My first action would be to go back to the 1960s, find a period tape recorder, and record the early episodes of Doctor Who. Then, hide them in a place where they're unlikely to degrade badly (or if they do, go back and transfer the footage to new media on occasion) or be discovered for several decades. Then return to the present and "find" them so that we can have the Lost Episodes again.
My second thing would be to grab all of the Doctors up to 12 just after their tenure as the Doctor is ended and take them all to 2013 to watch the 50th anniversary special together.
After that, I'm not entirely sure, because I'd be worried about what kind of temporal side effects would result from trying to make sweeping changes to history.
If it turns out to be an Alternate Universe Split situation? Then I hope the time machine can also universe hop, because I want to see what the world would have been like if Emperor Constantine had lost the Battle of the Milvian Bridge, potentially curtailing the spread of Christianity, among other things.

An exploration motive is a more likely one than the help people one. Something a lot of people seem to forget is that Luffy is far more selfish than his actions suggest.
He never visits a place with the intent of helping out. Instead, he goes in to have a look around and is so very charismatic that he'll easily make at least one friend, even if the friend was trying to scam him (because he's also very good at reading people, for all that he's not the smartest knife in the shed). Then, when that new friend gets into trouble, Luffy will 100% fight for that friend, which, in One Piece, escalates quickly to destroying tyranny in one form or another, because that's his friend, and you do not hurt his friends.
Which, typing that out, does feel kinda Gon-like, considering the whole thing with Kite in the Chimera Ant Arc.

As someone who has read both manga, Gon's Nen is almost exactly high-end Armament Haki. Like, stuff Luffy only recently learned high-end, with Gon's big burnout final technique possibly being a nasty combo with Conqueror's Haki.
Luffy would be an interesting case because transferring his Devil Fruit to a Nen type would make him a Specialist whose Nen does something like Biscuit's transformation in altering his body (and, later, things he puts Nen into, as a parellel to the Awakening).
The biggest differences in their journeys, though, is how their goals were so entwined in their character. Gon wants to find his dad, Luffy will be Pirate King. If you just swap them and not their families or goals, then Monkey D. Gon would not have beelined it for the Grand Line, instead exploring every mile of the East Blue first in search of Dragon, which could have big consequences down the Line owing to arriving far later than the canon crew did.
Meanwhile, "Pirate King" doesn't really have an equivalent in HxH; there's no "Hunter King" or anything. Which means that Luffy Freecs would need something different. Now, it was revealed relatively recently that Pirate King is not Luffy's Dream, just his goal, and Oda once said in an SBS that a non-Pirate Luffy would be a firefighter. So it's really up in the air what this alternate version would be like.

Two things came to my mind: first is a YouTube video I found that talks about Schrodinger's Sexuality, or basically player-centric sexuality, specifically using Stardew Valley as an example. The most you get from the romanceable characters is a line like "I didn't know I could feel this way about another [gender of speaker]." Leah, however, is an exaggerated case of this in that she has an ex-partner whose gender always matches the player's.
The other is a manga I had recommended to me, Sex Ed 120% (which is an inreresting manga, not sexy but about sex education and how it could be so much better), where, near the end, the main teacher character says, "yeah, I'm bi, but I've only ever dated women." She outright says she's still attracted to men, she just never actually dated any for various reasons.
Hey you know what's super funny about the idea of "good bi rep"?
For a character to be canonically bi you have to make sure and establish that they're attracted to multiple genders. Not all mediums allow you to get inside every character's head or show what they're thinking. Flirting can be read ambiguously, and god forbid they flirt with a character who's not into them and be read as pushy or predatory. So it can be super handy to just mention an ex or two! But you better not mention too many exes because that would make them a slutty bisexual which is (checks notes) bad, and you definitely better be careful about making them poly, because that might make them, uh... greedy. Oh, and those exes? They better be perfectly amiable breakups with no conflict or drama, because it's bad to represent queer people in toxic or abusive relationships (especially queer women! very bad), and you definitely can't have them have lost a partner if the partner was queer because that's "bury your gays..." You should probably also eliminate all trauma from their backstory, just to be safe. You should probably also make sure they're not involved in crime, deception, or anything of the sort, because that would make them "deviant" and a stereotype.
But don't worry! Once you've carefully crafted your nice, monogamous, experienced-but-not-too-experienced Lawful Good bi character, you will be rewarded with your audience deeming them "boring" and quickly passing them over for other characters. :)

Genderfluid and generally agender, but rather than wanting to be "which one am I?" androgynous, I'm aiming to have obvious features of both. I already have my goatee and am a bit over a year into HRT to grow boobs. Which I hope end up big so that people can't just ignore them.
Also my wife is ace, so that's another kettle of fish people would get up in arms over.

That being said, I otherwise wholly agree that 03 is just as important a watching experience, because it demonstrates what an anime can do if they know they'll be far outpacing the source, but the author gives permission (and guidance) to go your own way.
It's actually something I noticed when I introduced my partner to FMA by watching both (though it was a bit of a trial to find a site we could watch 03 at): They knew their series was going to take a different route by episode one of 03, and started planting hints as to their version of events extremely early.
Okay but the weirdest thing about the whole "Brotherhood is better you should skip 03" discourse that's become commonplace now, it sort of forgets the world Brotherhood came out in and why you should watch the original Fullmetal Alchemist. When Brotherhood came out, the original Fullmetal Alchemist was one of the most beloved and most watched animes of all time. Brotherhood assumes you the audience have already seen it because of course you have, everyone has seen it, so it skips important information and speeds the story up because it doesn't want to bore you with things you already know. Have you ever wondered "hey why does the first episode of Brotherhood kind of suck, and why am I being introduced to like 50 new characters, and why are they acting like I know what the hell an alchemist is?" It's because Brotherhood thinks you've seen 03.
The first 7 or so episodes of Brotherhood constitute dozens of chapters in the manga, and the first 25 or so episodes of the original Fullmetal Alchemist. The Nina Tucker episode in Brotherhood, in FMA 03 takes up nearly three episodes. Yoki gets a backstory in 03 and it's genuinely one of the best episodes and taken directly from the manga and Brotherhood glosses over it because: duh, you've already seen it. And so if you skip the original you miss out on dozens of really great character building episodes like Ed and Al meeting Hughes for the first time and getting to spend a whole episode helping him free a train from terrorists, or Ed and Roy having a duel that expands on the relationship they have, or episodes where the brothers just help out random people in towns before the major story gets going.
The original also paces itself quite a bit better than Brotherhood and is more in line with the mangas storytelling. In the manga we don't find out about The Gate until nearly two dozen chapters in, and the same goes for the original anime. Like, that's a twist reveal in those stories, and it's weird that the most watched series is the one where they tell you all about The Gate in the first two episodes because they assume you've already seen the original show.
What's more, people don't know that Hiromu Arakawa helped write for the anime while she was still in the middle of writing the manga, and as a result was inspired to write scenes in Brotherhood that the anime did first. That scene of Edward getting impaled by a falling beam? Directly inspired by a similar scene in the original anime. There's a lot of little instances of that and they're great when you can recognize parallels and things in Brotherhood that are direct references to the original anime, but people don't notice any of that anymore. Because the original anime is just an automatic skip these days, and it's a bummer because people don't realize what a giant it was back before Brotherhood was released. They treat it as *bad,* not realizing it was one of the most beloved anime of its time and the problems people take issue with have a lot more to do with personal taste than any kind of actual flaw in the writing. Brotherhood was never meant to dethrone it, and the original anime was always supposed to be part of the viewing experience which is why those first few episodes of Brotherhood are so fast paced. So like, please stop telling people Fullmetal Alchemist 2003 is a skip, or it's bad, or you don't need it because Brotherhood is better. Regardless if you think Brotherhood is better or not, the original wrote Brotherhood's check. It was huge, it was beloved, and Brotherhood is *banking* on the knowledge you've seen all of it and loved it. And trust me when I say there is so much to love about the original series. It's still my favorite branch of the FMA franchise, and it's worth your time, I promise you.

I honestly enjoy cooking, but I don't get to do it often enough (I am slightly envious of my partner sometimes, since she's the one that's been going through our mountain of cook books while I've been off at work).
A related tale, though, is that some years ago, one of my cousins' kids was visiting my gramma (his great-gramma) and gramma set out the ingredients for a couple varieties of sandwich on the counter. He had no idea how to make himself a sandwich, which utterly baffled both of us.
