MUSHROOM MOZZARELLA BAKE!

Ingredients:
1 lb fresh mushrooms, sliced (0.454 kg)
3 tbsp butter (45 mL)
3/4 tsp seasoning salt (3 mL)
2 tbsp whipping cream (30 mL)
1 tsp dried parsley (5 mL)
1/4 tsp black pepper (1 mL)
3/4 cup grated Mozzarella cheese (175 mL)
Directions:
Preheat oven to 350°F (180°C).
In large frying pan or electric frying pan with lid (slightly ajar), fry mushrooms in butter over medium heat until softening. Keep cooking until water evaporates. Remove lid of pan. Add seasoning salt; stir-fry until mushrooms are nice and brown. Add whipping cream, parsley and black pepper. Allow to simmer over low heat until whipping cream reduces a bit. This can happen extremely fast. Arrange mushrooms in shallow casserole dish. Sprinkle with cheese. Bake 10 minutes, or until cheese is melted.

Beef Tips and Gravy!! 😋😋  Ingredients Servings 2-3 1 1⁄2 lbs beef tips 2 tablespoons salad oil 3 cups water 2 tablespoons ketchup 2 tablespoons Worcestershire sauce 1 teaspoon salt 1 onion, sliced 1 tablespoon cornstarch 3 tablespoons water  Directions Saute beef tips in salad oil until lightly browned. Place in a dutch oven and add water, ketchup, worcestershire sauce and salt. Cook covered on simmering low heat for approximately one hour. Add sliced onions and cook additional 30 to 40 minutes on low heat, being careful to not let all water boil out. (You will need at least 1 1/2 cups of water left as gravy.). In a small bowl, dissolve cornstarch in water and pour into beef mixture mixture. stir well and cook an additional one minute while gravy thickens. Serve over rice, noodles or mashed potatoes. Enjoy! Easy Slow Cooker Taco Pasta - Don't Lose This Ingredients 1 pound lean ground beef salt and pepper 1 bell pepper (chopped) 15 ounce can crushed tomatoes 1 cup jarred salsa (I used mild) 15 ounce can corn (drained) 3 tablespoons taco seasoning (I use this easy recipe) 2 ½ cups water or low sodium chicken broth (I used one 14.5 ounce can chicken broth plus enough water to total 2 ½ cups) 12 ounces shell pasta shapes (whole grain or white) 1 cup shredded cheddar cheese Instructions Heat a large skillet over medium-high heat. Add the beef and season with salt and pepper. Cook the meat, stirring often, until browned. Transfer beef to slow cooker. Add the bell pepper, crushed tomatoes, salsa, corn, taco seasoning, and broth or water. Stir. Cook on low for 5-6 hours or high for 2-3 hours. Stir in the pasta. Cook on high for 10-20 minutes. It can be doubled or tripled for a crowd, and the sausage freezes well either cooked or raw. —Angela Buchanan, Longmont, Colorado Ingredients 1 large tart apple, peeled and diced 2 teaspoons poultry seasoning 1 teaspoon salt 1/4 teaspoon pepper 1 pound ground chicken Directions In a large bowl, combine the first 4 ingredients. Crumble chicken over the mixture and mix well. Shape into eight 3-in. patties. In a large, greased cast-iron or other heavy skillet, cook patties over medium heat until no longer pink, 5-6 minutes on each side. Drain if necessary. Sweet and Sour Crockpot Ribs Ingredients 1 cup brown sugar 1/4 cup flour 1/3 cup water 1/2 cup vinegar 2 tablespoons soy sauce 1/4 cup ketchup 1/2 teaspoon ground ginger 1/4 teaspoon garlic powder 3 pounds pork spareribs Directions Mix brown sugar and flour in a saucepan. Add water, then vinegar, soy sauce, ketchup, ginger, and garlic powder. Cook and stir over medium heat until boiling and thickened. Layer ribs in crockpot, spooning sauce over each layer. Cover and cook on Low for 10-12 hours or on High for 5-6 hours until ribs are very tender. LEMON ASPARAGUS PASTA WITH GRILLED CHICKEN  INGREDIENTS: 1 pound of boneless, skinless chicken breasts, grilled and cut into strips 1 pound of asparagus, ends removed 10 ounces (280 grams) of linguine pasta (or pasta of your choice) ¾ cup heavy cream 2 tablespoons of butter salt and pepper to taste 1 tablespoon lemon zest 1 tablespoon lemon juice ⅓ cup finely shredded parmesan cheese Garnishes: Lemon slices and ¼ cup chopped parsley (optional)  INSTRUCTIONS: Cook the pasta in salted water according to package instructions. Add the asparagus to the pot during the last 3 minutes of cooking time.  Reserve ¼ cup of pasta cooking liquid.  In small pot, combine the heavy cream, butter and ½ teaspoon salt and ¼ teaspoon pepper over medium-high heat. Bring to a simmer and cook, stirring, until thick enough to coat a spoon, (approx. 4 minutes). Remove from the heat and stir in the lemon zest and juice.  Pour the cream sauce over the pasta and toss to coat evenly, adding pasta water if needed to thin the sauce. Stir the parmesan cheese. Arrange the chicken and asparagus over the top of the pasta. If you prefer, you can mix all together.  Add more salt and pepper to taste. Garnish with chopped parsley and lemon slices. Frosty Strawberry Dessert INGREDIENTS 1 cup all-purpose flour 1⁄4 cup brown sugar, packed 1⁄2 cup chopped walnuts 1⁄2 cup melted butter 2 egg whites 2⁄3 cup sugar 1 (10 ounce) package frozen strawberries 2 tablespoons lemon juice 1 cup whipping cream, whipped DIRECTIONS Stir together flour, sugar, walnuts, and butter. Sprinkle this crumbly mixture onto a cookie sheet and bake at 350° for 20 minutes, stirring a few times to break up the mixture. Meanwhile, whip egg whites until frothy. Gradually beat in sugar. Add strawberries and lemon juice. Beat at high speed a few minutes (up to ten minutes depending on your mixer) until very light and fluffy. Fold in whipped cream. Sprinkle 2/3 of the crumb mixture into a 13X9 inch pan. Spread strawberry mixture on top of crumbs. Top with rest of crumbs. Cover tightly and keep in freezer until time to serve, at least an hour. Easy Salsa Recipe! Tired of store bought and want an easy recipe? This is THE one! Ingredients: 6 tomatoes 3 jalapenos (warning: hot - use less for milder) 1 medium white onion ½ a medium red onion 1 cup cilantro (I’m a fiend- so a little less if you aren’t) 5 cloves garlic 3 limes juice (hell, I even threw in some of the pulp) 1 tbsp cumin 1 tsp sea salt (More can always be added but not taken away!) 1 tsp chili powder For chunky salsa, chop everything up, stir together, and refrigerate. For less chunky, a pulse or two in a food processor will do the trick. Optional/Seasonal: 1 cup (2-3 ears) of grilled/pan fried corn. If pan frying it, try putting in 3 tbsps of pineapple juice and 2 tbsp EVOO. Since you are using pans now, I would probably add the garlic, salt, ½ the cilantro, cumin and chili powder now. Apple Pie Bites Delicious, quick & easy mini apple pies made with Pillsbury crescent rolls in less than 30 minutes! Ingredients ¼ cup packed light brown sugar 1 teaspoon apple pie spice, and additional apple pie spice for sprinkling on top of crescent rolls 3 tablespoons butter, melted ⅓ cup chopped pecans 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices 1 (8-ounce) can Pillsbury Original crescent rolls Instructions Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper. In a small bowl, combine brown sugar and apple pie spice. Set aside. Melt butter and toss apple slices in butter, set aside. Arrange crescent roll triangles on baking sheet lined with parchment paper. Evenly distribute brown sugar mixture onto each triangle. Sprinkle each triangle evenly with the chopped pecans. Place an apple slice on the wide end of each triangle. Wrap crescent roll dough around each apple. Brush each crescent roll with remaining butter. Sprinkle lightly with additional apple pie spice. CHICKEN ENCHILADAS WITH GREEN CHILI SOUR CREAM SAUCE  *These are seriously so so good*  Ingredients: 10 soft taco shells....I use corn to keep it low carb 2 cups cooked, shredded chicken 2 cups shredded Monterey Jack cheese... 3 Tbsp. butter 3 Tbsp. flour 2 cups chicken broth 1 cup light sour cream 1 (4 oz) can diced green chillis  Directions: 1. Preheat oven to 350 degrees. Grease a 9x13 pan 2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan. 3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. 4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream. 5. Pour over enchiladas and top with remaining cheese. 6. Blistered Green Beans (2 servings) Ingredients: 1/2 lb. fresh green beans 1 T. butter 1 tsp. bacon grease 1/2 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container) Directions: Snip the ends of the beans and string if needed. Leave them whole and blanch in a pot of boiling water for 5 minutes. Remove them and drain on a paper towel. Heat the butter and bacon grease in a skillet over med. high heat. Add the beans and cook until they begin to blister, approx. 6-8 minutes, tossing often so they don't burn. Crispy Rice Patties with Vegetables & Eggs Serve these patties at any time of day. The recipe features protein, grains and vegetables all in one dish. It’s also a great way to use leftover rice. —Megumi Garcia, Milwaukee, Wisconsin Ingredients 2 packages (7.4 ounces each) ready-to-serve white sticky rice 1 tablespoon plus 2 teaspoons canola oil, divided 1 teaspoon reduced-sodium soy sauce 2 cups thinly sliced Brussels sprouts 1 cup julienned carrots 1 medium sweet red pepper, julienned 1/2 teaspoon sesame oil 1/2 teaspoon salt 1/8 teaspoon freshly ground pepper 1 tablespoon water 4 large eggs Minced fresh chives Additional pepper Directions Cook rice according to package directions; cool slightly. Press a fourth of the rice into a 1/2-cup measuring cup that has been moistened lightly with water; invert onto a large sheet of plastic wrap. Fold plastic around rice; shape rice into a 1/2-in.-thick patty. Repeat three times. In a large nonstick skillet, heat 1 tablespoon canola oil over medium-high heat. Cook patties until crisp, 3-5 minutes per side; brush tops with soy sauce after turning. Remove from pan; keep warm. In same pan, cook and stir vegetables over medium-high heat until lightly browned. Stir in sesame oil, salt and pepper. Add water; reduce heat to medium. Cook, covered, until vegetables are crisp-tender, 1-2 minutes. Remove from pan; keep warm. In same pan, heat remaining canola oil over medium heat. Break eggs, one at a time, into pan; immediately reduce heat to low. Cook, uncovered, until whites are completely set and yolks just begin to thicken, about 5 minutes. To serve, top rice patties with vegetables and eggs. Sprinkle with chives and additional pepper. SLOW COOKER/INSTANT POT GARLIC PARMESAN CHICKEN & POTATOES INGREDIENTS 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces 1 1/2 pounds red potatoes, chopped 1/2 cup Parmesan cheese, grated 3/4 cup Parmesan cheese, shredded 2 garlic cloves, minced 1 tablespoon garlic powder 1 tablespoon Italian seasoning 1 tablespoon extra-virgin olive oil Salt & pepper to taste 3/4 cup low-sodium chicken broth (for Instant Pot) Get IngredientsPowered by Chicory INSTRUCTIONS Slow Cooker: Add all ingredients EXCEPT the shredded Parmesan cheese to the slow cooker. Stir to mix well. Cook HIGH 2-3 hours or LOW 4-6. Top with shredded Parmesan cheese. If you turn off the slow cooker and let it sit with the lid on, the cheese will melt in a few minutes. Instant Pot: Pour broth into the pressure cooker. In a large bowl add all the ingredients EXCEPT the shredded Parmesan cheese. Pour the food mixture on top of the broth. Close lid and seal valve. Set high pressure and cook for 10 minutes (make sure internal temperature for the chicken is 165° Fahrenheit). When done, quick release pressure. Top with shredded Parmesan cheese. Sheet Pan Lemon Shrimp Serves 4-6 25 minutes INGREDIENTS 1 1/2 pounds shrimp, fresh or frozen (then thawed), peeled and deveined 1/2 cup (1 stick) unsalted butter, melted 3 lemons, thinly sliced 1 (0.7 oz.) packet Italian seasoning PREPARATION Preheat oven to 350º F and line a baking sheet with aluminum foil or parchment paper. Place lemon slices in an even layer on baking sheet, then top with shrimp. Pour melted butter over the shrimp, then sprinkle Italian seasoning on top of everything. ❤️Tricolad brownies without baking. ✍️Recipe 👉Ingredients for the bottom: 2 cups oatmeal (A quacker) for quick preparation 1 teaspoon quality vanilla extract 300 grams of dark chocolate 5 tablespoons coconut oil 100 grams of peeled and ground almonds 👉Ingredients for coating: 100 grams of milk chocolate 4-5 tablespoons heavy cream 👉Ingredients for glazing: 50 grams of white chocolate 👉preparation method:👇 1 Break the chocolate and place in a glass bowl. 2 Add coconut oil. 3 Melt in the microwave, in pulses of 30 seconds, until a smooth chocolate sauce is formed. 4 Add oatmeal (Quacker), almonds and vanilla extract and mix well. 5 Place baking paper in the bottom of a 20X20 pan 6 Transfer the chocolate mixture with the oatmeal and almonds to the pan. 7 Transfer to the refrigerator for an hour and meanwhile prepare the coating. 8 Melt milk chocolate in the microwave together with the heavy cream until a smooth chocolate sauce is formed. 9 Remove the brownies from the fridge and pour over the milk chocolate. 10 In a separate bowl, melt white chocolate. 11 Drizzle over the milk chocolate a striped of white chocolate. 12 Using a long toothpick or knife, make rounds in the white chocolate. Get a marble shape. 13 Return to the refrigerator for at least two hours. 14 Cut and serve. 🌹 Tips 🌹 ✍️Usually I add raw tahini and the taste is dreamy. Key West Flank Steak Sometimes we grill extra lime and onion slices alongside. Serve with sides of rice and fried plantains. —Gretchen Ospina, Columbia Heights, Minnesota Ingredients 1 large red onion, sliced 1 cup minced fresh cilantro 1/4 cup white wine vinegar 1/4 cup Key lime juice 3 tablespoons extra virgin olive oil, divided 6 Key limes, halved 1 beef flank steak (1 pound) 1 teaspoon kosher salt 1/8 teaspoon pepper Directions In a small bowl, combine onion, cilantro, vinegar, lime juice and 2 tablespoons oil until blended. Pour 1 cup marinade into a large bowl or shallow dish. Add lime halves. Rub steak with remaining oil; sprinkle with salt and pepper. Add to bowl; turn to coat. Refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade. Drain steak, discarding marinade and limes in bowl. Place reserved marinade in a food processor; process until chopped. Grill steak, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 6-8 minutes per side. Baste occasionally with reserved marinade. Let stand 10 minutes before thinly slicing steak across the grain.
