so whats the deal with kaworus coffins?

Kaworu's coffins confirm a fan theory that they contain versions of him from different loops.

The opened ones are Kaworus from failed loops and the closed are the loops that have yet to begin. Kaworu would go on to an eternal cycle of suffering had Shinji not removed Kaworu's Eva. This circular situation of coffins also plays into both Eva's and Rebuild's ultimate endgame. The former is more blatant on it: the importance of understanding harmful cycles and the powerful implications of breaking them. It's another reason why removal of the Evangelion is so crucial.
