Oxenfree II Arroz con Pollo
Ingredients
Green/red peppers One Yellow Onion 8 cloves of garlic 1 8 oz can of tomato sauce 1 32 oz container of chicken broth One Bay Leaf 2 tsp of dried oregano 2 tsp of cumin 2 tsp of kosher salt 1/2 tsp of black pepper 1/2 cup of frozen baby peas 1 1/2 of white cooking wine Splash of lime juice 3 1/2 cups Parboiled rice 1/2 tsp ground anatto (replacement for saffron) 8 Boneless Skinless Chicken Thighs
Instructions
Put olive oil in large frying pan Season chicken lightly with salt, pepper, and a bit of cumin Cook chicken on each side till thighs brown, usually ~5 minutes on each side Remove chicken Add a splash of olive oil and saute onions and peppers When onion is translucent, add smashed garlic and cook for 2-3 minutes, stirring frequently. Turn off heat.
***Before cooking chicken in veggies***
In a large pot, combine chicken broth, white cooking wine, tomato sauce, and splashes of white vinegar, lime, and all seasonings.
Add to Pot
Now add chicken and vegetables to pot and bring to rolling boil. Once at boil, cover and reduce heat to low for 15 minutes. Add rice and bring to boil again. After boil reduce heat to medium-low (favoring low) After rice has absorbed some liquid (about 2 minutes) bring down to proper low and cover. Simmer on low for 30-40 minutes or until rice is fully cooked. Add frozen peas during last 5 minutes of cooking.

ARROZ MULTICOLOR
Confieso que es una tarea ardua preparar este arroz, pero vale la pena, cuando los prepares todo mundo te preguntara por la receta.
Te explico como lo prepara el ChefShaka y no se usan colorantes artificiales.
❤️ Para el arroz rojo
1 taza de arroz
Licuar en 2 tazas de caldo de pollo 1 remolacha y 1 ajo, colar y usar el jugo para cocer el arroz.
1 cucharada de aceite
💛Para el arroz amarillo:
1 taza de arroz
Licuar en 2 tazas de caldo de pollo, 1 ajo y 1 cucharadita de cúrcuma, colar y usar el jugo para cocer el arroz.
1 cucharada de aceite
💚 Para el arroz verde el arroz de espinacas:
1 taza de arroz
Licuar en 2 tazas de caldo de pollo, 1 ajo, 1 taza de espinacas, colar y usar el jugo para cocer el arroz.
1 cucharada de aceite
🤍 Para el arroz blanco
1 taza de arroz
1.5 tazas de agua
1 cucharada de aceite
Preparación del arroz, aplica para todos los sabores:
En una olla pequeña, calentar la cucharada de aceite a fuego medio, freír el arroz 1 minuto, agregar el líquido (rojo, amarillo, verde, agua) al primer hervor bajar el fuego al mínimo extremo, tapar y dejar por 12 minutos, apagar el fuego y deje reposar por 5 minutos sin destapar. Este paso hay que repetirlo con cada sabor o si tiene 4 ollas puede hacerlo en paralelo.
Cuando estén los 4 arroces cocinados y fríos desgranarlos o desmoronarlos y mezclar los 4 sabores en un recipiente, recaliente el arroz ya mezclado en el microondas antes servir.

24 June: lunch in Bilbao.
the food was amazing here (but once again I don't remember the name of the restaurant, I apologize). however, it was the most confusing dining experience we had on this trip.
there was no menu. the waitress simply recited the options for us to choose from. I was so flustered (and tired and starving after a hike) that I forgot every Spanish word for food things. but we apparently ordered two courses and dessert. I heard "arroz", "ensalada", & "salmón" and said "sí" to those options. Then I heard "flan" and said "sí" again. I was so estrés.
but when the food came out, //amazing//. Our arroz and ensalada appetizers were rather filling, but then the salmón steaks followed y ¡qué delicioso! I didn't get a picture of the salmon apparently but trust it looked like a salmon steak and was also delicious. and THEN the FLAN. god I love flan. I was so full, not only of food but also of happiness. ((and a bit of embarrassment from being too confused to order properly in Spanish but WHY WAS THERE NO PRINTED MENU?? did not encounter that anywhere else so it threw me for a l00p))
12/10, would be a 15/10 but points off for lacking an actual menu

ARROZ GUATEMALTECO
Ingredientes para el arroz
1 libra de arroz
1 chile pimiento
1 cebolla pequeña
2 zanahorias medianas
2 dientes de ajo
4 tazas de agua caliente
Aceite
Sal
Preparación:
Lavar el arroz y dejarlo escurrir.
Cortar el chile pimiento, la cebolla y zanahoria en corte sesgado.
Picar el ajo.
En una olla coloque aceite para freír el arroz, ajo, cebolla y chile pimiento; revolver con una paleta de madera. Cuando el arroz y los vegetales ya estén fritos agregar el agua y sal al gusto. Revolver y tapar la olla. Cocinar a fuego bajo hasta que el arroz esté cocido.
QUICHOM GUATEMALTECO
Ingredientes para el recado
2 libras de pollo cortado en piezas
3 libras de tomate
3 chiles pimiento sin semillas
1 cabeza de ajo (grande)
1 cebolla grande
2 chiles guaque sin semillas
2 chiles pasa sin semillas
1 raja de canela (pequeña)
5 pimientas castilla
2 clavos de olor
2 pan francés tostados
Aceite
Sal al gusto
1 taza de agua
Preparación:
En un sartén a fuego bajo asar los tomates, el chile pimiento cortado en trozos grandes, los ajos, la cebolla cortada en trozos grandes, los chiles guaque, los chiles pasa, la canela, los clavos de olor, las pimientas castilla. Cuidar que los ingredientes no se quemen, solo que estén asados
En una olla grande colocar un poco de aceite y freír el pollo por ambos lados, agregar la taza de agua y sal al gusto; dejarlo hervir por algunos minutos para que el pollo pueda absorber un poco de sal.
Dividir en dos o tres grupos los tomates, chile pimiento, ajos, cebolla, chiles guaque, chiles pasa, canela, clavos de olor, pimientas castilla y el pan francés.
En el vaso de la licuadora colocar cada grupo de ingredientes, licuar hasta que los ingredientes estén muy finos, si la mezcla está muy espesa agregarle un poco de agua, no mucha agua porque la salsa debe estar espesa.
Colocar esta mezcla en la olla donde está el pollo, revolver con una paleta de madera, agregar sal al gusto y dejar hervir a fuego bajo hasta que el pollo esté completamente cocido.  
Servir acompañado de arroz.
