Criticisms of show!Sally’s character do not have anything to do with how realistic she is. PJO TV is not a standalone TV production. It is sold as and marketed as an on-screen adaptation of a preexisting primary source. The criticism is about how well-adapted she is.
Sally Jackson was not written from scratch for TV. It doesn't matter if she's realistic or not.
Sally Jackson, introduced to us through the primary source of the books, is a character with a set of personality traits, the major ones of which do not track on screen.
Book Sally: is explicitly said to never raise her voice Show Sally: very much raises her voice when she's stressed out
or
Book Sally: is explicitly said to make Percy feel safe, secure, and comfortable Show Sally: leaves silently when Percy asks if she’s getting rid of him; consistently does not explain to Percy the situation, leaving him doubtful and scared
The character in the show isn’t Sally Jackson. She’s a realistic depiction of a particular kind of a mother but that isn’t Percy Jackson’s mother.
P. S. Book Sally is also a realistic character. I know that most people are familiar with the on-screen version of parenting but there are parents who do better.

Luke being given a quest at 17, feeling like there's no glory in it because it's a quest someone's already succeeded before, but then failing that very quest he considered to be beneath him, getting a permanent scar, "ruining it" for the rest of the campers because now no one else can go on quests and earn glory in the eyes of the gods, so he turns to Kronos, and years later here comes a possible candidate for the great prophecy, 12 years old, gets the first quest the camp has done since Luke's fucked it up, and Luke is actively ensuring this quest is an impossible quest!! he's literally rigged it so Percy's gonna fail (the shoes, the bolt appearing in his bag) and then this kid somehow succeeds still??? and not only that, Percy got the unique quest Luke wanted in the first place and achieved feats no one else had and earned glory in the eyes of his father, all because Luke created the circumstances for that to happen??
oh my god yeah I don't think I'd ever recover from that either

one of the hardest parts about being a demigod that isn't talked about enough is learning how to blend in with mortals. yeah, you look the part. but can you act the part? case in point in cotg when percy reveals he has to consciously swim slower when around mortals. but what about annabeth who has to physically retrain herself from engaging in a fist fight bc she knows she can clock them easily and can't afford to get expelled again. or grover who carries iron pills because he can't just chomp on a soda can during gym class. the implications of demigods actively downplaying their god given abilities so they can remain hidden is a concept worth exploring.

I can't stop thinking about how much the zoo truck convo would've HIT if they had kept it in the show
you have the parallels bwt her and medusa, the build up of athena betraying annabeth's loyalty and love for her
you got percy deliberately picking grover for the quest bc he thought grover wouldn't side with her only for percy to later find out grover has loyalty to her as well
you got them teetering on calling each other friends, percy picking her for the quest bc he didn't think they would be friends, but they can't help but start to open up to each other bc they're both lonely kids, that whole conversation on the train?!?!? what annabeth says about him to hephastus in the thrill ride o love?!?

Yeah, Octavian’s anger post-MOA is really valid, because to the Romans, these people showed up with claims of peace and then bombed their city, targeting not just fighters but civilians too. I also would despise them and wouldn’t be willing to listen to what they say (also? Octavian is right to bring ear plugs to counter Piper, to the Romans she’s a girl who can take away their free will and part of the group that attacked their home. Who knows what she could say to them, what if she makes them go back and attack New Rome even more? She’s very much an active threat in the eyes of the Roman demigods). There’s no actual evidence the 7 could offer up to prove it wasn’t actually Leo in charge, it’s not like possession leaves a trace nor can they display their memories to prove it.
She literally planned to use her charmspeak against New Rome from the start (Bad for Relations) and actively used it against Octavian specifically cause she found him annoying. Like- yeah, no surprise he took steps to prevent that from happening again.
And yeah, like- as far as Octavian is concerned he was literally THERE when Leo starts bombing New Rome. Maybe he'll accept that the others didn't intend to, but them running instead of surrendering and talking out what happened doesn't look good. Especially because they proceed to break more laws.
Now, I do think Rick wrote him absolutely insane, but like- him not trusting them? Tracking them down? Trying to capture them? Valid.
