MALDIVES COOKING COMPETITION: TROYE & VANESSA.
Vanessa and Troye put their heads together to create their best dish. Both being pretty decent around the kitchen, they'd say they succeeded. There's only one rule to this power duo: no meat, including seafood. APPETIZER: PUMPKIN SALAD.
To start off light and fresh, enjoy a pumpkin salad with flavor! Featuring grated coconut (no matter where you go in the Maldives, coconuts are one of the mainstays of their cuisine, leading the team to start and end with this prized ingredient), Maldivian spinach, lime dressing and pumpkin seeds.

ENRÉE: VEGAN MALAI KOFTA.
Malai Kofta, in short, is a dish that consists of fried dumplings made with potatoes and paneer (a fresh Indian cheese) that are swimming in a spiced, creamy golden gravy. Malai means “clotted cream” and kofta refers to meatballs, though most versions of Malai Kofta don’t contain meat. To substitute paneer, and most accurately replicate its texture, they use super-firm tofu (aka high-protein tofu). The meatball shape remains with the traditional potato dumpling. Other highlights include grounded cashews, toasted whole spices with sautéed aromatics, fresh tomato for the gravy base and a squeeze of lemon juice to balance out the heat.

DESSERT: VEGAN CHOCOLATE TART.
To finish off, their vegan chocolate tart is made with coconut milk instead of cream, uses almond powder instead of normal flour (making it gluten-free), maple syrup instead of sugar (so no refined sugars either) and Ayurvedic. The ultimate chocolate tart that doesn't require baking! They prepare a simple crust and chocolate/coconut ganache. The addition of powdered cardamom and cinnamon, two commonly used spices in Ayurveda, has a warming effect on the body, therefore promoting digestion. Ayurveda always encourages the use of spices for the healing effect that they have.

DRINKS: GREEN TEA CHILI LEMONADE, MIHIRI LEMONADE.
The duo creates two options: a spicy variation of an alcoholic lemonade, containing green tea, Brandy, fresh lime, and some chili. Secondly, a refreshing cocktail: a fruity take with fresh strawberries, aged rum, and vanilla liquor along with soda.

Spinning off from my question about Grima's favorite and least favorite foods, what about sweets? What sorts of pastries or candies do you think could be found in Rohan, and which ones do you think Grima likes best?

As usual, this got hecka long. (This is what happens when I answer on my desktop and not my phone.)
I love food and food history – it’s something I’m super keen on and love nattering on about, particularly as it relates to the medieval and early modern period. Though, for Rohan, we’re really talking late antiquity and early medieval in terms of time but ingredients in European cooking didn’t take a dynamic change until 1492 and the colonization of the Americas began.
I have a lot of thoughts about what Middle Earth has access to in terms of food products from the Americas – because clearly they got tobacco somehow. Also, apparently, tomatoes? And potatoes. Etc. (I know Tolkien has an answer to this but I’m still a little hmmmm/consistency check needed Tolkien about it.) 
My answer will generally work based on the assumption that Rohan has limited to no access to ingredients that are wholly and entirely native to the Americas. Because, as we know, Tolkien intended Rohan to be reminiscent of Anglo-Saxon England and early medieval Scandinavia so I tried to work at least vaguely within those parameters. (I know he was like: it’s Mercia! But I refuse to be hampered by a single kingdom that ranged from 6th to the 9th century because Tolkien didn’t limit himself either.)
my tl;dr is: Grima has a sweet-tooth and loves carbs and dairy products so he's all about them honey cakes and sweet cheese tarts.

Frist off - base ingredients that the average Rohirrim would be working with as sweeteners are honey, fruits, nuts (e.g., chestnuts, walnuts, almonds), herbs/spices, syrups/confits (fruit or cereal based – strawberry, for example) and cheeses/dairy products.
Pending Rohan’s climate and geography, they might have the correct maple trees for syrup tapping (i.e., sugar maple, red maple, and black maple), which would add an additional flavouring agent to their dessert foods. But I personally find that doubtful. The temperatures in spring need to range from -4 at night to around 6 or 7 in the day for a proper sugar tap and I don’t see Rohan getting that cold consistently enough to make it work.

For the wealthy, there might be access to sugarcane products (i.e., sugar, molasses, rum ;) etc.), but I just can’t get my head around Middle Earth having sugarcane. If they did, it’d be in lands controlled by Sauron so access would be limited during times of war. Therefore, Grima growing up would likely not have seen any white or brown sugar, if it existed.
Other things that would have been accessible more to the rich in Rohan than anyone else: cinnamon, cloves, allspice, cardamom, ginger, vanilla and other herbs, spices etc. that grow outside Rohan – and in regions, coincidentally, mostly controlled by Sauron and/or have rough trade relations with allies of Gondor.
As this is the case, most of the sweetening Grima would be familiar with would come from honey and fruit. His palate, like most in a late-antiquity and early medieval society, probably ran towards sour and tart. Our palates today, especially in the west, are incredibly sweet in comparison to what our ancestors were used to.
All fermenting was done with wild yeasts and that tends to give you more sour flavour profiles in your ales/beers, meads, and yogurts than the controlled approach to brewing and dairy products we have today. Meat and fish were often preserved via salting, vinegar, or with the sour dairy run-offs from the cheese and yogurt process.

All this said! Some deserts or sweet snacks Grima would likely be familiar with include, but are not limited to:
Sweet breads (e.g., gingerbread [for the wealthy, in 14th c England a pound of ginger cost the same as a sheep], apple loaf, honey load, nut bread etc.)
Fried breads (think beignets or zeppoli, but also proto-funnel cakes)
Fried, baked or stewed fruits
Sweet cheeses
Custards
Skyr/something similar
Honey
Candied fruits and nuts
Tarts and pies (a very wide range of tarts and pies existed)
Cakes (and there are a wide range of these, too, e.g., I’ve seen an early medieval cheesecake recipe)
Cookies or sweet biscuits
Fried figure-of-eight snacks (an early medieval pretzel, basically)
Fritters (so many fritters, so little time)
Sweet toasts i.e. toastee (most usually topped with spiced honey and available nuts)

For Grima – I firmly believe the man has a devil of a sweet-tooth and therefore likes any and all things put in front of him that are vaguely sweet in nature.
He’d have grown up on simpler versions of everything listed above – a lot of honey, orchard fruits (e.g., apple, pear, cherry, plum, quinces, medlars) and local berry flavourings (e.g., blackberry, blueberry, strawberry, raspberry, gooseberry, lindenberry). Maybe nuts, depending on what was available. The herbs would have been rosemary, mint, elderflower, heather (get hiiiiigh), lavender (maybe), rose (for special occasions most likely), marjoram etc. Not sure his family would have had the income to access things like citrus of any kind, cinnamon, ginger etc.
Therefore, day to day when he was young it’d have been honey cakes and seed loafs and sweet cheeses and skyr + fruit (not unlike how we eat it today) and fruit or nut tarts etc.

When he entered Theoden’s household and was able to sit at the high table with the king’s family and chief advisors this is when he’d get the glories of cinnamon bread and candied ginger and lemon tarts and the like. Pineapples.
Grima: We can’t EAT the pineapple. We have to leave it on the table so people know we can afford it.
Eomer: We have more than one pineapple. We can eat it and display it.
Grima: M O R E.  T H A N.  O N E??

Personally, I think Grima just loves carbs. So he’s the one sharking all the sweet and fried bread products at the table. I think he also likes sweet cheeses and custards so is really happy whenever something is fried bread on the outside and a sweet cheese or something on the inside.
As palates ran tart/sour, I can see Grima enjoying Rohan’s answer to skyr straight with no additions to it. Same for sour cheeses served at the end of the meal.
If I had to rank Grima’s favourite deserts/treats, once he was part of Theoden’s household and can afford/has access to Fancy Things, I think it’d go:
Fried bread with cinnamon (i.e., Rohan-beignets)
Orange infused custard
Saffron custard tart
Honey cakes – preferably with cinnamon or vanilla
Skyr
Candied ginger and almonds
Gingerbread
Sweet cheese filled tarts (Rohan’s answer to the Danish)
Pear or apple fritters
That said, I can see him still enjoying throwbacks to the less fancy sweets of his childhood, such as the fritters, but also the more herbal and earthy flavourings that were available to his family—winter savory, lemon thyme, bay, lavender, mint, borage, rosemary, marigold, sweet marjoram etc.

I didn't get into sweet beverages (herbal wines, mulled anything, mead, flavoured ales, fruit wines etc.) because that's a whole other thing.

One thing that continually bothers me: how dependent on chocolate most ice cream parlors and novelties are in the United States.
Or at least in my area of the US, I'm not an expert on this stuff.
I was complaining about this over the weekend, about how chocolate is great and I like it but I don't need or want it in all the things, and how very much I'd love an ice cream parlor that focuses on fresh fruits and seasonal flavors.
And so I came up with an idea for my own ice cream parlor, probably with a fairy or unicorn theme? Maybe enchanted forest? And then I spent days coming up with ice cream flavors and sundaes for my parlor (and also talking about cannibalism, particularly medical cannibalism, but that's another story).
I figure there'd be a set of always available flavors. Like chocolate, vanilla, and strawberry are required. Maybe matcha? Something coffee based, probably. And all of the always available flavors would also be available in dairy-free and nut-free options. And I've heard how hard it is to find gluten-free chocolate ice cream, so definitely gluten-free options, too.
But the real stars here are the sundaes. There'd be the regularly available flavors and seasonal flavors of ice cream along with a variety of basic and seasonal fruits and toppings. You could build your own, or we'd have a selection of menu offerings. Everything would be topped with whipped cream, of course, except when it's got something like marshmallow fluff instead.
We'd have to have a whole variety of splits. Like, what am I even doing having a fruit-focused ice cream parlor without banana splits?
Including a banana split with dulce de leche ice cream, salted almonds, and hot fudge (because chocolate is still allowed, it just won't be in or on everything).
Or a peach split with roasted peaches, cinnamon ice cream, toasted oat crumble with walnuts or pecans, and brown sugar syrup.
Or a mango split with cardamom ice cream, salted cashews, and browned butter rum sauce.
An apple split with cinnamon roasted apples, vanilla ice cream, almonds, toffee bits, and caramel or butterscotch syrup.
Since it's fairy or enchanted forest themed, I'd want to include floral and herbal flavors, too.
Like for summer, I'd need vanilla lime ice cream with fresh watermelon with mint and lime juice and house-made strawberry syrup.
A warm sugar cookie topped with lemon lavender ice cream and fresh blueberry syrup.
Hibiscus ice cream with strawberry swirl.
Earl Grey ice cream with blackberries and chocolate lavender syrup (maybe with pound cake or a sugar cookie?)
For spring into summer, we could have fresh raspberries and mangoes with matcha ice cream and strawberry syrup.
For early autumn, we could have a peanut butter blondie with honey ice cream, fresh grapes, and peanut butter sauce.
From Halloween to Thanksgiving, we could have pumpkin ice cream with cranberry syrup, toasted pecans, and marshmallow fluff .
For deep winter, something with a clever name referencing Persephone with smoked vanilla ice cream with a clementine curd swirl, pomegranate syrup and fresh arils, and salted pistachios.
And for the people who really want a lot of chocolate, a chili pepper brownie with dark chocolate cinnamon ice cream with cocoa nibs topped with espresso hot fudge and chocolate shavings.
Those are my ideas from the last week (no name for this imaginary place, of course, because I'm terrible at naming things). I still need more ideas that include raspberries, blackberries, apricots, pineapples, and...so many other fruits. Pears. Plums.
I might have to make some of these sundaes for myself sometime.

This small perfume business has the widest array and most accurate scent descriptions I've ever experienced. I have a good handful of their collection, and here's what I think these seven idiots would smell like.
Edward
Aziraphale (of course) - marshmallow-topped hot cocoa, rice, wool, crêpes, leather-bound antique books, and old, wooden bookcases.
Wuthering Heights - lavender, vanilla, spectral musks, vetiver, tonka, jasmine, tea leaves, oakmoss.
Inspiration: Wuthering Heights (K. Bush)
A Deal With God - fougère accord, olibanum, vanillin, black tea, amber, bois d'encense, tonka, myrrh, benzoin, peru balsam, geosmin, patchouli.

Bratapfel
Der Bratapfel is a popular sweet dish during christmas time and the cold season. It is made from whole apples, preferably a tart cultivar like Boskoop. The core is punched out and the resulting hole filled with a mix that can contain any of the following ingredients: chopped hazelnuts, almonds, raisins, jam, honey, sugar beet syrup, butter, rum (flavor), lemon juice, orange juice, marzipan, cinnamon, cloves, and cardamom — develop your own favorite mixture. Bake the apples at medium heat in the oven in a dish until the skin pops open. Serve with vanilla sauce / custard or vanilla ice cream.

What have the Tamrielic races got in terms of candy? I know the Khajiit have moon sugar brittle and the Nords got their honey sweets, but what else is there?
There are so many sweets in Tamriel it'll make your teeth hurt, and I'm lucky enough to have tried loads of them! These are some of my favourite treats...
Redguards
I adore going to Hammerfell sweetshops, which are packed to the rafters with fresh candies and pastries dripping in honey. The Redguards enjoy sweet cakes flavoured with exotic spices like cardamom and nutmeg, along with syrups of rose, coconut, and salty caramel soaking right through them. My favourite, however, is deep-fried sugar swirls, which are made from thick coconut sugar syrup that's fried in hot oil, fresh from the cauldron!
Bretons
The Bretons are known for their boozy filled candies, which are quite inventive and pack some punch (literally)! Aside from the famous brandy-filled chocolates, High Rock is home to some of Tamriel's best patisseries. From airy butter tarts filled with brandy jam, to jaw-dropping tiered fruit cakes with absinthe-filled fizzy lemon sweets, you'll be in heaven if you're a fan of desserts!
Argonians
The Argonians don't have much of a sweet tooth, but they do love tropical fruits and a curious nectar from a native Murkmire plant, scuttlebloom. Papaya and watermelon "cakes" are layered fruit wrapped into little rice paper parcels which are then soaked in scuttlebloom nectar and served slightly chilled. Another favourite is steamed sago pudding, served either hot or cold, with chopped yams, preserved palm fruit, barley pearls, and fresh fruits. Refreshingly different and totally moreish.
Khajiit
Now where do I even begin with the Khajiit? From pastries and biscuits to boiled sweets and airy spun moon sugar, sugar-tooth has a double meaning the second you cross the border to Elsweyr. My personal favourite are caramel tarts, which are a sweet biscuit shell filled with caramel pudding, topped with moon sugar, and blasted with a lick of fire (often spells) to grill the top to crackling perfection. And of course, you can try my Moon Sugar Brittle and Senchal Baklava for a taste of Southern Elsweyr too!
Bosmer
In addition to chewing or smoking sweetgnats, Green Pact followers have mastered to an art the creation of naturally sweetened animal meats and milks through generations of selective breeding and a staunch diet of moon sugar cane and fruits. Sugar mammoths are a smaller breed of timber mammoth that fall under the criteria, and their milk is pleasantly sweet and easy to caramelise. It makes it the perfect base for creamy desserts, and the meat of the sugar mammoth is prized for its sweet but meaty flavour. A typical Bosmer dessert would be a baked egg pudding topped with a flame-grilled scuttlecream meringue, which is perfectly sweet and balanced!
Nords
You're right about Nords having a slight addiction to honey, which is the basis of our sugar, though we also grow sugar beets to a smaller degree. Aside from Honey Nut Treats and taffy, we're also famous for our honey-based hard boiled sweets, which are delicious plain or flavoured with berries, juniper, and other herbs. Think of a little ball of mead, unless you dislike mead. I should probably have tried to sell this a little harder, but I do enjoy both mead and boiled honey sweets.
Dunmer
Traditional desserts from Vvardenfell are a bit confusing to mainland Tamrielic tastes, and are often sweet saltrice-based soups flavoured with ingredients like comberry, ginger and ash yams, served with glutinous saltrice dumplings stuffed with roasted gold kanet seeds or sweet ash yam paste. Cakes are common as an afternoon snack, and range from simple marshmerrow sponges to intricate scuttlecream chocolate sculptures.
Orsimer
Orcs aren't huge fans of desserts or candy in general (bad for the tusks), but there are a fair few stronghold staples that are understandably praiseworthy. My favourite is echatere cream cheese torte, which is made from a divinely light cheese creme that has the distinctive grassy scent of echatere milk, set deep in a buttery biscuit crust. It isn't overwhelmingly sweet and is perfect plain, though some variations also include berry compote, vanilla, and even ingredients like citrus and lemongrass among the Wood Orcs of Valenwood.
Altmer
Dessert isn't great for the Altmer figure, but you'll need to exercise serious control when you see the patisseries of Summerset! The High Elves are less prone to munching on sweets, preferring dried fruit such as blood orange peels, pomegranate "raisins", and candied ginger. In fact, candied ginger is the star of a famous Alinor cupcake, which is a little confection of vanilla sponge soaked in lemon syrup and orange blossom liqueur, filled with a fragrant ginger marzipan, and topped with a soft orange crème and candied ginger pieces.
Imperials
The Imperials are famous for their simple yet perfectly balanced cakes and pastries, which feature natural flavours from ingredients imported from around Tamriel. Everything from saffron from Taneth to almonds from Elsweyr can be found at the Imperial City markets, and there are cakes and candies galore you can sample. In terms of a classic Cyrodiilic dessert, I adore a good coffee liqueur cake, made from layers of coffee pudding and creamy rum jelly on a crisp coffee biscuit crust. It's best served cold, with a strong shot of espresso to wash it down!

Caribbean Rum Babas

Jules and I realised we never had a Baba au Rhum before -that’s how varied French pâtisserie is; that we’ve never gotten to that classic yet. So, Pâtisserie Week under the Great British Bake Off Tent was our chance to have our first. I decided to make it with rum, because it was our first, so not a time for experimenting with flavours yet; and also, it’s Jules’ liquor of choice. That said, it could not be plain rum. Enter these gorgeous Caribbean Rum Babas, a taste of our Guadeloupe Summer holiday a few years ago, with fragrant Cardamom and Vanilla Rum and passionfruit! Jules said it might have become her favourite dessert!
Ingredients (makes 4):
220 grams/8 ounces strong white flour
50 grams/1.75 ounce caster sugar
1 tablespoon active dry yeast
1/2 teaspoon salt
2 large eggs
1/4 cup milk
100 grams/ 3.5 ounces unsalted butter, at room temperature
1/2 cup demerara sugar
1 cup Cardamom and Vanilla Rum
1/2 cup water
1/3 cup double cream
2 tablespoons Passionfruit Jam + more for garnish
4 thin slices of lime
In a large bowl, combine strong white flour, caster sugar, yeast and salt, making sure you don’t put the salt on top of the yeast, as it might kill it. Give a good stir; set aside.
In a smaller bowl, whisk the eggs and the milk together until well-blended.
With a wooden spoon, gradually stir egg mixture into flour mixture, until a soft, sticky dough forms. Tip dough out onto a lightly floured surface, and knead, a good 10 minutes, until dough becomes smoother. Then, gradually knead in softened butter, until you have an elastic, shiny dough. Return to the bowl, and cover with a tea towel. Prove, one hour, or until doubled in size.
Once proved, knock back the air, and spoon dough into a piping bag fitted with a plain nozzle. Pipe dough equally into 4 11cm/4 1/2″ (silicon) savarin moulds. Prove again, until doubled in size.
Preheat oven to 180°C/355°F. 
Once the babas have risen, place in the middle of the warm oven, and bake, 25 minutes at 180°C/355°F, until a nice golden brown colour. 
Whilst they’re baking, combine demerara sugar, 3/4 of the Cardamom and Vanilla Rum and water in a large saucepan, and heat over medium-high heat, stirring until sugar is completely dissolved. Boil rapidly, a couple of minutes. Remove from the heat and stir in remaining Cardamom and Vanilla Rum. Cover with a lid.
When the babas are baked, remove from the oven, and let cool, 5 minutes, before gently releasing from the moulds. Then, soak the sponges in the warm Rum syrup, working with two at a time, and gently turning them to soak evenly. Gently lift out of the saucepan, transfer to a plate, and proceed likewise with two remaining babas. There should be no Rum syrup left when you’re done.
Chill sponges in the refrigerator, at least half an hour.
In a medium bowl, beat double cream with an electric beater until soft peaks form. Add Passionfruit Jam, and continue beating until stiff peaks just form. Spoon Passionfruit whipped cream into a piping bag fitted with a large star nozzle.
To serve, pipe Passionfruit whipped cream in the centre of cooled babas. Drizzle with Passionfruit Jam, and garnish with a slice of lime.
Enjoy Caribbean Rum Babas immediately.

Persephone’s Pecan Pie From The Raven Cycle
The rooms of 300 Fox Way are always filled with warmth, love, and scents from Persephone’s baking in Maggie Stiefvater’s The Raven Cycle.  In her second book, Dream Thieves, Persephone offers Adam this pie during their first of many conversations in which Persephone guides Adam through his newfound roles with Cabeswater. Persephone’s character was ethereal, thoughtful, and a bit chaotic, and I hoped to capture a little piece of her character in this pie. Enjoy!

Ingredients:
Pie Crust:
2 cups of flour
1 tsp of salt
2/3 cup + 2 Tbsp of Crisco
6 Tbsp of cold water
1/2 cup of chopped pecans
Filling:
1 1/2 cups of pecans
3/4 cups of hazelnuts
6 Tbsp of unsalted butter
2/3 cup brown sugar
1/2 tsp sea salt
3 large eggs
2/3 cup pure maple syrup
1 tsp vanilla extract
2 Tbsp of rum (or rum extract)
1/2 tsp of cardamom
1/2 tsp of cinnamon
Instructions: 
1. Pie crust: Combine flour, salt, and chopped pecans in a medium bowl.
2. Add in Crisco and water to create a dough. Mix together until all ingredients are fully incorporated. If crumbly, add water 1 tsp at a time. 
3. Turn the dough onto a floured surface and roll to a 1/4-1/2 inch thickness, depending on how thick you would like your crust. 
4. Once the crust is the desired thickness, transfer to a lightly greased pie pan. 
5. Allow crust to chill in the refrigerator for 20 minutes, then move to the freezer for an additional 20 minutes. 
6. While the crust is chilling, preheat the oven to 400 degrees F. 
7. Once the crust has chilled for 40 minutes, poke holes in the dough with a fork and cover with aluminum foil. Bake the crust for 20 minutes. After removing the crust from the oven, reduce the heat to 300. 
8. In a medium sauce pan, melt the butter. Once melted, add the brown sugar, maple syrup, and salt. Use a whisk to stir. Remove from heat once all the ingredients have melted and combined. 
9. Slowly add the three large eggs, stirring constantly.
10. Add the rum, vanilla extract, cardamom, and cinnamon to the maple and sugar mixture. 
11. Finally, stir in the pecans and hazelnuts and pour the mixture into the pie crust. 
12. Bake the pie for 30-40 minutes until the filling is mostly set. 
13. Allow to cool slightly and enjoy!

[This has been sitting around in a notebook for a while, figured I’d go ahead and post it if only for my own amusement, while I chip away at some more substantial writing.]
All of the cocktails listed here are the “Special/Secret” menu that Eva serves up at request. As such, they all contain a small amount of toxin that varies in effect and potency. Adeline- A floral-infused spirit with notes of vanilla. Can be mixed into liquor of choice. Vanilla, lavender, honey, and jasmine petals. 
Nectar- A very sweet, fruity spirit infused with florals. Also mixable with liquor of choice. Orange juice, peach juice, rolanberry juice, rose and lavender extracts. 
Balsam- A sweet, dark, warming spirit infused with ginger and vanilla. Bourbon, ginger, and vanilla. 
Cuir- Dark, strong spirits infused with notes of citrus. Dark rum, birch syrup, and orange juice.
Bouquet- A slightly sweet and grassy spirit, with floral notes. Less potent in sweetness than previous cocktails. Juniper, lavender, rose, rosemary, and clove.
Neroli- Flavorful citrus-infused spirits with strong aromas and spicy notes. Orange-infused rum, allspice, ginger, and clove.
Providence- A twist on a classic cocktail. Vermouth, gin,anise, cardamom, allspice, and juniper berries.
Redbrew- A crimson-colored spirit with an almost perfumed scent and flavor. The Laughing Magpie’s special. Lychee, persimmon, and bloodcurrant-infused brandy.

A frappe ( do not confuse it with the coffee frappes you get in Starbucks) is a popular drink from Greece. Here is how you can enjoy this Greek drink at home:
Instant coffee powder- 2 tbsp
Sugar- 2 tbsp or to taste
Coldwater – 1 tbsp
Cold milk/water- 1 cup
Shaker or blender
To make:
In a blender or shaker, mix 1 tbsp of water along with sugar and coffee. Shake it well till you see a foamy mixture.
Now, in a tall glass, pour this mixture. Now use the rest of the water and make it. You can even use cold milk instead of water.
Brandy iced coffee from Sri Lanka
Sri Lankan coffee is incredible as it is sweet and spicy at the same time. To make this:
Coldwater – 1 liter
Water- 1 cup
Vanilla extract – 1tbsp
Sweetened condensed milk- 500g
Ground coffee- 5 tbsp
Cardamon pods- 10
Cloves-10
Brandy- 1oz
Saucepan, jug, and filter
To make:
In a saucepan, boil the water along with coffee, cloves & cardamom for 10 minutes. Let it cool down.
In a jug, add condensed milk and pour the above mixture through a filter.
Mix the cold water, vanilla extract, and brandy.
Enjoy after pouring in a tall glass.
Simple to make and delicious to drink, iced coffee is the perfect whether its brunch or breakfast or a mid-day treat.

8 Tips to Make a Healthy Cup of Coffee
Coffee is the ideal healthy weight loss food.
Not only does one cup of black coffee have negligible calories (that makes it a Free Food on the Nutrisystem plan), but a Harvard study also found that drinking up to four cups a day can actually reduce body fat by about four percent. Researchers theorize that this is done by boosting the rate at which we burn calories (metabolic rate).1

Unfortunately, coffee is one of the easiest healthy foods to make unhealthy. All the mix-ins can turn your daily pick-me-up into one big fat calorie bomb. For example, if you have two cups a day with cream and sugar, you’d better add an extra 300 calories to your food diary. Two ounces of cream is 120 calories (with 12 grams of fat) and two teaspoons of sugar are 32 calories. Switching to whole milk saves you a bundle of calories—two ounces is only 38 calories.2

1. Try flavored beans.
You may not miss the dairy and sugar if your coffee is ultra-flavorful. Most supermarkets and specialty stores carry coffee beans and ground coffee that is already flavored (think hazelnut, vanilla and caramel) and contain no sugar. It’s a simple swap that can really pump up the flavor in your cup of joe!
2. Replace sugar with natural sweeteners.
Stevia and monk fruit extract are both plant-based sweeteners that bring the taste and satisfaction but none of the calories of sugar. Skip artificial sweeteners if you can. Studies have found that they really don’t help when it comes to weight loss.3
3. Spice it up.
All those “pumpkin spice” coffee drinks that appear every fall use spices such as cinnamon, nutmeg and cloves to approximate the basic flavors of pumpkin pie. Who says you can’t replicate your pumpkin spice latte at home? You can easily add those spices to your mug. Feel free to also be adventurous with our spices. Cardamom, ginger, allspice, ground orange and lemon peels all make great blend-ins. You can add them to the ground coffee you make or sprinkle right in your cup.

4. Check your baking shelf for mix-ins.
Extracts aren’t just for making cakes and icing. Add extracts of vanilla, rum, almond or coconut to really dress up your morning brew. Even a small sprinkle of unsweetened cocoa can add big flavor! You can add it right to your ground coffee before you make it.
5. Choose the right syrups.
One pump of a sugary syrup can add loads up calories and sugar to your coffee. If you really love your coffee to taste like dessert, consider zero calorie, zero sugar syrups that are available in supermarkets, specialty stories and online. They come in great flavors too, from plain old vanilla to mocha, caramel, toffee and even amaretto.
6. Lighten more lightly.
Just switching from cream to skim milk could save you almost 100 calories (and you still get the calcium and vitamin D benefits).2 Unsweetened almond milk  is another option. Two ounces only adds about nine calories.4

7. Go decadent.
Fat free whipped topping adds only about five calories in each two-tablespoon serving, plus a whole lot of creaminess and satisfaction.5
8. Foam it up.
Skim milk makes some of the best foam (it’s a food chemistry thing).6 And it’s easy to do, even without a cappuccino machine or a foamer!
Simply pour some milk into a jar (about jam-jar sized) so it’s halfway full or less. Screw on the lid, then shake until it froths. This should take 30 to 60 seconds. Remove the lid and pop the jar in the microwave for 30 seconds. This helps to “stabilize” the foam. You can then easily spoon the foam onto your coffee.7 You can also use a whisk, a blender, an immersion blender or electric mixer.8
