July is the start of the aubergine season, so here is how to make the most of it: Miso marinated aubergine (serves 4) 2 large aubergines 1 tbsp miso paste 2 tsp agave syrup 1 tsp rice vinegar 1 tsp rice oil or similar Slice each aubergine in two lengthwise and score the fleshy side of each half. Mix together the remaining ingredients apart from the oil, and rub this mixture onto the fleshy side of the aubergines. Leave to marinate for an hour. A perfect treat for the summer heat! With the temperature rising and our craving for sweets not going away, this vegan yoghurt cheesecake just hits the spot. 🍰 🍓🍰🍓🍰 Here’s an easy recipe for a quick and delicious dessert. (optional) base: - 50 g sugar  - 100 g butter - 200 g flour Mix together and press into a cake tin. filling: - 1 kg plain vegan yoghurt - 120 g vanilla custard powder - 150-200 g sugar - 100 g melted butter - (optional) vanilla or almond extract Whisk together and pour on top of the base. Bake for an hour at 180°C. (optional) topping - fruit jelly - 500 ml puréed fruit (I used strawberries) - 1 tsp agar agar dissolved in 100 ml water - 1 tbsp sugar Stir together, bring to boil, pour on top of your baked and cooled cheesecake and leave to set. With spring in full bloom, there is now an abundant choice of fresh vegetables and fruits in our local shops, including these versatile super-plants. 💚Asparagus - make the most of the short asparagus season! Soften them in boiling water before frying in olive oil, or add to pasta or risotto for a satisfying spring dinner. 💚Peas - frozen peas can be enjoyed all year round, but in spring try them in salads to really taste the freshness. 💚Green beans - fresh green beans, sautéed with toasted almond flakes and a buttery shallot dressing for example, make for a side dish that’s so good it might just steal the show and turn into the main event. 💚Spinach - if you have too much fresh spinach for a salad, add it to stews, savoury bakes and curries. You can also make pesto with it, which will be even nicer if you combine it with herbs or rocket. 💚Strawberries - besides the classic strawberries and cream, they go in pretty much all desserts. If you don’t fancy baking, simply dip them in melted dark chocolate. 💚Apricots - these adorable fruit have a sweetness that’s also subtle enough not to take over the flavour of savoury dishes such as casseroles or summery grain salads. 💚Rhubarb - everyone knows how lovely rhubarb goes in a crumble served with custard, but its other favourite partner is ginger, which it can be paired with in cakes and tarts, jam, or even cocktails. There isn’t always time for cooking From scratch, and it’s ok to resort to ready-made/convenience foods from time to time. A perfect weeknight dinner - “sea style” breaded tofu fingers, quick sweet potato fries and peas - my emergency meal staple. Spring is the perfect time for salads. A proper vegan salad is so much more than a serving of leafy greens. It’s a complete meal, rather than a side, with a perfect balance of textures and flavours, sources of carbs and protein as well as a cornucopia of micronutrients, all brought together with a delicious dressing. Seasonal vegetables in March March is the first month of spring, bringing with it the sunshine and the first juicy produce of the season. In addition to year-round veggies, we can now enjoy fresh salads and multi-coloured vegetables for a snack. 💚 Leaf lettuce - besides salads, lettuce works great as a low carb wrap, as well as in spring rolls, smoothies, curries and even cream soups 💚 Radicchio - the slightly bitter taste of radicchio lettuce makes it a sophisticated addition to grain salads; or you can cut it into wedges and roast with olive oil and sea salt 💚 Celery - it goes surprisingly well with raisins, in dishes such as caponata. Fried with onions and carrots it makes a nutritious soffritò 💚 Radishes - marinate radish slices in vinegar and sugar for quick pickles, roast them whole with garlic or enjoy as a crunchy addition to ramen. Don’t forget to use the green parts of the radish for a delicious pesto 💚 Cucumbers - early spring cucumbers are sweet and juicy, perfect for spiralising into noodles with sesame seeds, or turning into a cold soup for a refreshing starter 💚 Avocado - if you like guacamole, you’ll love avocado hummus and creamy vegan mayo.
