Heart clogging mashed potatoes. 
Red potatoes (5 pounds), Butter (1¼ pounds), Sour cream (14 ounces), Heavy cream (8 ounces), Salt & pepper (dash). Cut potatoes and boil in salted water until tender. Grate cheese. Mash potatoes with sour cream, heavy cream, butter, salt & pepper.

Sweet and spicy skewered shrimp. 
Shrimp (2 lbs., 16/20 sized), Tomato Paste (14 oz.), White Sugar (1 cup), Cilantro (½ bunch), Kosher salt (Dash), Thai Chili Garlic Sauce (8 oz.), Red chili flakes (Dash), Rice Vinegar (1 cup), Olive oil (½ cup). 
Whisk all ingredients together. Peel shrimp and marinade in sauce. Grill.

Grilled New York Strip Steaks With Herb Butter. 
New York Strips (8), Montreal Steak Seasoning (Dash), Butter (1/2 lbs.), Green Onion (1 bunch), Garlic (4-5 cloves), Basil (1/2 bunch). 
Crush garlic and add to saucepan with butter, chopped green onion and chopped basil. Pour butter into a container and freeze for at least 4 hours. Season steaks with steak seasoning and grill. When nearly finished top with herb butter.

Grilled chicken skewers in a brown sugar sherry marinade. Chicken Breasts (3), Sherry (½ cup), Worcestershire sauce (½ cup), Hot sauce (2 tablespoons), Brown sugar (2 cups), Sea salt (dash), Olive oil (½ cup). Slice chicken into cubes. Whisk olive oil, sherry, Worcestershire & hot sauce and pour over chicken. Top with brown sugar & sherry. Marinade for 45 minutes to an hour. Skewer and grill.
Parmesan mayonnaise. Mayonnaise (2 cups), Parmesan cheese (1 cup), Montreal steak seasoning (dash). Whisk mayonnaise with parmesan cheese and garlic pepper.

Shrimp Cocktail. 
Shrimp (2 lbs. 16/20), Old Bay Seasoning (Dash), Beer (12 oz), Water (32 oz.), Onion (1/2), Lemon (1/2), Celery (1), Garlic (1/2), Ketchup (1 cup), Horseradish (1/2 cup), Worcestershire Sauce (Dash), Lemon Juice (1). 
Bring water and beer to boil; add celery, lemon, garlic, onion and old bay.  Drop shrimp into boiling broth until they turn pink (about 2-3 minutes). Immediately run under cold water and then chill. Make cocktail: mix ketchup, Worcestershire, horseradish & lemon juice.

Personal Pan Pizza (Sauce on Top or Buffalo). 
Pizza Dough (1 Large), Mozzarella (1 lbs.), Tomato sauce (8 oz.), Parmesan cheese (Dash), Kosher Salt (Dash), Black Pepper (Dash), Red Chili Flakes (Dash), Ranch dressing (1/2 cup), Hot Sauce (Dash), Garlic Powder (Dash). 
Preheat oven to 400. Cut dough in half and roll into two pizzas. Place in greased pan. Top one pizza with cheese, then sauce and season with salt, pepper and red chili flakes. Top other pizza with cheese then garlic powder, ranch, and hot sauce. Bake until bubbly (about 15 minutes).

Philly special braised beef cheesesteak with fontina sauce & bacon sautéed onions. 
Braised Beef. Beef roast (4-5 lbs.), Beef broth (2 cups), Worcestershire sauce (¼ cup), Soy sauce (2-3 tbls), Hot sauce (2-3 tbls.), Montreal steak seasoning (dash), Vidalia onion (½), Garlic (2-3 cloves), Kosher salt (dash), Black pepper (dash), Balsamic Vinegar (1/2 cup), Honey (1/2 cup). Italian Sandwich Rolls (12). Preheat oven to 350 degrees. Chop onion & garlic and begin to sauté in Dutch oven. Season meat with salt, pepper & Montreal steak seasoning, add to pot. Add liquids. Cover with lid, bake for 4-5 hours. 
Fontina Cheese Sauce. Fontina Cheese (1 lbs.), American Cheese (1 lbs.), Half & Half (1 pint). In double boiler combine all ingredients and stir until smooth. 
Bacon Onion Confit. Vidalia Onion (2), Bacon (4 strips). Cut bacon in half. Chop onion. Sautee all until bacon is completely cooked then remove bacon. Season onions with salt. Assemble sandwich. Slice rolls. Add meat, then onions then cheese.

Tavern Ham (1 lbs.), Swiss Cheese (1 lbs.), Ketchup (1/4 cup), Mayonnaise (1 cup), Relish (1/4 cup), Cabbage (1/2), White vinegar (2 tbls), Kosher salt (Dash), Black Pepper (Dash), Kaiser rolls (8). 
Make dressing: mix ketchup, mayonnaise & relish. Make Sauerkraut: chop cabbage and sauté in pan with vinegar, salt & pepper. Preheat oven to 350. Top ham with cheese and place in oven until melted. Assemble sandwich: Spread dressing on rolls then add hot ham & cheese and top with kraut. Serve.

Grilled Vegetable & Hummus Wraps. 
Zucchini (1), Red Bell Pepper (1), Green Onion (1 bunch), Red Onion (1), Feta cheese (1 cup), Thyme (1/4 bunch), Cracked black pepper (Dash), Watercress (2 cups), Spinach Wraps (4-5), Chick peas (24 ounces), Sesame oil (2 ounces), Lemon (2), Olive oil (1 cup), Garlic (4 cloves), Cumin (dash), Paprika (dash), Salt & pepper (dash). 
Make Hummus: Mix  garlic, chic peas, sesame oil, olive oil, cumin, paprika, and olive oil in food processor until smooth. If too clumpy add more olive oil. Mix with lemon juice and spices. 
Make grilled vegetables: Slice peppers, zucchini, red onion & green onion and grill; then julienne. Toss with feta, black pepper, and thyme. 
Assemble sandwich: Spread hummus on wrap, top with vegetables and watercress. Roll like an eggroll.

Southwest eggrolls with cilantro lime dipping sauce. 
Eggrolls. Eggroll Wrapper (16), Peanut Oil (2 cups), Water (1 oz.), Cooked Chicken (2 cups), Corn (1 cup), Cilantro (2 tbls.), Red Bell pepper (1/4 cup), Jalapeno (1), Lime (1), Tomatoes (1), Garlic (1-2 cloves), Pepper jack cheese (8 slices). 
Cook chicken. Finely cut vegetables and chicken, squeeze lime juice. Lay out eggroll wrapper and brush with water. Top with cheese. Top with 1-2 tbls mix and roll like cigar. Place into second wrapper and roll again so its double rapper. Deep fry or bake (375 degrees). Dipping Sauce. Sour Cream (8 oz.), Mayonnaise (8 oz.), Thyme (Dash), Cilantro (Dash), Lime (1 tbls.), Adobo Seasoning (Dash), Milk (1 tbls.), Hot Sauce (Dash). Chop adobo & thyme; whisk all ingredients.
