Hey, I need a bit of advice. I'm kindof new to writing, and I know that there's a lot of stuff that goes into writing before you start the story, such as building the characters etc. Do you have like a basic overview of the things that should definitely be done before I try to write things out into a story? Also, what is a character arc and how do I write one? I hope this ask makes sense.

There is so much going into a story. But this is not the format to analyse every little detail of it and you also just wanted a basic overview before you start, so here it is.
Basic overview: How to write a story?
Theme
What kind of story do you want to tell?
What do you want to write about?
What genre do you want to write in?
What is your target audience?
Is there a message you want to convey?
Specific issues you want to highlight?
What narrator do you want to tell the story?
 Structure
Before you start you need a rough idea on where to start and where to end
Beginning
Who is there in the beginning and where are they?
Ending
Who is still left and where do they end up?
Bear in mind that a story doesn’t need a happy ending, it just needs a satisfying one
Middle part (you don’t need to know this in detail)
you just need a few scenes to make a timeline
you need to kind of know how to get from the beginning to the end
you will need ups and downs and twists
Some major plot points for the middle part
Places/stops
Plot twists
When and how does the MC meet the other characters?
Key scenes to further the plot
A few scenes you already know you want to have in the story
Characters
How to create a character? (Tips for creating and developing characters)

Some tips on writing Latino OCs/characters
Avoid the stereotype of the sex-siren “fiesty” Latino tropes: This stereotype does more harm than good, as almost all classic TV representation for Latinos is shown as the big hypersexualized character. By boiling down a Latino character to simply their sexual appeal, it denies them of their cultural identification if they do not fit what non-Latinos imagine all of them look like. 
Not all Latinos speak Spanish: In fact, many Latinos do not speak Spanish that often or at all. Many times, non-bilingual/Spanish speaking individuals will write Latino characters “slipping” into speaking Spanish. This, obviously, does not happen in real life. If a Latino says something in Spanish then they meant to say it in Spanish. Here are some realistic reasons why a Latino character could say something in Spanish/Spanglish:
They are speaking to their grandparents or other people who only speak that language
For emphasis. I would sometimes speak to my partner in Spanish because I felt as though I could express myself better and more naturally (also ‘te amo’ feels more impactful than ‘I love you’, but that just may be a personal thing), but this did not occur often. 
They are short phrases that any non-Spanish speaker could pick up on. Hola, gracias, de nada, mucho mejor, qué onda, madre/parde, casa, por qué are all ones I use around my friends sometimes. Again, sometimes.
There are others I am sure, but please be careful when writing a Latino character speaking Spanish. As a Latino living in America, if I am be honest, unless speaking with other Spanish speaking individuals, I do not use the language all too often (just like any other language, weird how that happens). 
Do your research naming Latino characters: Please do not simply look up “Hispanic names” and choose the ones you like off of a list. If all your names look something like “Diego Rodriguez” then you are doing a bad job. Here are some tips: 
69% of South America is Catholic and 19% is Protestant. Using that information, you are bound to have a lot of religious names. All of my siblings are named after biblical figures. Some examples I see a lot are: Rebecca, Isaiah, Claudia, Gabriela, Marcus, Elizabeth etc.
In Latino culture, many times children take both their parents last names so their names would be hyphenated. For example: Father’s last name could be Perez-ABC and Mother’s could be Ramirez-XYZ so the child’s name would be Perez-Ramirez. 
This isn’t a hard and fast rule. If only one of the parents is Latino than most often they will simply do what most of Western culture does and take the father’s last name as the family name.
Represent many aspects of Latino culture: I far too often only see Mexican Latinos, which is great, but also there are many other countries/places to represent (Cuba, Colombia, Puerto Rico, Costa Rica, Peru, Chile, Honduras and more)
Latinos have a variety of hair colors and skin tones and body types, make them: Afro-Latino people exist, write them. White passing Latinos exist, write them (though if you are only ever writing Latinos with pale olive skin and eurocentric features, you’re doing it badly). Latino people with thick curly hair and bold features exist. Talk about it. Latinas are not just your vessel to write about “thicc” or curvy women. Petite Latinos and especially plus sized latinos need representation. Represent them. 
Latinos do not just eat ‘Mexican’ food: Stop associating all your characters with tacos and burritos. 
If you do have Latino characters don’t be afraid to make them queer or disabled or anything else under-represented. 
Avoid stereotypes altogether: The maid, the drug dealer, the sex symbol, the immigrant, we get it. That’s all we see in the media. Look up stereotypes, avoid them. It’s not “making a statement”, it’s racist, stop it. 
If you describe any Latino person as “spicy” or “exotic”………………… :) you know
Make sure the connection to their cultural background makes sense: Some Latinos have a strong connection to their country and culture, some do not. Make sure it makes sense for their family history, background, etc.
This is all I can sort of think of off the top of my head. Latino people, please feel free to add on with anything else (my experiences are a bit limited as a Puerto Rican living in America, so the more perspectives the merrier). White people and non-Latino POC’s can comment questions but please don’t clown (no “I am not latino but also…!)

Common Occupations in the Middle Ages
Almoners: ensured the poor received alms.
Atilliator: skilled castle worker who made crossbows.
Baliff: in charge of allotting jobs to the peasants, building repair, and repair of tools used by the peasants.
Barber: someone who cut hair. Also served as dentists, surgeons and blood-letters.
Blacksmith: forged and sharpened tools and weapons, beat out dents in armor, made hinges for doors, and window grills. Also referred to as Smiths.
Bottler: in charge of the buttery or bottlery.
Butler: cared for the cellar and was in charge of large butts and little butts (bottles) of wine and beer. Under him a staff of people might consist of brewers, tapsters, cellarers, dispensers, cupbearers and dapifer.
Carder: someone who brushed cloth during its manufacture.
Carpenter: built flooring, roofing, siege engines, furniture, panelling for rooms, and scaffoling for building.
Carters: workmen who brought wood and stone to the site of a castle under construction.
Castellan: resident owner or person in charge of a castle (custodian).
Chamberlain: responsible for the great chamber and for the personal finances of the castellan.
Chaplain: provided spirtual welfare for laborers and the castle garrison. The duties might also include supervising building operations, clerk, and keeping accounts. He also tended to the chapel.
Clerk: a person who checked material costs, wages, and kept accounts.
Constable: a person who took care (the governor or warden) of a castle in the absence of the owner. This was sometimes bestowed upon a great baron as an honor and some royal castles had hereditary constables.
Cook: roasted, broiled, and baked food in the fireplaces and ovens.
Cottars: the lowest of the peasantry. Worked as swine-herds, prison guards, and did odd jobs.
Ditcher: worker who dug moats, vaults, foundations and mines.
Dyer: someone who dyed cloth in huge heated vats during its manufacture.
Ewerer: worker who brought and heated water for the nobles.
Falconer: highly skilled expert responsible for the care and training of hawks for the sport of falconry.
Fuller: worker who shrinks & thickens cloth fibers through wetting & beating the material.
Glaziers: a person who cut and shaped glass.
Gong Farmer: a latrine pit emptier.
Hayward:  someone who tended the hedges.
Herald: knights assistant and an expert advisor on heraldry.
Keeper of the Wardrobe: in charge of the tailors and laundress.
Knight: a professional soldier. This was achieved only after long and arduous training which began in infancy.
Laird: minor baron or small landlord.
Marshal: officer in charge of a household’s horses, carts, wagons, and containers. His staff included farriers, grooms, carters, smiths and clerks. He also oversaw the transporting of goods.
Master Mason: responsible for the designing and overseeing the building of a structure.
Messengers: servants of the lord who carried receipts, letters, and commodities.
Miner: skilled professional who dug tunnels for the purpose of undermining a castle.
Minstrels: part of of the castle staff who provided entertainment in the form of singing and playing musical instruments.
Porter: took care of the doors (janitor), particularly the main entrance. Responsible for the guardrooms. The person also insured that no one entered or left the castle withour permission. Also known as the door-ward.
Reeve: supervised the work on lord’s property. He checked that everyone began and stopped work on time, and insured nothing was stolen. Senior officer of a borough.
Sapper: an unskilled person who dug a mine or approach tunnel.
Scullions: responsible for washing and cleaning in the kitchen.
Shearmen: a person who trimmed the cloth during its manufacture.
Shoemaker: a craftsman who made shoes. Known also as Cordwainers.
Spinster: a name given to a woman who earned her living spinning yarn. Later this was expanded and any unmarried woman was called a spinster.
Steward: took care of the estate and domestic administration. Supervised the household and events in the great hall. Also referred to as a Seneschal.
Squire: attained at the age of 14 while training as a knight. He would be assigned to a knight to carry and care for the weapons and horse.
Watchmen: an official at the castle responsible for security. Assited by lookouts (the garrison).
Weaver: someone who cleaned and compacted cloth, in association with the Walker and Fuller.
Woodworkers: tradesmen called Board-hewers who worked in the forest, producing joists and beams.
Other medieval jobs included:
tanners, soap makers, cask makers, cloth makers, candle makers (chandlers), gold and silver smiths, laundresses, bakers, grooms, pages, huntsmen, doctors, painters, plasterers, and painters, potters, brick and tile makers, glass makers, shipwrights, sailors, butchers, fishmongers, farmers, herdsmen, millers, the clergy, parish priests, members of the monastic orders, innkeepers, roadmenders, woodwards (for the forests). slingers. Other Domestic jobs inside the castle or manor:
Personal atendants- ladies-in-waiting, chamber maids, doctor.
The myriad of people involved in the preparation and serving of meals- brewers, poulterer, fruiterers, slaughterers, dispensers, cooks and the cupbearers.
