21-DAY RAW VEGAN CHALLENGE! Woah, I’ve had a crazy amount of traveling in 2019 with Perth, Melbourne, London, Brighton, France, Singapore, Hong Kong, Macau and back to Singapore so I’m glad I’m staying put in Kuala Lumpur, Malaysia for the month of October😅 (there might be possible travel plans in November!) . Since I’m back in my kitchen, I’ve decided to embark on this 21-day raw vegan challenge where I have at least one fully raw vegan meal a day. I’m using Fully Raw Kristina’s 21-day challenge as a reference and guide. Here’s what I had today! 💚💚💚 DAY 1: SWEET PINK SMOOTHIE I changed some of the ingredients based on what I could buy and also try to make it as local as possible. This one tasted great even with the substitutions INGREDIENTS: Half of one pineapple, cubed 1 dragon fruit 2 small navel oranges 2 cups filtered water . METHOD: • Blend all ingredients in a blender. (I used my @thermomixmalaysia ) • Pour into those mason jars with a handle which used to be all over IG, and of course, use a bamboo straw😁 • Sit on the balcony and enjoy slowly! 😋 🍹🍹🍹 Who else wants to join me in this challenge? PROS + CONS + ADVICE

PROS:
Flexibility - It’s designed for you to tailor it to your own needs and budget. 
IT ACTUALLY WORKS!  We saved $80 in one week.
It’s healthy - We used the bulk of our $30 on fruit and veggies, and everything was homemade, so no pre-packaged, processed stuff.
Less wastage - We used up heaps of stuff from the pantry that maybe would never have used and would eventually just end up throwing out.
The challenge made me reflect on how much we spend on food every week vs how much we actually need.
CONS:
You have to have a pretty well-stocked pantry to begin with.  I did heaps of baking so lucky we had a massive bag of flour and lots of baking ingredients already.
I honestly don’t think you could do it here in NZ on just $21….maybe if you’re a single person doing it alone.  Food prices have gone up SO much since this book was published.
I had to be super super organised!  Plan out all of your meals and snacks.
It takes a lot of time.  Sometimes I felt like all I was doing was cooking and cleaning up… but it was totally worth it.
ADVICE:
Meal Plan & Meal Prep!!  Make sure you’re organised, plan the F out of your week!
Maybe spend a whole day ,meal prepping for the week so you don’t feel overwhelmed throughout the week.
Have HEAPS of snacks ready to roll!!!  Cut up carrots, veggies and fruit.  Lots of baking.  Use up dried fruit, nuts and seeds by making up your own little bags of trail mix.  Popcorn was a winner for us - old school, plain, made in a pot.
It’s easier if your family is behind you 100%  Their support does make a difference because it can be quite challenging trying to please everyone’s tastes.  My husband said half way through the week that we’ve never eaten better, that made me feel really good and helped keep up the momentum to finish the week out.

Day 04 - Pizza Pizza Pizza

These pizza’s totally made up for my epic fail of a dinner last night!  
The dough is one of the best parts, is so easy to make and so so so much better than store brought pizza bases.  My favourite pizza dough recipe is by NZ chef Annabel Langbein (her recipe for Louise Cake is also the BEST!) Here’s the link to the pizza dough recipe:

I doubled the recipe and split the dough up into 8.  I made 3 pizzas (enough for dinner and plenty of leftovers for lunch tomorrow).  I wrapped up the remaining 5 balls of dough with clingfilm and put them in the freezer for whenever we feel like pizza next.
Pizza Tips: Pre-heat the pizza stone or oven tray so the dough goes straight onto a hot surface, then work quickly to add your toppings and get it in the oven. I used 1 chicken breast for 3 large pizzas - poached it in water first then shredded it up with a fork. Pre-cook the sliced onions in a pan with a little oil - this makes them super soft and sweet on the pizza. We use colby cheese - and not too much, about 1/2C of grated cheese per pizza. Sometimes less is more - don’t overload the pizza with too many toppings.
My Fav Pizza Toppings: Cranberry Sauce - Onions (pre-cooked) - Spinach - Mushrooms - Shredded Chicken - Cheese
Husbands Fav Pizza Toppings: Tomato Paste - Oregano - Basil - Onions (pre-cooked) - Tomato Slices - Spinach - Mushrooms - Shredded Chicken - Cheese
