NUT FREE TAHINI CARAMEL BALLS Made these the other day and now I need to control my lil mitts so I don’t keep eating them! So delicious! Nut free too so perfect for lunch box treats and you can go without chocolate coating too of course - swipe over to see both. All yummy ingredients from @nakedfoods - enjoy! 😜
NUT FREE TAHINI CARAMEL BALLS
1 cup rolled oats
1 cup medjool dates, pitted
1/2 cup tahini
1/4 cup sunflower seeds 
1/4 cup pumpkin seeds 
1/4 cup hemp seeds
2 tsp ground cinnamon 
1 tsp vanilla 
1/4 cup water
Sesame seeds to decorate 
Chocolate coating : 
1/3 cup raw cacao
1/3 cup coconut oil 
2 tbsp maple syrup 
Pop all ingredients for seed balls in food processor and blitz until it forms a dough. Roll into balls and pop in freezer. If coating with chocolate you can use melted chocolate or make the chocolate by melting coconut oil then whisk in cacao and maple. Roll the balls through the chocolate and place on baking paper then repeat another 1-2 times to coat well. Pop back in freezer to set completely. Store and serve from fridge or freezer.

ESPRESSO HAZELNUT SLICE 
Gluten free : Dairy free : Refined Sugar Free : Vegan 
1 cup pitted dried dates
2 shots espresoo + 1/4 cup boiling water 
1 cup (150g) cashews 
1/2 cup raw cacao powder
1/2 cup (125ml) coconut milk 
1/2 cup melted coconut oil 
150g hazelnuts, skinned and roughly chopped
Soak the dates in the coffee and boiling water for 5 minutes. In a food processor blitz cashews until they are a crumb then add dates, with coffee, raw cacao, coconut milk and coconut oil. Pour into a lined 20x12 loaf tin (or something of a similar size) and sprinkle hazelnuts all over the top. Press the hazelnuts in lightly with the back of a spatula. Place in freezer to set for 2-3 hours. Serve and eat directly from freezer - this part important as it will maintain the texture. Enjoy! + Serves... many - you really only need a small slice of this one but let's say serves 20 so you have a reference and don't eat tooooo much of it. 😜

THAI MANGO TOFU NOODLE SALAD 1 pack rice vermicelli 1/2 cup peanuts 400g firm organic tofu or tempeh 2 mangoes, sliced 1 punnet cherry tomatoes, halved 1/2 small red onion, diced 1 cucumber, finely sliced 1/2 bunch coriander, chopped 1 cup mint leaves Chilli - as you wish! Dressing: 1 - 1.5 tablespoons tamari 1.5 tablespoons olive oil 1/2 clove garlic minced (or 1tsp garlic oil) Juice of 1 lemon (approx 2-3 tbsp) Cook vermicelli in boiling water and drain. Toast peanuts in frypan, set aside, wipe pan, drizzle with oil and then sear tofu for 3-4 minutes. Whisk dressing and toss with noodles. Add remaining ingredients, toss again gently then serve!

eatthegainsI made it to Rochester, NY! Super excited to hang with the @lovebeetscrew and a bunch of amazing ladies the next couple of days. Just had a yummy dinner and now I’m wanting some chocolate.
