Pâté en Croûte In order to hone my culinary skills, I decided to make a pate en croute, which is a pretty technically challenging dish. It tests the ability to prepare your meats, marinate in alcohol, making a dough without any holes while it bakes, make an aesthetic design on top, monitor intern temp to 155F so that it perfectly reaches 165F from its own heat out fo the oven, be able to make a port wine-jelly (the aspic) and pour through the “chimneys” on top to fill the hollow spaces that develop from the meat shrinking during baking and cooling, and actually be able to remove the pate from the mold without it breaking. Definitely a lot of places that could go wrong. Meat here is chicken liver, pork shoulder, and chicken breast. This also has some parsley, thyme, mushrooms, pistachios, and bacon on the inside. Some pickled mustard seeds and radishes on the side. The Pâté en Croûte is kind of an old-school, traditional French dish that you’d find at French brasseries. In the US, you see it at those specialty meat shops once in a while. This was paired with a French Gamay, known as Beaujolais, an excellent acidic, fruity, and medium-low bodied red wine. I think I’m a little too obsessed with becoming a better cook. Japanese Pain De Mie / Milk Bread / Shoku pan These Japanese breads are super fluffy, subtly sweet, and are used for a variety of things from sandwiches to desserts. Leftovers are made into panko. When I’m in Japan, I always eat a piece of toast for breakfast. So I cut my piece and put it in my housemate’s Hello Kitty toaster. When it came out, I though it came out irregularly toasted, but then upon looking closer, it’s actually a picture of Hello Kitty on my toast! Croque Madame Croque Madame is basically Croque Monsieur (French ham and cheese sandwich) with an egg. This one here is made with my sourdough, gruyere cheese, comté cheese, crème fraîche, and Jambon de Paris (“ham from Paris”). The sandwich is made with some toasted slices from my sourdough, French mustard, the gruyere cheese, ham, crème fraîche mixture with egg yolk and shredded comté, then slathering the cream mixture on top of the sandwich again with grated comté cheese, and then baked. Several months ago, I had an amazing croque madame at the Fatted Calf Charcuterie in Napa Valley. It was so good, that I went twice for the same sandwich. Sourdough First time scoring sourdough when baking. Although the ear came out great, the wheat stalk design broke. The flavor was complex and delicately tangy as a sourdough should be. “Levain Cookie” part 2. I used Joshua Weissman’s Levain cookie recipe last time, but I wasn’t convinced that it was the best it could be for this type of cookie. No significant changes to the amount of the ingredients were made, however, I used cold butter (instead of melted butter), and instead of short time/high temp, I went with long time/low temp (350F for 22min or until internal temp of 175F, Stella Parks from seriouseeats). Baked on parchment than silpat to reduce spread. BBQ Ribs Back when I used to make ribs, I would make ribs in foil in the oven at 275F for 2.5 hours. Using sous vide, I decided to compare 2 popular rib cooking conditions—seriouseats (SE) and chef steps (CS), to understand the effect of ribs when differed by time and temperature. I asked 2 questions: 1) How does time vs temperature affect rib inner texture via sous vide (SE: 36h 145F vs CS: 4H 167F)? 2) How does time vs temperature affect bark development via oven (SE: 40m 300F vs CS 4H 225)? 1. As expected, low heat/long time resulted in a softer texture (SE) while high heat/short time resulted in a springier texture (CS). 2. Bark development was not drastically different from the two conditions tested. Ribs is all personal preference—I actually like ribs with dry rub (as opposed to with a sauce) and with a springier texture. No need to cook it for so long if that’s also your preference! Other info: I brushed liquid smoke and molasses before sous vide and before applying dry rub. Salmon En Croûte - Scallop Mousseline - Beurre Blanc I’ve continuously made salmon en croute for the past 5 years, and every time, the dish changes. This is by far my favorite. Salmon is brushed with butter, dill, and dijon mustard. A simple mousseline is made by processing scallops, cream, butter, and egg whites. Salmon and the mousseline are wrapped together by a thin layer of blanched spinach. White and black sesame seeds are sprinkled and rolled out on a standard pastry puff. Wrap everything together and bake. This is served w/ beurre blanc, which I think is the perfect sauce for this dish.
