In conclusion, oat milk and an extra tablespoon of butter in place of whole milk does work for this quick bread recipe. No discernible difference in taste or texture. With so much butter and half a cup of sour cream, I guess it’s going to be decadent no matter what!

Baked loaf of quick still in its tin

Huzzah! My bread still rose! So far things are promising for the oat milk gambit!

In the continuing comedy of errors that is today’s bake, I also failed to noticed that I was out of milk - dairy milk, anyway. So today’s experiment is whether or not using oat milk and an extra tablespoon of butter to make up for the lost fat will work as a substitute for whole milk in this quick bread recipe. I’m 90% sure that it’s the sour cream that has the chemical reaction with the baking powder in this recipe to cause the loaf to rise. Guess I’ll find out soon. Fingers crossed!

second-rise-baker:

Welp, yesterday I totally forgot to check if I had any fresh garlic, and the answer is…

A very dried out bulb of garlic

…nope. This is some very mummified garlic. So I guess I’m using powdered garlic (which I DO have - I checked this time).

Or not. How did I miss this?!? It was dead center on the counter!

Hey! I like your blog. I was just wondering if you could please add some image descriptions to your photos or caption them in some way. I would really help me and other visually impaired people so they can enjoy your blog too! Have a great day!

Hello! I’m really glad to hear you like my blog. I will definitely figure out some sort of image description or caption system for posts from here on out and will do my best to go through my old posts as I have time and do the same with them. Thank you so much for bringing this to my attention! You have a great day as well!

I want to baaaaaake… but that would involve not being face-planted on my bed. (It’s been a long week.) Maybe I can make some quick bread tomorrow since I have the day off…. I just need to pick up some sour cream and shredded sharp cheddar.

…wait a minute.

…I work in a grocery store.

…WHY DIDN’T I PICK UP SOUR CREAM AND CHEDDAR AFTER I CLOCKED OUT TODAY?!?

Did someone try to get away with underworking their dough and get punished for it by the baking gods?

Yes. Yes, someone did.

(Still delicious, though.)

Today is a two part experiment. 1) I’m trying out making a braided loaf for the first time. 2) Taking my normal teacake recipe and using it to make a loaf instead of buns. I’m very excited!

Spiced Teacakes Part 1

I refound my spiced teacake recipe! It’s been missing for months! Yay! Today’s adventure is going to be finding out how using half and half instead of milk affects the rising/baking… (we were out of milk).

The orange zest and spices smell so gooooood!

Flour Tortillas

So I’ve got two big takeaways from making tortillas.

1) Homemade tortillas are much more delicious than store bought ones.

2) Do NOT attempt to make tortillas and whatever you plan to fill them with at the same time. Especially if you only have three working burners on your stove top. You will run out of burners. (Also, if the recipe tells you that the tortillas are quick to roll out, it’s lying to you.)

second-rise-baker:

So tomorrow I need to finish renewing my passport and maybe do my taxes but all I can think about is whether I can fit in making fresh flour tortillas as well.

You know what, fuck adulting. I’m making tortillas tomorrow. I’m too tired to do paperwork, and I want to bake.

Well, it’s pulling away from the sides slightly and the skewer is coming out clean. …I think I’ve made a cake.
