I used to have this problem really bad and it's taken a lot of hard work to dial it back.
The main thing it took to get me to chill out is really doing some introspection about why I was so upset and how correcting people fit into that.
Ask yourself what the root of the issue is. Consider some or all of these potential reasons I can think of off the top of my head that might fit different people's perspectives:
Society is full of mistakes and it shouldn't have so many mistakes because they're incorrect
It is my duty, as someone who knows the correct way to do something, to tell people so that the world is a more correct place and people have an easier time being correct (which I assume everyone wants)
I would want to be corrected if I was wrong because I hate being/doing things wrong (because of anxiety/obsession/fear/etc)
I find it annoying when people do things incorrectly when I find those things easy to do correctly / I think they must not know or aren't trying hard enough to remember, otherwise they would be doing it correctly
I don't want to associate with people who I feel behave/speak in ways that are embarrassing or stupid to me, because other people might think I make the same kind of mistakes if I'm willing to overlook those mistakes without calling them out
Those are just a handful of things I can imagine people have as root reasons for compulsively correcting people.
Do any of them feel uncomfortably familiar?
If not, dig. Figure out why you do it, because the only way to find out how to stop, or at least dial it back, is to know why you do it.
And a lot of the time, just understanding why you do it reveals enough about your own issues that it makes it pretty easy to take it down a notch. Self awareness can be... Embarrassing. For example, a lot of those things I listed, it comes down to insecurity in how others view you, being afraid of looking stupid, anxiety.
And when you realize that your anxiety or fear is negatively impacting your relationships because it's telling you to correct things that, in the grand scheme of things, don't matter, you realize that you need to address that root issue and not the things the root issue is trying to redirect you to. It gives you more clarity when you feel the compulsion to correct people.
Most importantly, reigning in this particular behavior, like many others, takes practice. Compulsions (any behavior that you feel really, really strongly that you need to do, with no strong logical reasoning behind it, which this is), notoriously get worse the more you listen to them. I'm not suggesting that this is OCD because, obviously, I don't know you at all, but OCD is a great comparison case, because the root of OCD is the need to fulfill compulsive behaviors to get obsessive thoughts, driven by anxiety and fear, to go away and leave you alone. The reason I bring this up is because it is well documented that, the more you listen to the compulsions, the worse they get, and you have to break the cycle to keep them at bay.
It's hard at first, but the more you resist the urge to correct people, the more you'll realize it was never actually improving your life or theirs to begin with, so it makes no difference if you just stop. Nine times out of ten, correcting other people is just like scratching an itch. They didn't learn anything and it makes you feel temporarily in control of something that makes you uncomfortable, but it doesn't actually improve anything for either of you.

GENUINE question. How do i balance my need for things to be correct with not being (perceived as) an asshole??
Like, rationally I KNOW people making grammar mistakes or getting dumb little facts wrong is not a big deal but it FEELS like a big deal and sometimes physically hurts me
But Ive ALSO grown up with people getting annoyed with me and snapping at me for being a know-it-all and 'nit-picky' and Ive had many arguments with friends growing up resulting from such instances

Imagine if you had a neighbour who keeps performing songs from Phantom of the Opera in his apartment every night, by himself but accompanied by a parrot, which he has taught to sing Christine's part. 🔹 Saying that it's okay to write or read about dark and taboo topics but only when they're portrayed in a certain way is still censorship.
🔹 Wanting to ban or forbid media that you believe portrays a negative topic in a positive light, by glorifying, romanticizing, or fetishizing it is still censorship.
🔹 There is no objective metric to decide if a story is portraying a negative topic the 'right' way.
🔹 Just because a piece of fiction doesn't explicitly condemn or portray an evil action in a bad light in the text doesn't mean the author thinks its good or is trying to persuade the audience that it is good.
🔹 Survivors of trauma will not always write fiction about their trauma in a way that seems 'right' or 'normal' to you.
🔹 Banning fiction because it portrays dark, taboo topics in a way you consider gross or disgusting is still censorship.
