🌱 Turn up the heat! Today's Culinary Adventure is Quick and Easy Pickled Chili Peppers!
This spicy appetizer is a perfect addition to veggie main courses, plant-based burgers, and salads. The apple cider vinegar marinade with mustard seed is easy to make, but it adds the peppers extra deliciousness! 🌱
🍽 ~ 800ml / 27oz glass jar 🍽
🔶 What You Need 🔶
▪️8-10 chili peppers ~ 230g / 8oz
▪️3 garlic cloves
▪️water 1 cup
▪️apple cider vinegar 1 cup
▪️brown sugar 2 tbsp
▪️sea ​​salt 1½ tbsp
▪️mustard seed 1/4 tsp
🔶 What to Do 🔶
1️⃣ Cut the chili peppers into circles together with the seeds. Cut the garlic into thin slices.
2️⃣ In a small saucepan, mix water with vinegar, salt, sugar, and mustard seed. Bring to a boil, stirring occasionally, and remove from heat.
3️⃣ Add pepper and garlic to the marinade, mix and let cool to room temperature.
4️⃣ The pickled chili peppers are ready. If you are in a hurry, you can serve them right away. Or, put them in a clean jar and leave them to marinate in the fridge at least overnight. The longer the chili peppers marinate, the richer the flavor will be.

This vegan recipe does not have a drop of oil, but it still produces a decent crunchy crust. First of all, you should choose the suitable settings for your oven and baking time. In my case, I chose the Upper and Lower Heat setting and kept the potato wedges in the oven for 25 minutes. You may need to adjust the time for your oven.
Also, you can use your favorite seasoning or ready-made potato seasoning. But I suggest you try to compose the potato seasoning by yourself because a ready-made seasoning cannot compare in taste and aroma with freshly ground spices.

Today's Culinary Adventure is my favorite seasonings – a fascinating spice blend – khmeli suneli. Sounds very exotic, right?
Khmeli suneli is a legendary Georgian seasoning blend of spices and herbs. It's a very aromatic golden greenish spice mix with a unique taste with a hint of walnuts. Khmeli suneli means as much to Georgian cuisine as curry to Indian cuisine or paprika to Hungarian cuisine. Some call it the Georgian garam masala.
Khmeli suneli seasoning goes well with almost any dish, marinade, or pickles. You can use it to make soups, sauces, salads, vegetable dishes, rice, legumes, and savory pastries. Of course, it is a must-have ingredient when preparing traditional Caucasian dishes, such as tkemali, chakhokhbili, satsivi, lobio, pkhali, and many others.
Add the khmeli suneli seasoning 10-15 minutes before the dish is ready, so the herbs have time to convey their aroma to it but not overcook at the same time.
I highly recommend you to let khmeli suneli into your kitchen at least once. And, perhaps, you will fall in love with this seasoning as much as I did in my time.
