baked cheesecake
400g cream cheese 170g digestives 70g salted butter 70g caster sugar 70g double cream 2 eggs tsp vanilla
cream cheese to room temp bash up digestives mix with melted butter and press into tin beat cheese 'til soft add sugar, cream, eggs, vanilla mix well and pour into tin
150 degrees C, 30 mins, check middle should be jiggly still leave in oven residual heat chill in fridge

2 ripe bananas 2 eggs 70g brown sugar 100ml veg oil 170g plain flour 2 tsp baking powder tsp cinnamon sultanas?
mash bananas add eggs, sugar, oil blitz with stick blender add powder ingredients and sultanas, fold 40mins, 160 degrees C

tahini honey loaf
85g marg (olive spread) 100g caster sugar (60g sugar, 5g Canderel) 45g tahini tsp vanilla 25g honey 2 eggs 145 plain flour tsp bp 1/4 tsp bicarb 1/4 tsp salt 30g yog sesame seeds
mix marg, sugar, tahini and vanilla 'til pale and fluffy add honey add eggs, beating well mix flour, bp, bicarb and salt in separate bowl add 1/2 of dry to wet stir through yog add rest of dry

basque cheesecake
100g caster sugar 400g cream cheese 3 eggs 210g cream 1/2 tsp salt 2 tsp vanilla 22g plain flour
line round tin with high walls with a single piece of baking paper mix sugar and cheese whisk in eggs 1 at a time add cream, salt, vanilla and mix sift in flour
200 degrees 45 mins was good in Wales with Fe’s dutch oven, it was too long at the parents’ house though middle should still be liquid/jiggly after taking out and letting cool for few mins, separate walls of cheesecake from paper to stop cracking

almond cake (VG + GF)
60g vegan butter 1/2 cup caster sugar (used 1 cup, was too sweet) 3 tsp almond extract 1/2 cup vegan milk
1 cup GF flour 1/2 cup ground almonds 2 tsp baking powder 1/4 tsp salt jam
blend butter and sugar, add almond extract and milk add dry to wet, fold, swirl in jam
loaf tin, 170 degrees 30 mins

brownies (VG+GF)
140g GF plain flour 20g cocoa powder 100g light brown sugar 80ml veg oil tsp vanilla 200g choc (150g melted, 50g chips) 240ml milk equivalent
mix flour, cocoa and sugar add oil, vanilla, melted choc, milk 160 degrees, 25-30 mins tried half of the recipe (VG+GF) for 30 mins, went well, maybe try underbaking a bit?

turkey mince pie
600g sweet potatoes 250g carrots tbsp butter onion 2/3 box shrooms 3 cloves garlic 500g turkey mince spicy paprika, parsley 1/2 chicken Oxo cube peas
boil diced potatoes and carrots fry onion in oil 'til soft, add garlic and fry for 3 mins add turkey and shrooms season with paprika, parsley, stock cube cook on low heat for at least 10 mins stir through peas
mash potatoes and carrots with seasoning and tbsp butter layer meat with mash on top into Fe/Soph’s glass thing
180 degrees, 50 mins (but try 200 degrees for 20 mins?)

carrot banana cake
1 1/2 c wholemeal flour 1/2 c oats tsp soda 1-2 tsp cinnamon/mixed spice 1/4 tsp nutmeg 1/2 tsp ginger 1/4 tsp salt
3/4 c banana 1/2 c sugar egg tsp vanilla 1/4 c apple sauce 1/3 c milk heaped c / 2 medium carrots 2 tbsp oil 1/2 c raisins
mix dry ingredients mix banana, sugar, egg and vanilla; add apple, milk and carrot add wet to dry add oil and raisins
160 degrees, 45 mins in loaf tin only had 1 ripe banana so substituted deficient banana with apple sauce

raisin oat cookies
100g marg 1/2 cup Aldi green sweetener / 75g sugar 1/2 tsp vanilla 100g plain flour cinnamon, ginger, mixed spice 1/4 tsp salt 1/2 tsp bicarb 30ml hot water 80g oats 35g raisins
mix marg, sugar and vanilla add flour, spices and salt dissolve bicarb in hot water and add stir in oats, raisins makes 6 cookies 180 degrees 12 mins in Rad's oven (recipe says 180 degrees 10-12 mins)

blueberry muffins
1 1/2 cups self-raising flour (or plain + 2 tsp bp) 1/2 cup sugar 1/4 tsp salt 1/3 cup oil egg 100ml ish milk 1 1/2 tsp vanilla cup frozen blueberries
mix flour, sugar and salt in big bowl put oil and egg in measuring jug, fill up to 1 cup line with milk, add vanilla and whisk mix wet and dry with fork - don't overmix, batter will be thick fold in blueberries
makes 10 180 degrees, 20 mins

100g warm water 7g sachet yeast tsp sugar
mix and leave for 10 mins 'til frothy
300g strong flour (I tried 200 + 100 wholewheat) tsp sugar tsp salt 1/2 tsp bp 17g veg oil 90g yog
knead for 10 mins, cover and leave 'til doubled in size split into 6 balls roll into teardrop 21x13cm high heat, dry fry, 3 mins each side 'til done

peanut butter cookie
30g yog 120g pb 1/2 tsp vanilla 3/4 tsp bicarb 2 pinch salt 25g flour (I used wholewheat) 1/3 cup sugar (used Aldi stevia sweetener) 30ml milk
160 degrees, 10 mins
tried to use 15ml milk as the recipe said, but seemed too dry would probably be good with choc chips but was too scared to add them to an experiment

marmalade cake
110g marg 40g sugar 2 eggs 110g flour 1.5 tsp baking powder 3 heaped tbsp marmalade
beat marg and sugar together add eggs, then flour, then stir in marmalade (or blitz in before flour?) scrape into loaf tin 150 degrees, 35 mins
I put raisins in too. Tastes great but raisins and marmalade all sank to the bottom. Very moist. Used 50g sugar, could reduce. Added tbsp of milk - maybe that was a mistake?? Loosened a tbsp of marmalade with hot water and brushed it on top.
2nd time: used 30g sugar, 40g would be better. No raisins this time sadly. Blitzed marmalade into mix before adding flour, blobbed chunk of marma in the middle of cupcakes, bakes 170 degrees for 20 mins and was a bit overdone so maybe 15-17 min.

marmalade carrot mug cake
17g marg 17g oil tbsp and a bit of sweetener (it kinda just came out) egg 100g carrot, grated 2/3 tsp mixed spice 2/3 tsp ginger 58g plain flour 2/3 tsp baking powder raisins
melt marg in microwave, add oil, sweetener, egg, mix well add carrot, raisins, spice, flour and baking powder splodge marmalade at bottom or within the batter into a cup cover with cling film and microwave for 1 min serves 2 probably

(Morrocan semolina rough bread pancake)
1 cup fine semolina 20ml olive oil 1/2 tsp salt (at least) 1/2 tsp baking powder 1/2 cup water
mix ingredients without water into crumbly sand add water slowly into slightly sticky dough split into 2-3 balls coat balls in semolina fry on medium heat and squish down to about 1cm, flipping frequently
this amount serves 2 you can split them horizontally best with cheese and sriracha based on x
