before I made them because I had made only 2 at the same time.

The experience makes me realize that the most hardest is to put dishes into each box equally, not to make various dishes within a limited time.

But I enjoyed making them and accomplished it perfectly.

This box is consisting of saffron rice, grilled chicken marinated with sumac and cumin, tortilla, carottes râpées, pumpkin salad with almond and raisin, zucchini cutlet and pickled paprika & eggplant.

2 boxes of bento were made for my father-in-low. He is my husband's father and lives alone. My husband sometimes goes to his father's house to see how he is. Then I wake up early to make bento for him. He loves it very much.

This bento is consisting of seasoned mix rice with Enoki mushrooms and butterburs and Sukiyaki-style beef and grilled green onions.

He loves beef very much and I have to think out some new beef recipes. It's hard, but fun.

Lately my father-in-low voluntarily gave up his driver's license because of glaucoma and my husband often took him to hospital and a doctor of acupuncture. On those occasions I make 2 boxes of bento for them, one for my father-in-low and the other for my husband. But my father-in-low keep 2 boxes to himself. He loves what I cook and I enjoy making bento for him. These bento boxes are consisting of stir-fried beef and lotus roots, Dashimaki Tamago (Japanese traditional omelet flavored with bonito broth), fried sweet potato with butter and anchovies and boiled okra.

Do you know Mao Zedong Spice? It's consisting of fried garlic, fried onion, dried shrimps, cumin seeds, Chinese pepper, Korean hot pepper and so on. It's not as hot as it looks and has a complex flavor of various spices. The name of this spice comes from Mao Zedong, a Chinese communist revolutionary. He was a chili-loving Hunanese and said "The food of the true revolutionary is the red pepper.And he who cannot endure red peppers is also unable to fight." Today's bento contains pork stir fry with Mao Zedong Spice, Japanese rolled omelette with cheese, cherry tomatoes and "Setoka", seedless sweet Japanese citrus fruit.

I've just posted an article after about a year. The new term at my daughter's uni has just started and the regular face-to-face lectures are given for the first time in 2 years. So it would increase the opportunities to make a bento. Today I make a lunch box of sandwich for my daughter who will participate in a meeting of the campus festival committee. She is very active as a chief of the Publicity Bureau. The sandwich is consisting of ham, cheese omelette and lettuce.
