This is your sign to try the @tiktok viral French Onion Pasta 🍝 Hey everyone! It's been awhile... I decided to try the @carolbeecooks One Pot French Onion Pasta recipe with a few substitutions and tweaks of my own! In my version: 👩🏻‍🍳 I used a hybrid of butter and some homemade garlic olive oil to caramelize the onions. 👩🏻‍🍳 I substituted chicken broth for beef broth (because I added some @costco rotisserie chicken to it). 👩🏻‍🍳 I opted for a chickpea pasta instead of the suggested pasta. 👩🏻‍🍳 I used a healthy heavy cream substitute. 👩🏻‍🍳 I skipped the cheese and it was still really good. I would definitely recommend trying this one out! It's a very rich pasta dish that's quick and easy to make with common kitchen ingredients. I included the chicken because I had just went to Costco. Here's a reminder that sometimes you don't have to make it from scratch to make it your own... I gave the Trader Joe's Pumpkin Sticky Toffee Cake a try and paired it with @traderjoes Banana Pudding Ice Cream because as you all know that I'm a sucker for their seasonal products! So here are my thoughts: LOVE LOVE LOVE ❤️ this pairing!!! 🍌The Banana Pudding Ice Cream was a little oddly artificial tasting by itself but with the Pumpkin Sticky Toffee Cake was amazing! 🎃 The Sticky Toffee Cake is pretty good by itself! Not a lot of pumpkin flavor but the warming spices and texture in the cake is soooo delicious! I would definitely recommend the Pumpkin Sticky Toffee Cake with or without the Banana Pudding ice cream but definitely eat it with some ice cream! I'm not sure I would recommend the Banana Pudding Ice Cream. It had a nice creamy texture but a little bit artificial tasting to me. But I've never had real Banana Pudding 🍮 and just learned how to make one from my friend last summer! So I went to Treylor Park the other night after some adult trick or treating... and, of course, I had to get the Grande Nachos! #iykyk But something on the menu caught my attention... the Treylor Park Chicken Pot Pie: essentially it's their spin on chicken pot pie filling stuffed in a tortilla and deep fried. I like to think of it as a Chicken Pot Pie Hot Pocket. So I re-created my own for dinner last night! I made my favorite chicken pot pie mixture with a much thicker consistency and let it cool down. I filled a tortilla with the chilled filling tucked everything in and toasted them in the pan. I had smaller tortillas so I made 2! Dinner last night: Char siu tacos! 🌮🌮🌮 This was the first time I made this great fusion meal and I highly suggest it! I made a traditional Hong Kong style char siu (sans the red food coloring). I took slices of the char siu and put them on top of a bed of pork belly fried rice, topped with an Asian dressed slaw (brussel sprouts, carrots, sweet peppers, and cilantro), avocado, and a sprinkle of noritamago furikake tucked in a flour tortilla. This was such a great idea and I'd definitely make this meal again! It's been a while... here's a nice fresh batch of blueberry muffins from scratch! Here's my favorite blueberry muffin recipe For the Muffins: 🧁 1 ½ cups all-purpose flour 🍬 ¾ cup white sugar 🧁 2 teaspoons baking powder 🧂 ½ teaspoon salt 🧁 ⅓ cup vegetable oil 🥚 1 egg 🥛 ⅓ cup milk 🫐 1 cup fresh blueberries For the Strussel Crumb Topping: 🧁 ½ cup white sugar 🧁 ⅓ cup all-purpose flour 🧈 ¼ cup butter, cubed 🧁 1 ½ teaspoons ground cinnamon 🧁 Preheat oven to 400°F (200°C). Grease muffin cups or line w/paper liners. For the muffins: 🧁 Whisk flour, sugar, baking powder, & salt together in a large bowl. 🧁 Combine oil, egg, & milk. Stir well. 🧁 Pour wet mixture into flour mixture & mix just until batter is combined. Fold in blueberries; set batter aside. For the crumb topping: 🧁 Combine sugar, flour, butter, & cinnamon in a small bowl. Mix with a fork until crumbly. 🧁 Spoon batter into the prepared muffin cups (fill to the top for bakery style). Here's my favorite chocolate chip cookie recipe: 🧈 ½ cup salted butter (*softened NOT melted!) 🤍 ½ cup white (granulated) sugar 🤎 ½ cup light brown sugar packed 🍦 1 tsp pure vanilla extract 🥚 1 large egg 💛 1½ cups all-purpose flour 🤍 ½ tsp baking soda 🤍 ¼ tsp baking powder 🧂 ½ tsp sea salt (regular is okay too) 🍫 ½ bag of @nestletollhouse Chocolate chips 🍫 ½ bag of @nestletollhouse mini Chocolate chips (*the use of chocolate chips is at your own discretion. I like A LOT chocolate but if you want just 1 cup of regular chocolate chips, that's good too just remember to adjust the bake time!) Cover and set in the refrigerator for at least 1 hour (I like to make the dough the night before and bake them the next afternoon)! Bake at 375° for 8-10 minutes depending the amount of chips you used, the size of your cookie, and on the way you like your cookie! Dinner last night = Chicken Tonkatsu Ramen! I probably have ramen at least once a week. Sometimes at lunch... and sometimes at dinner. BUT, growing up, it was always a quick lunch dish that my mom would throw together with a leftover protein from the night before. Ramen in college was a completely different story... people were just having ramen all times of the day and it was basically plain with soup.
