Turkey Burger Trial 1
I made some Asian-inspired turkey burgers.  They tasted really good but a few fell apart on the grill. I;m not sure if it’s bcause i didn’t mold them properly or the turkey burgers aren’t the right consistency.  Here’s what I used:
-1 lb extra lean ground turkey
-2 Tbsp seasoned panko breadcrumbs
-1 Tbsp soy sauce
-2 tsp sambal olek
-1.5 tsp fresh minced ginger
-1 tsp fresh minced garlic
Next time I might try adding an egg white so they stay together a bit better.  Scallions could add a nice flavor too I think.

A college professor of mine introduced me to this Ethiopian dish, which he called atkilt (though some restaurants call a similar dish ‘tikil gomen’).  To make it, you need:
-1 small shredded cabbage (I used a spiralizer)
-4 carrots, cut into thin rounds
-1 large yellow onion, sliced thin
-4 potatoes, cubed
-½ cup olive oil
-1 teaspoon cumin
-¾ teaspoon turmeric
-½ teaspoon cayenne
-½ teaspoon onion powder
-2 cloves of garlic, minced
-1 teaspoon ground ginger, or fresh ginger
-salt and pepper
-about ¼ cup of water
Add the ½ cup of olive oil to a large pot and simmer the onion and carrots over medium heat for about 8 minutes.  Add the turmeric, cumin, and garlic, and cook for about a minute.  Then add the cabbage and cook for about 10 minutes, stirring occasionally, until the cabbage is wilted.  Stir the potatoes into the cabbage mixture, along with the water, cayenne, onion powder, ginger, and salt and pepper.  Reduce heat to medium/low, and simmer (with lid on) for about 30 minutes until the potatoes are tender.

Delicious spicy baked fries that are so golden brown and crispy you can hardly tell they aren’t fried. 
First I made the cut potatoes “sweat” by putting sugar on them to draw out moisture, then I rinsed them off and soaked them in warm saltwater for about an hour. 
Then I tossed them in a bag with olive oil, fresh minced garlic, garlic salt, paprika, cayenne pepper, onion powder, parsley, and black pepper. 
I cooked them at 425 for 30 min, flipping them halfway through.

Healthy Banana Pancakes
-1 banana
-1 cup almond milk
-2 tsp vanilla extract
-1 cup whole wheat flour
-2 tbsp ground/milled flaxseed
-1 tsp baking powder
-1 tsp baking soda
-2 tsp cinnamon
-½ tsp nutmeg
-1 tbsp coconut oil
-4 tbsp chopped pecans (optional)

These are half and half cookies - a light, cakey vanilla cookie frosted with half vanilla and half chocolate frosting. 
To make the cookie, cream the butter and sugar in a mixer on high speed, then add the milk, vinegar, eggs, vanilla, flour, baking powder, baking soda, and salt.  When adding the milk and vinegar, pour the tablespoon into the milk first (it will start to curdle) and then pour it into the batter.  You can substitute one cup of sour cream for the milk and vinegar mixture if you want.
Bake at 375 for 10 min.  Once the cookies have cooled, flip them over to ice the flat side. 
For the chocolate frosting, I use a really simple recipe - just 6 tablespoons of butter, 2 and 2/3 cups of powdered sugar, ½ cup of cocoa, 1/3 cup of milk, and 1-2 teaspoons of vanilla.  For the vanilla frosting, just omit the cocoa and add a little more powdered sugar and a little less milk to get the consistency right (lol sorry im not very exact when I bake haha).

Pickling some cucumbers for bahn mi sandwiches. Boil ½ cup rice wine vinegar, ½ cup sugar, ¼ cup water, and a teaspoon of salt until the sugar dissolves, and then add chili garlic sauce if desired. The mixture also makes a really good dressing for a salad of cucumbers, red onion, and daikon. @liliaharlow @mosquito-r

Baked “fried chicken” - tenders are dredged in an egg and flour mixture with chili powder, Worcestershire sauce, and tobasco sauce, and then rolled in panko breadcrumbs for crispiness and baked.

Here’s a trick to making roasted potatoes: sprinkle sugar over the cut potatoes and let them sit for a few minutes - the sugar draws moisture out of the potatoes so they’ll be crispier. Then I rinse off the sugar and put them in a bag with olive oil, fresh garlic, thyme, salt, pepper, paprika, and parsley and shake it all up before baking. @liliaharlow

Here’s an apple crisp recipe @stone-faced-sunset.  I included step by step pics because I’m obnoxious. 
Ingredients:
-10 Green Apples
-1 Cup white sugar
-1 Cup + 1 Tablespoon white flour
-2 Teaspoons cinnamon
-½ Teaspoon nutmeg
-½ Cup water
-1 Cup quick oats
-1 Cup brown sugar
-¼ teaspoon baking powder
-¼ teaspoon baking soda
-½ cup melted butter
1.) Place the sliced apples in a 9x13 pan
2.) Mix 1 cup of white sugar, 1 tablespoon of flour, 2 teaspoons of cinnamon, and ½ teaspoon of nutmeg together and pour the mixture over the apples. Pour ½ cup of water of the apples and mixture.  
3.) Combine 1 cup of oats, 1 cup of flour, 1 cup of brown sugar, ¼ teaspoon baking powder, ¼ teaspoon baking soda, and melted butter.  Crumble over the apple mixture.
4.) Bake at 350 degrees for about 45 min.
