Let me tell you about my new favourite cookbook

Hey tumblr. Are you trying to learn to cook for yourself? I sure am. My roommate just got me this book and I am totally blown away — it’s an entire cooking course in one book easy and accessible, taking you from following recipes to making up your own by teaching you the science behind it all. Do you love science? I love science. I especially love DIAGRAMS!

You can’t quite see it, but this tells you not just what parts to eat, but how to prepare it. I’m always in grocery stores staring at veg going “okay but what do I DO with it?” and this book actually answers that in clear, simple language and beautiful watercolours.

What’s the difference when recipes call for different types of frying? Hey, I guess I know now!

Illustrations instead of photos encourage you to play around instead of trying to get the exact same result.
Samin Nosrat, the author, is incredibly personable along with being a great writer and chef. The prose parts of the book are clearly worded and full of personality. It explains details of cooking that lots of other cookbooks leave out, meaning a intermediate cook like me can actually grasp skills like breaking down a whole chicken or getting the heart out of fresh artichokes. 
The first half of the book is meant to be read straight through and explains the theory behind the elements of food in a casual writing style. Then it has 100 recipes that are meant to teach you all the basic skills and are a jumping-off point, because what she really wants you to do is EXPERIMENT! I can’t wait to eat a bunch of this stuff.
I don’t know about you, but I failed to learn cooking from my mom even though she’s a great cook. I regret it now and want to learn to be comfortable in the kitchen, because I love eating and I want to take back control of the food I eat. When I got this book, the first random page I flipped to had a matrix explaining what works well with avocado. I knew right away it was going to be my kind of book. (I ended up staying up late reading it.)
So if you’re also trying to learn to cook, to take back control of what you eat, want a really pretty illustrated cookbook, whatever — I can’t recommend this enough.

More troll headcanons under readmore because I can't stop ever (Please do not tag as helmsman)
- Been thinking about how the cancer symbol on Alternia really only comes into existence after the execution of the Signless (when he becomes known as the Sufferer) and so what symbols would the folks who follow the Signless have on their body during the time of the Signless, I decided to settle on the concept of red paint that signifies their willingness to assist others
- This stands out in my head thinking about how other trolls wear bright red all the time, so it really wouldn't be a tremendous leap or an immediate giveaway, but having it in certain placements on the body would be something that was only really something that the Signless' followers would know to do and therefor be doing
- The symbols I chose were related to my other interpretations of troll lore but mostly relate to:
- Red on the tops of horns so they're visible to others even in crowded public spaces - Dots on the corners of the mouth to mimic the Signless' little grub scar colorations (as described here) and red on the palms of the hands to mimic the way the Signless listens to people with his hands outstretched (talked about here a bit)

(I was just going to reply to the initial post but I ran out of character space, and then I saw this in the reblogs and it dovetails nicely with my thoughts)
One of the things Azula literally says during Sozin's Comet is, "You can't treat me like this! You can't treat me like Zuko!" So you are spot-on, OP, she absolutely knows that the second she falls short of Ozai's expectations, she runs the risk of experiencing the same things she witnessed Zuko experience, and she knows she doesn't want that outcome.
I think what's particularly interesting about that line though, is that in her eyes she *didn't* fall short, she did everything her father asked for and more (conquering Ba Sing Se was a side-quest she embarked on while following through on her given task of hunting down her brother and uncle). So his dismissal of her doesn't make any sense, and it isn't until he engages in the flattery above that she can calm down and settle into what has become the norm. Azula cracking after Ozai sends shockwaves through her worldview (one where she has succeeded in securing their father's approval and is safe from the negative treatment she sees affect and perpetuates to Zuko) is that much more understandable.
Let’s talk about Azula & Ozai’s psychological abuse for a second. (Part 1)
Quick recap: I recently had the opportunity to visit the Writer’s Guild of America (WGA). It was so fascinating to see how scripts are written, better understand the explicit motivations of certain characters and scenes, and the way the quality of an episode translates from pre-production to air time. I already have a lot of thoughts on the scripts I got my hands on (mostly Avatar) that I’ll be unrolling, and I’m hoping to return to gather some thoughts on BoJack Horseman (I ran out of time within the opening times of the library because apparently 7 hours is not enough).
There was a lot of work on the ATLA writing team’s part that I found admirable and a lot that I found… less so. I will address both in time (as this post will)—but I want to start with the worst thing I found.
(S3E20, Sozin’s Comet: Avatar Aang, written by Mike DiMartino & Bryan Konietzko)
The ensnared Azula thrashes like a feral animal, breathing fire in desperation. Katara helps Zuko stand and they walk over to where Azula is tethered.
As Katara and Zuko watch with pained faces, Azula finally snaps, going from feral animal to bumbling crazy person.
AZULA: (WILD SCREAMS INTO PATHETIC BUMBLING AND CRYING)
(Emphasis is mine)
There’s a lot to unpack here—the way Bryke never sympathize with Azula’s pain and trauma here or even attempt to POV her internal dialogue for a sentence, the way their comparisons dehumanize her tragically human emotions, how the descriptions “feral animal” and “bumbling crazy person” are misogynistic, ableist, and horrific as fuck. But keep this all on hold as we take a step back and talk about Ozai.

This is still something I wholeheartedly believe, by the by. The only member of that family absolutely beyond any sort of redemption is Ozai.
Reminder that Ozai is the one responsible for the abuse and neglect of both of his children and that Ursa didn't "create a monster" by attempting to undo a narcissistic abusers conditioning and failing.
Don't blame Ursa for Ozai's abuse kthxbye.

I know people think of Shrek as "just a meme musical" but it's so much more than that, and this song is one of the reasons why (even if it leans a little heavy on the bodily function humor by the end).
Here we have two characters who are not seeing eye to eye, and who think they are polar opposites, realize they have more in common than either could have imagined. By finding each other after both being told they weren't wanted, they have a chance at healing.
What starts as a competition over who had it worse turns into both of them finding common ground and actually getting to know each other for real.
True romance is being able to be your complete self with your partner, a message I believe this musical wholeheartedly embraces.

I'll put in some propaganda for Lily's Eyes since it doesn't have any yet but OP I hope you know this match-up breaks my heart because of how much I adore both songs and shows (they are both in my top five all time favorite shows ever).
ANYWAY. Lily's Eyes is a beautiful and haunting duet sung between two brothers about their love for the late Lily Craven, but they aren't singing it to each other which is what makes it so brilliant. It's a song of both triumph and unrequited love and the layering of the two voice parts (Mandy Patinkin's soaring tenor with Robert Westenberg's resonant baritone) is stunning. It's here we learn about the antagonist's motivation, it's here that Mary Lennox's presence really starts to affect the rest of the household. It's a sort of reprieve from the chaotic storms enveloping the plot at this point in the story, and it is packed with *so much emotion*.

Ragtime is probably not that well known, but this truly is one of the best duets.
Audra McDonald and Brian Stokes Mitchell are both legends of musical theatre.
The song is lyrical, soaring, and has beautiful emotional peaks.

I'm going to need y'all to preemptively chill out because the actor's strike is going to mean a lot of things including shows and movies we've been anticipating being pushed way back, and absolutely minimal press tours for the next however long this lasts.
The effects of the writer's strike are months down the road which made it a whole lot easier to support because as third parties we weren't really being affected (yet), the effect of the actor's strike is going to be immediate and we're going to get a lot more propaganda of "these people are overpaid to begin with."
Remember our desire for content does not supersede these people's rights to live.
Support unions, support the strikes.
