How do you know where to add fat for Derek. I feel like everytime I draw a fat character, the arms look wobbly and the legs look like elephant hooves (feet is also a struggle for me lol)

Slightly chubby characters are mostly ok I think, but I feel like whenever the skin starts to fold I start to have problems...

my best advice is to learn from observation, and look up tutorials showing you how to draw different types of fat bodies if you can. i learned a lot from tutorials, as well as the fat models we drew in my life drawing class. it gives you a great feel for how skin folds and all the ways in which fat is distributed -- and then you get to a point where you know enough to apply it to your own style.

though personally, i feel like i tend to draw one or two fat bodies the most, so i'd like to work on expanding that more.

with Derek, the majority of his fat goes to his torso and legs. his arms also have fat, but there's supposed to be more muscle there under the fat.

so here's a basic diagram of Derek's fat distribution:

the most noticeable difference is in his torso. the pecs are bigger and wider spread, the skin folds around the ribs (i've noticed that in a lot of my studies), and Derek's belly and legs follow more of a 'pear shape'.

his thighs are thick, but not thick enough to go past his belly (so it's more of a rectangular outline), and his calves have some muscle to them. you can't really see much change to the arms from the front view, but the biceps are the fattiest area there.
