Made a new recipe tonight and will make this as a regular rotation. Yummy and fairly easy. Didn’t take a good picture, but these are the leftovers. I used only 1/2 lb shrimp for two of us. But I didn’t cut the other ingredients in half. I cut the orzo and broth a bit. I used spinach for the veggie. I used extra lemon as I like it lemony. I think next time I would use asparagus and spinach for more veggies.

I think it was on the Today Show that I saw a sausage roll recipe and though that’s not a very healthy meal I couldn’t get it out of my mind. I love puff pastry (the Pepperidge Farm frozen kind). So I went with it and I made a dessert out of it also with fresh berries.
I thought the sausage roll was good but would only make it again as an appetizer. It’s not a good dinner. It’s just too much. One or two little bites would be good with fancy mustard. It was easy though.
Just mix the sausage with onions and breadcrumbs and roll it into a log, put it in the puff pastry and use egg wash to get the pastry to stick. Also use egg wash on the edges. I baked at 375 for 45 minutes.
For the berry dessert, I added brown sugar, cinnamon and cornstarch to cut strawberries and blueberries. I mixed that all up and plopped it all down on the pastry, flipped up the sides and covered with egg wash. I baked at 400 for 20 minutes.

This was pretty good, not quite as flavorful as I expected with all the seasonings so I might add a little more next time. But it also made excellent chicken tacos the next night. Love to get two meals out of one nights effort. Would definitely try again. I forgot to take a picture of the finished product. Next time.

Yummy garden vegetable soup. Healthy and satisfying. I halved the recipe, used frozen corn and frozen peas, but otherwise followed the recipe. Highly recommend and you can make so many substitutions if you don’t have all the ingredients.

My neighbor brought me these beautiful beef wontons. Oh my gosh they were so delicious. She told me to boil them for 3 minutes and then pan fry until golden. Perfection. I have no idea how to make them. I’ll hope she brings me more one day 😂

This warm cauliflower salad was my favorite new recipe from Thanksgiving. The char on the roasted cauliflower with the sweetness from the dates, the crunch from the pistachios and the tang from the vinaigrette was a great combo.

When you have lemons 🍋 make lemonade and give lots away. Easy lemonade recipe.
Juice 6 lemons and refrigerate it.
Make simple syrup with 1 cup water and 1 cup sugar. Simmer till sugar dissolves. Refrigerate it.
In a pitcher add 5-6 cups water, the lemon juice and the simple syrup to taste. Mix well. I used about half the syrup and stored the rest in the fridge.
For strawberry lemonade, purée strawberries blended with a bit of the lemon juice. My strawberries were frozen. I add about a teaspoon of the purée to a small glass of lemonade.

I didn’t get pretty pictures, but this rack of lamb was superb. We bought 2 racks at Costco and couldn’t have gotten better quality. Ina’s recipe is perfection down to the number of minutes to cook for medium rare. An easy recipe that makes an exquisite meal. I did cut back on the salt after reading several reviews.

Made a yummy beef stew tonight from The NY Times. Pictures below show the ingredients and directions.

I made a few changes. First I used a combo of veggie and chicken “better than bouillon” and used 2 cups total not 3 1/2. It worked great. I used 2 large carrots not 5 and there were plenty of carrots. I carmelized the onions while the beef was simmering in the broth and added minced garlic to it and a touch of tomato paste. I added thyme and oregano to the broth mixture. I didn’t cook the meat as long as it stated but cooked it longer once the veggies were added. It’s all about using your judgment and it’s very forgiving. The red wine really added a nice flavor. It was delicious.

A friend gave me about 20 unripened pears from her yard and told me to put them in a paper bag to ripen. After a full week about 5 were perfectly ripe so I made a small pear crumble or crisp.
I left the skin on and cut the pears in thin slices. I sprinkled the pears with a touch of lemon juice. I added nothing else to the pears.
For the topping I pulled out my Smitten Kitchen cookbook and adjusted the topping that she has for an apple crumble. I mixed about 3 tbl of melted butter, a pinch of salt and cinnamon, 1/4 c brown sugar, 1/4 c flour and 1/4 c oats. I sprinkled the topping on the pears.
I baked at 400 for 20 minutes, then at 375 for another 7-8 minutes. It’s perfect.

What to do when you have a taco truck party with 40-50 people and you have tons of leftover limes and cilantro: Make lime cilantro chicken and lime cilantro rice! Both these recipes turned out really good. We used the outside grill for the chicken but otherwise followed the directions. The 1/2 cup of lime juice required about 10 limes so it really used up a good amount of leftovers. I zested the first 3 or 4 limes to assure I had enough zest for both the chicken and rice. Really tasty!
