Basil and Garlic Cream

This fragrant and herb-y Basil and Garlic Cream makes an excellent sauce for pasta, cooked al dente, just drained and folded into it, for a lunch that literally tastes like Spring. It can also be the base of salads or gratins, depending on the season's changing weather!
Ingredients (makes about 1/3 cup):
a small garlic clove
a dozen large leaves Garden Basil 
a pinch of salt and freshly cracked black pepper
1/2 tablespoon olive oil
1/3 cup crème fraîche or sour cream
Peel and halve garlic clove. Add to a mortar, and grind into a pulp with a pestle.
Tear Basil leaves into the mortar, and thoroughly grind them with the garlic into a paste. Season with salt and black pepper.
Gradually stir in olive oil, until mixture emulsifies. Then, stir in crème fraîche until well-blended.
Fold Basil and Garlic Cream into al dente pasta, or use as a base for a salad dressing or in gratins, loaves or quiches...

Took the free shuttle bus to Sembawang Shopping Centre to do some grocery shopping and for dinner. Headed down the travelator to Saizeriya (サイゼリヤ) located at the basement for our meal. Order the Nacho Bacon Potato (S$3.90) appetizer for sharing between the two of us. Wedges of potato smothered with nacho cheese sauce and bits of bacons are just so yummy.

Mum had the Black Pepper Chicken Spaghetti (S$5.90) which came with cubes of grilled chicken in black pepper sauce. Portion wise, it is just the right amount for my mother as she is not a big eater.

I went for the thin crusted Mushroom & Bacon Pizza (S$7.90). The edge is crispy as I sliced through it with the provided pizza cutter. Nice amount of toppings with ample stringy cheese on a tomato-based sauce.

Lemon and Dill Monkfish

The delicate flesh of this beautiful Lemon and Dill Monkfish is beautifully fragrant with fresh herb and citrus, and generously coated in a Hollandaise blanket, making it a tasty lunch! Happy Friday!
Ingredients (serves 3):
half a large lemon
4 fluffy sprigs Garden Dill + more for garnish
2 litres/8 cups water
1 1/2 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
1/2 cup dry white wine (like Sauvignon Blanc)
a beautiful (about 395-gram/14-ounce) fresh monkfish tail
Dill and Schnapps Hollandaise, warmed, to serve
Cut lemon into slices, and add lemon slices to a large, deep skillet, wide enough to fit the fish. Add Dill sprigs and cover with the water.
Bring to the boil over medium-high heat, and cover with a lid. Allow to boil, for about 10 to 15 minutes, so the broth is fragrant. Season with coarse sea salt and black pepper.
Then, stir in Sauvignon Blanc, and lower the monkfish tail into the fragrant bath. Poach, about 10 to 12 minutes until cooked through.
Lift monkfish tail out of its court-bouillon, and drain before sitting onto serving tray. Drizzle generously with warm Dill and Schnapps Hollandaise, and garnish with reserved Dill sprigs.
Serve Lemon and Dill Monkfish immediately, with more Dill and Schnapps Hollandaise, steamed broccoli and a glass of chilled Sauvignon Blanc or other crisp white wine.
