I don’t quite remember where I found the recipe at, but it’s been in my book forever. So, here it is, hope it helps.

3/4 cups flour

1/2 cup sugar

Pinch of salt

1 TBSP of corn meal

Dried sage

Dried thyme

1/4 cup of meltedish butter

Little bit of milk (you can usually eyeball it)

Flowers (Not all the ones in the photo are edible, if you want to eat these use edible flowers).

Almonds (if desired)

In a bowl whisk together the flour, sugar, salt, corn meal, dried sage, and dried thyme. After that’s whisked together, add the 1/4 cup of meltedish butter and mix it together. You then add the little bit of milk and knead until it comes together. Form 2 logs and chill for 10 min. Slice off pieces and press them down flat. Gently press in the flowers. Add almonds (if desired) and cook at 375 F for 15 min. Let cool and they’re done! :)

I tried my best to translate this into whatever the american measurement system is (they don’t even teach us the name lmao), figured I would share to hopefully save someone’s time.

Cake: 

3 5/8 cup of flour

1 cup of butter

4 tbsp of honey

3/4 cup of sugar

1 tsp baking powder

1 tsp of cinnamon

1 tsp salt

4 eggs

1 cup of milk

1 tsp of vanilla extract

Icing:

1 1/2 cups icing sugar

4 tsp of water

1 tsp cinnamon

As much honey as you want

Lavender (optional)

And then you should be able to follow the rest of the recipe as usual! :)

Summer solstice honey cakes ☀️🌻

Happy summer solstice! Here’s a recipe to honour the day:

(Makes about 30 cupcakes or 2 big cakes)

Ingredients:

Cake:

450g plain flour

225g butter

4 tbsp honey

150g sugar

1 tsp baking powder

1 tsp cinnamon

1 tsp salt

4 eggs

250 ml milk

1 tsp vanilla extract

Icing:

150g icing sugar

20 ml water

1 tsp cinnamon

As much honey as you want

Lavender (optional)

1. Lay out cake cases or grease your tray if you are making one big cake and preheat your oven to 180C/350F

2. Mix the flour, sugar, baking powder, cinnamon and salt together

3. Add the eggs, honey, butter, milk and vanilla extract and mix until smooth

4. Put the mixture into whatever you are baking it in

5. Bake for 20mins (cupcakes) or 40mins (big cake)

6. Whilst cakes are baking prepare your icing. Mix together the icing sugar, water, cinnamon and honey until smooth. Add more water if you need to.

7. Once the cakes are done, take them out and leave to cool

8. When the cakes are cool, drizzle the icing onto them. Add lavender if you wish

9. Eat!
