7 Side Effects of Starting a Gluten Free Diet After a Celiac Diagnosis
New blog post! When you receive a celiac diagnosis, one of your first questions - beyond what a gluten free diet even is - might be the side effects of a gluten free diet. So in the spirit of spreading celiac awareness all year long and helping newly diagnosed celiacs adjust more easily than I did, I wanted to write about seven side effects of a gluten free diet you might experience after being diagnosed with celiac disease.
*As always, I am NOT a medical professional. I am simply describing my personal experience, supplemented by the research I can find. PLEASE talk to your doctor and get referred to a gastroenterologist if you suspect you have celiac disease or are struggling after a celiac disease diagnosis!*
So if you’re a new member of the celiac community, I hope this post gives you an idea of what to expect after going gluten free. And if you’re a loved one of someone newly diagnosed with celiac disease, I hope this post gives you ideas of how to show that person some extra love and support!
Gluten Free Diet Side Effect #1: You may not immediately start feeling better.
Although some with active celiac disease don’t experience any symptoms beyond the intestinal damage, I know that many of us have many different symptoms that lead to a celiac diagnosis. Personally, I was dealing with constant acid reflux and random weight loss, but there are over 300 symptoms of celiac disease you could experience pre-diagnosis. So I’m guessing that many newly diagnosed celiacs hope that as soon as they say goodbye to gluten, they can say goodbye to these celiac-related health problems at the same time. Unfortunately, that is not always the case. My body actually took several months and a hospitalization to start responding to a gluten free diet, and as I share in this post about a gluten free diet not being enough, I’m not the only celiac who has experienced a delay in healing. However, I don’t want you to take this as a sign to be discouraged. Instead, just know that you may have to be patient with your body and give yourself a few weeks or months (at the very least) to start recovering from the damage gluten already caused. Even more importantly, make sure you schedule a follow-up with your doctor so that they can monitor how your body is healing and how you’re adjusting to a gluten free diet.
Gluten Free Diet Side Effect #2: You'll grieve your old favorite foods and restaurants.
Even if you didn’t consider yourself a foodie before your celiac diagnosis, food plays a big role in our lives and in socializing. So after a celiac diagnosis, one side effect of a gluten free diet is definitely grieving the gluten-filled foods you can no longer eat. There are some amazing gluten free alternatives nowadays (check out this round-up for some of my favorites), but it can take time to find gluten free products that taste just as delicious to you.
On a related note, you may learn that some of your favorite restaurants have gluten free menus that are celiac-safe (AKA, free from possible cross-contact between gluten and gluten free food). Some of your old favorite dishes might even happen to be gluten free, or easily made so. But if not (RIP my favorite extra cheesy Papa John's pizza...), expect to feel sad or angry or jealous that family members or friends can enjoy your old favorite foods while you can't. And over time, eating gluten free and not missing your old foods as much will feel easier.
Gluten Free Diet Side Effect #3: You might experience extreme hunger.
The first year after my celiac diagnosis, I remember having days where no matter how much or what I ate, I was ALWAYS hungry. And if you find yourself feeling the same way...you aren't alone. This is your body's way of getting ALL the nutrients it has been missing due to the constant intestinal damage done by gluten. And as annoying as it can be to feel hungry all of the time...it will get better. And you can and should experiment with different gluten free foods to see what makes you feel your best and most satisfied!
Gluten Free Diet Side Effect #4: Your weight may change...in a variety of ways and for a variety of reasons. 
Many people believe that eating gluten free for weight loss is a winning strategy...but especially when you have celiac disease and go gluten free, your weight can change in a variety of ways. Many people actually gain weight because their body can finally absorb nutrients (not to mention that many gluten free processed foods are higher in sugar, fat and calories than their gluten-filled counterparts). 
However, other people can lose weight or stay at the same weight after their celiac diagnosis. And while it may not be easy to see a different reflection in the mirror on top of having to totally transform your diet, try to remember that you are finally giving your body the nutrients it needs.
Gluten Free Diet Side Effect #5: You may find yourself eating a wider variety of fruits, vegetables and grains that are naturally gluten free than you did before your celiac diagnosis.
While going gluten free does cut out certain foods from your diet, it will probably introduce many more. Personally, I never identified as a foodie before celiac disease turned my diet upside down. Suddenly, I found myself trying a bunch of new, naturally gluten free foods to add more variety in my diet...and if you start feeling too restricted while eating gluten free, try experimenting with foods like:
Gluten free grains, including buckwheat, quinoa, rice, millet, etc.
Vegetables and fruits, including less common choices like jicama, dragonfruit
Animal and plant-based protein, like different varieties of seafood and meat, lentils, etc.
Gluten Free Diet Side Effect #6: You will have to explain your new diet to your friends and family - probably multiple times.
One of the biggest gluten free diet side effects I've encountered is how challenging it can be to educate those around you. Many people assume that we're eating gluten free to be "trendy" and that having a bite of gluten won't actually hurt us. And even if your friends and family understand the seriousness of your disease, they may not understand how prevalent gluten can be and that a gluten free diet involves much MORE than avoiding bread.
So when you're explaining your new diet and what celiac disease means for the hundredth time...try to be patient. I've also found that the people who care the most will often do their own research on the side! And if people don't understand, don't feel guilty for repeatedly turning down unsafe food or setting boundaries. Your health and wellbeing deserve to be prioritized.
Gluten Free Diet Side Effect #7: You might resent having celiac disease and needing to eat gluten free at first...but it will get easier.
Especially if you didn't know anything about celiac disease or a gluten free diet before your diagnosis, it will probably feel challenging to adapt to your new lifestyle. You'll mourn your old favorite foods...you'll feel frustrated when everyone else is eating pizza at the party and you can't join in...and you may even resent your diagnosis.
But I promise - life with celiac disease DOES get easier. You'll find gluten free products that taste just as delicious as your old favorites, and you'll become more confident in advocating for your needs. The Bottom Line of Side Effects of a Gluten Free Diet:
You may initially think that going gluten free after a celiac disease diagnosis will immediately improve your health and your quality of life...but patience is key. Everyone with celiac disease heals at a different pace and experiences unique wins and challenges.
But knowing this from the start will automatically make YOUR transition to a gluten free diet much easier! And before you know it, you'll be a master of eating gluten free...

What my neighbors probably thought after spotting me photographing my Chipotle order: “You’ve guac to be kidding me.” 😅😂 In all seriousness, I photograph the bulk of my food in the shared outdoor areas of whatever apartment I’m living in, so I’ve gotten my fair share of odd looks. ROLLING into Fall with homemade Crunchy Caramel Apple Energy Balls…😍👇 I definitely am a night snack kinda person, and I love having something sweet (but secretly healthy) to enjoy before bed. These caramel apple energy balls are packed with caramelly apple flavor - not to mention the perf mix of chewy, crunchy and fudgy texture 😋 - but don’t have any added sugar! Plus, you can make them with as little as six ingredients. 👌 🍎 Recipe For the Caramel Apple Energy Balls: 4 ounces of applesauce (sugar free, if desired) 4-5 soaked and shredded dates 1/4 cup + 2 TBSP of flour (I used rice, quinoa and coconut flour from @nutsdotcom) 1/4 cup puffed rice cereal (I enjoy @erewhonorganic puffed rice, but any will do!) 1/4 cup mixed seeds and/or chopped nuts (I used sunflower seeds, pumpkin seeds and chia seeds from @foodsalive) A hearty sprinkling of cinnamon 🍎 Instructions: First, soak your dates in water for around 20 minutes to make them super soft. Then mash them (in a blender or with your fingers) with all the other ingredients except the puffed rice. I’ve found that adding the puffed rice last gives the best crunch! After the energy balls are rolled, pop them into the freezer on parchment paper for 20 minutes to set. Pumpkin Spice Owl Bagels (Gluten Free, Vegan)

And when you combine their super cinnamony bagel with a homemade pumpkin spice sweet potato spread...you get a delicious gluten free breakfast (or snack) that is perfect for fall. (Not to mention, just cute enough to entice picky eaters!) Ready to make your own hoot-iful bagel? First, gather the following ingredients:
Ingredients for a This Owl-Inspired Breakfast Bagel Recipe:
1 Cinnamon Raisin Bagel from Little Northern Bakehouse 1/4 of a cooked and cooled sweet potato Pumpkin spice seasoning Maple syrup, date syrup or sweetener of choice (optional) Banana, strawberries and raisins for decorating
How to Use These Healthy Bagel Toppings to Create Your Own Edible Owl Bagel:
First, toast your bagel (if desired) while you make the sweet potato spread. Simply mash the insides of your sweet potato with a liberal shake of pumpkin spice seasoning. For a sweeter spread, also add a squirt of your choice of sweetener. I didn't use any since I find Little Northern Bakehouse's bagels sweet enough on their own, but you do you! Then add the spread onto the bagel (covering the middle hole, for an owl design). Cut the berries and banana in the shape of wings, eyes, eyelashes and a beak, and put everything into place. Next, all you have to do is marvel at your decorating abilities and enjoy!

New blog post! I LOVE finding new resources that help people living with celiac disease...and I LOVE those resources even more when they're free! Going gluten free after a celiac disease diagnosis can be expensive since you often need to re-stock your pantry with gluten free foods and have medical bills to pay.

31+ TOTALLY FREE RESOURCES TO HELP ANYONE LIVING WITH CELIAC DISEASE:
1. Eat Out using Find Me Gluten Free. 
This app makes life SO much easier when you want to eat out but need to adhere to a gluten free diet. You can enter an address or use your current location and find reviews and menus of nearby restaurants with gluten free options.
2. Save Money. 
Ibotta is a money-saving app that lets you submit photographs of your receipts and get a small amount of cash back on certain products. Tons of stores participate in Ibotta, ranging from Walmart to Home Depot to Safeway, so you can get money back on more than just groceries. The cash-back products also change monthly, and I often see cash-back deals on gluten free brands like Bob's Red Mill and Enjoy Life Foods. 3. When You Need a Laugh.
If you've yet to discover Gluten Free Street Gang on Instagram, change that ASAP. This Instagram profile always makes me laugh and hits home about many aspects of a gluten free diet.
4. Find New Gluten Free Foods.
Celiac and the Beast is a renowned gluten free blogger in the industry for MANY reasons...but I especially love that she regularly shares some of the latest and greatest gluten free products to hit the market.
5. Get a BS-Free Perspective on Celiac Life.
Gluten Dude and all of his posts always say it like it is, whether he's calling out someone for harming the celiac community or offering advice to one of his many emailers.
6. Learn More About Celiac Disease and Eating Gluten Free.
MI Gluten Free Gal is another one of my favorite gluten free bloggers because not only does she share delicious recipes, but she also regularly shares graphics and posts on important topics for the celiac community, such as how to get a proper celiac disease diagnosis.
7. Cook Gluten Free Like a Pro.
There are plenty of amazing gluten free bloggers sharing equally amazing gluten free recipes, but a few of my favorite resources include:

8. Make New Friends
Spokin is another phone app allows you to look for gluten free (and allergy friendly) restaurants nearby, but it also gives users access to product reviews, allergy friendly travel guides and educational articles. Spokin is a social networking app to some extent, too, as you can follow other people after you’ve set up your own account
9. Find Back-To-School Tips.
Are you the parent of a child with celiac disease or do you have celiac disease and you're going to school? Then check out this extensive list of back-to-school resources from the National Celiac Association. And if you're a college student with celiac disease (or you're about to head to college), I highly recommend my thorough post about being gluten free in college!
10. Grocery Shop Like a Master.
One of the most popular gluten free apps on iTunes is The Gluten Free Scanner, which lets you scan a product’s barcode and receive a quick report on whether it’s gluten free or not.
I personally prefer scanning product labels myself because I know technology - just like people - can make mistakes. As a result, I’d encourage you to read a product’s ingredient labels yourself even if The Gluten Free Scanner says the product is gluten free. However, especially if you’re newly diagnosed and still wondering, "What is gluten anyway?", this free scanner could make shopping for gluten free products a lot quicker, easier and less stressful.
11. Stay Up-To-Date.
Beyond Celiac is another awesome celiac disease organization that provides plenty of gluten free recipes, tips on living with celiac disease and news updates.
12. Access Gluten Free Food in a Time of Need.
The Food Equality Initiative is a new organization to me, but I love their mission of making gluten free food (and food free from other allergens) more accessible to everyone. They also provide access to a gluten free food pantry to those in need.
13. Connect with Fellow Gluten Free Teens.
Generation GF is an AMAZING program that provides a variety of resources to gluten free kids and teens, including educational resources, local support groups and virtual chats that allow gluten free teens to connect even if they don't live in the same area.
The Gluten Free Intolerance Group is also who hosts the GF Teen Summit!
14. Get Safety Alerts.
The Gluten-Free Certification Organization (GFCO) provide independent verification of gluten free products, and their symbol indicates that a product meets the strictest of gluten free standards. But I also love that they regularly release safety alerts on gluten free products.
15. Meet Up with Other Gluten Free Folks.
Search for the local gluten-free community in your area, or start a group of your own, on Meetup.com.
16. Learn about Research on a Cure for Celiac Disease.
The University of Chicago Celiac Disease Center is on a mission to find a cure for celiac disease, and you can learn more about their work here.
17. Avoid the Top 10 Allergens.
Allergy Eats is another phone app that is very similar to Find Me Gluten Free except you can search for restaurants free of any of the top 10 allergens instead of just gluten. People can leave ratings and reviews, which, at least in my experience, makes eating out gluten free or allergy friendly a lot easier (and less scary) since you don't feel like you're making as "blind" of a restaurant choice.
18. Read Honest, Helpful Advice.
The information you can find on Reddit's gluten free channel - /r/GlutenFree - isn't always accurate or appropriate for all readers. However, you can find plenty of honest, helpful advice.
19. Download Gluten Free Restaurant Cards.
Make traveling a little easier with gluten free restaurant cards you can download in different languages.
20. Find the Best Gluten Free Products.
As regular readers know, I share gluten free product reviews pretty often on my blog and social media channels. But if you're looking for the best gluten free products to buy when you're just going gluten free, this post should definitely be on your reading list!

6 More of the Best Gluten Free Protein Bars
New blog post! Last year, I shared a post with my favorite gluten free and vegan protein bars...and you all loved it! And since I've since stumbled upon six more gluten free protein bars (four of which are also vegan), I thought I would share another post highlighting six more delicious gluten free protein bars!
As I've said previously, there are many different gluten free protein bars available nowadays and I still haven’t had the chance to try them all. But because gluten free protein bars are my favorite night snack, I do enjoy trying new ones every chance I get. Which brings us to the six new-to-me gluten free protein bars I'm going to spotlight today. :) This post is totally unsponsored, though I did win a few of these gluten free bars in giveaways. So with that said and done, let's dive into this review!
Best Gluten Free Protein Bars, Choice 1: Whoa Dough
Most of the protein bars I've tried in a cookie dough flavor have ended up falling short of their name...but not Whoa Dough! I was lucky enough to win a sample pack in a giveaway, and I immediately fell in love with Whoa Dough's super fudgy texture and dough to toppings ratio. I also LOVE all of their different flavors, which include: Chocolate Chip Cookie Dough, Peanut Butter Chocolate Chip Cookie Dough, Peanut Butter Cookie Dough, Sprinkle Sugar Cooke Dough, and Sugar Cookie Dough. My favorite flavors are chocolate chip and sprinkle sugar cookie, but I'm also a sucker for peanut butter chocolate chip. And besides coming in delicious flavors, Whoa Dough bars are certified gluten free, grain-free, soy-free, plant-based and non-GMO. This really is the perfect night snack when I want something sweet that still offers a good deal of protein.
Best Gluten Free Protein Bars, Choice 2: Go Macro
Especially if you love nuts and chocolate, Go Macro gluten free protein bars should be on your snack list. They are certified gluten free, vegan, raw, clean, organic, non-GMO and fodmap friendly. Besides protein bars, Go Macro also offers snacks bars and kid-sized snack bars. My personal favorite flavor is Sunflower Butter + Chocolate, and I love the super chewy, thick texture I've found in most Go Macro flavors I've tried. If you're a fan of really soft protein bars, I'd also recommend checking out some of these other options (mainly, Whoa Dough) instead.
Best Gluten Free Protein Bars, Choice 3: Caveman Foods
Eat a paleo diet? Then the paleo protein bars from Caveman Foods may be your new favorite snack. Even though these bars are less than 200 calories, they are super filling in my experience thanks to plenty of nuts and seeds. Compared to the previous bars I've mentioned, Caveman Foods' bars are a lot chunkier and you can see the nuts and seeds, versus them being blended in the base of the bar. Caveman Foods' protein bars are not only paleo, but also certified gluten free and free of soy, whey or pea protein. They instead get their protein from nuts, seeds, and egg whites. My personal favorite flavor is Chocolate Salted Caramel.
Best Gluten Free Protein Bars, Choice 4: Perfect Bar
If you're looking for a protein bar that seriously tastes like dessert, Perfect Bar is a perfect option. So far, I've tried the Salted Caramel flavor and OMG. The salty-and-sweet combination was spot-on, and I also loved the bar's cookie-dough-like texture and it was just sweet enough to satisfy my sweet tooth. Now for some fun facts about the bars: besides being gluten free, they are Non-GMO Project Verified, kosher, and contain 20+ superfoods. Because there aren't any artificial preservatives in a Perfect Bar, they do need to be refrigerated. Like Caveman Foods' bars, these bars also get their protein from whole foods such as nut butter and egg.
Best Gluten Free Protein Bars, Choice 5: Kize
Kize is one of the most recent gluten free protein bars I've discovered, and this is another bar that truly lives up to the cookie dough name. One way Kize is unique is that they offer gluten free bars that fit a variety of diets, including vegan protein bars, keto protein bars, and gluten free protein bars with egg white. Because their gluten free and vegan protein bars contain gluten free oats (which my system doesn't tolerate), I went with their Keto Peanut Butter Cookie flavor (which is also vegan), and their Cookie Dough flavor (which contains egg whites). And let me just say: DROOOOL. The Keto Peanut Butter Cookie flavor has a very dry, crumbly consistency, but the chocolate chips studded throughout are delicious and I loved the pure peanut butter flavor. But the classic Cookie Dough flavor is definitely a new FAVORITE. It has a super soft and creamy texture, and there are plenty of chocolate chips mixed throughout. If you can tolerate egg whites, I highly recommend giving that flavor a try!
Best Gluten Free Protein Bars, Choice 6: The GFB
The GFB offers a variety of super yummy gluten free snacks, ranging from gluten free protein bars to their new, grain-free bites. All of their products are not only certified gluten free, but also vegan, soy-free and non-GMO. I also love that they operate their own facility and hire their own, local workforce...so if you're looking to support local businesses, the GFB is an awesome option.
My favorite flavors so far have been Coconut Cashew and Dark Chocolate Almond. The bars have a soft, chewy texture with just enough crunch, and are sweet without tasting sugary. 
The Bottom Line of Finding the Best Gluten Free Protein Bars
Whenever I need a quick afternoon pick-me-up or a sweet midnight snack, I'm always grateful for the variety of gluten free protein bars that are available nowadays. If you don’t add a sexy drizzle of nut butter on your baked goods, are you really an Insta foodie? 😅😂 In all seriousness, though…adding some @juliesreal cashew butter and melty @enjoylifefoods chocolate chips was EXACTLY what this chocolate muffin needed. 👅 This muffin recipe isn’t perfect as they came out a little too dry and not quite sweet enough. But if you’re looking for a #glutenfreemuffin recipe is tinker with and make your own, here’s what I did (and suggestions on what I’ll change for the next batch!) 🍫🍌 Chocolate Banana Quinoa Muffins 1 @bobsredmill gluten free egg replacement 1 large ripe banana, mashed 2 TBSP coconut sugar (I would up it to 3 TBSP) 3 TBSP cacao flour 1/4 cup All Purpose GF flour 1/4 cup quinoa flour 1/2 tsp baking powder 1/4 tsp baking soda Handful of chocolate chips 2 TBSP water or plant-based milk (I would up to 3 TBSP if the batter feels too thick) 👩‍🍳 Instructions: Preheat oven to 350 degrees Fahrenheit. Make the egg replacement first and let gel. Then add the mashed banana, followed by all the other ingredients. Mix - careful to not over-mix! - and bake for 15-20 minutes, or until cooked through! What my neighbors probably thought after spotting me photographing my Chipotle order: “You’ve guac to be kidding me.” 😅😂 In all seriousness, I photograph the bulk of my food in the shared outdoor areas of whatever apartment I’m living in, so I’ve gotten my fair share of odd looks. (And when I was photographing pancakes in my apartment parking lot, a stranger did thoughtfully ask if I was OK. 🙈) But when the lighting and your #glutenfreedinner looks this good...a girl’s gotta do what a girl’s gotta do, right? 😎 *NOTE: I’ve luckily always had good experiences at Chipotle, but the safety of eating gluten free there definitely varies by location.
