Lemony Kale Salad with Crispy Parma Ham
I love crispy parma ham, they are like the best crisps ever I could eat a whole bag if they were. Its great as you can just pop them in the air fryer. We all know kale is good for us but im not keen just having it on its own (unless its kale crisps). The lemon works so well with the earthiness of the kale. It lifts everything up. Massaging the kale also makes a massive difference, the texture is…

Moroccan Ras El Hanout Chorizo and Chickpea Salad
I had some ras el hanout in the back of the cupboard and thought I better use it for something. As it’s Middle Eastern chickpeas came to mind and I thought I’d do a tasty salad. This salad was amazing! The spicy chorizo, warming spices and zingy preserved lemon. I am also addicted to semi dried tomatoes at the moment as they are so sweet. I could eat a pot on my own. Ingredients (serves 2) For…

Roasted Pistachio and Herb Crusted Lamb Rack
Lamb rack is such a treat for me so I wanted to make sure I made it as tasty as possible. I remember having a macadamia crusted lamb chop which was delicious. I used pistachio for mine and dried herbs. I love pepper so I added a good amount of this too. Using mustard as your ‘glue’ adds a really nice extra flavour too. This was juicy, tender and absolutely delicious. I had mine with some red wine…

Pan fried Halibut with a Shrimp, Caper, Lemon and Butter Sauce
Halibut is defo one of my favourite fishes and as it is a flat fish the flavour is beautiful and delicate. It is so meaty and as it is a large flat fish you get a really decent fillet. As it’s not the cheapest fish in the world I do go all out. So drenching it in beautiful butter and shrimps is perfect. Jerusalem artichoke are in season at the moment and the make the most silky smooth puree and…

Squash Gnocchi with Black Pudding, Mushroom and Kale
Sometimes you just fancy a quick one pan dinner that is still really tasty. This is just that. These were ingredients I had knocking about in the fridge from a fry up and salad. They all worked really well together and it was delicious. Instead of black pudding you could use sausage as black pudding is like marmite, you either love it or hate. Ingredients (serves 2) 20 squash gnocchi , recipe…

Crab and Avocado Toasts
So we took the dogs to the coast for their walkies and every time we go down we treat ourselves to a fresh crab as I love them so much. This was our brunch the next day it was so delicious. I really like a mixture of brown and white meat as I think it has more flavour and creaminess. It felt like a posh indulgent brunch and it was! Very tasty! Ingredients (serves 2) For the crab 1 fresh…

BLT Salad with Pecans and a Mustard Dressing
I love bacon, lettuce and tomato. As it’s winter I decided to use sun dried tomatoes instead of fresh and added some pecans for some crunch. It’s a slightly odd combination but was very yummy none the less. The mustard dressing made it nice and zingy. Ingredients (serves 2) For the Salad 4 slices streaky bacon 1 romaine lettuce, chopped 4 sun dried tomatoes, roughly chopped 12 pecans 2…

Venison Loin with a Red Wine and Juniper Sauce Served with Roasted Carrots and Parsnips
This was a treat. I didn’t get into game until later on in life, but I love it now. Venison is my favourite and this has a much deeper flavour than fillet steak though I do love that too. To make it really comforting and wintery I served it with roasted vegetables and a rich warming thick juniper gravy, they are like a fruity peppercorns in taste and work perfectly with venison. Ingredients…
