Czasem pomysł na jakieś danie pojawia się niespodziewanie. Na przykład podczas redakcyjnego obiadu i prowadzonych wówczas rozmów lub szukania muzyki do pracy na YouTube.
W ten właśnie sposób trafiłam na przepis na wegańskie foie gras. Być może niektórzy z Was nie wiedzą czym jest foie gras, wyjaśnię więc krótko. To pasztet produkowany ze stłuszczonych gęsich i kaczych wątróbek. Tradycyjnie pojawia się na świątecznym stole we Francji i uchodzi za jeden z najdroższych przysmaków tej kuchni. Dlaczego? Przez kontrowersyjny, wzbudzający bunt środowisk prozwierzęcych proces produkcji. Polega on na przymusowym karmieniu ptaków kilka razy dziennie w celu uzyskania maksymalnie stłuszczonej i przynajmniej 10-krotnie powiększonej wątroby. Nie trzeba być szczególnie wrażliwym żeby sprzeciwiać się bezwzględnym metodom pozyskiwania wyrafinowanych rarytasów, wystarczy odrobina wyobraźni...
Szczęśliwie coraz więcej krajów zakazuje przymusowego tuczu zwierząt. Tzw. force-feeding jest już zakazany w 22 państwach członkowskich Unii Europejskiej. Poza Europą to Australia, Argentyna i Izrael. W 2014 roku Indie stały się pierwszym krajem na świecie, który oprócz produkcji pasztetu strasburskiego zakazał również jego importu. 
Świat wielkiej kuchni jest podzielony (jak wszystko wokół, niestety): duże grono słynnych szefów kuchni wciąż propaguje stare receptury wykorzystujące zwierzęta w sposób niehumanitarny, inni od nich stanowczo odchodzą, rezygnując całkowicie z produktów odzwierzęcych. Jeden z uznanych francuskich szefów kuchni, Alexis Gauthier, zdając sobie sprawę z okrucieństwa produkcji foie gras, stworzył wegańską alternatywę i nazwał ją faux gras. Serwuje ją w swojej nagrodzonej gwiazdką Michelin londyńskiej restauracji Gauthier Soho. Bazą jego pasztetu jest brązowa soczewica oraz dodatek smażonej szalotki i pieczarek.
Podstawą mojej wersji podrabianego foie gras są orzechy nerkowca wzbogacone o smażoną cebulę, czosnek, suszone grzyby oraz kilka smakowych dodatków. Ideą jest uzyskanie pełnego umami smarowidła, przypominającego smakiem i strukturą oryginał, a skoro same orzechy są dość blade w smaku, trzeba im go nadać. Smażona cebula i czosnek, grzyby, miso, nieaktywne płatki drożdżowe, przecier pomidorowy mają go pod dostatkiem. Aby całość była jeszcze bardziej kompletna, dolewa się też niewielką ilość koniaku (klasyczne foie gras bez niego się nie obywa).
Efekt jest naprawdę niezwykły! Trzeba tylko uważać na proporcje, zbyt duża ilość jakiegoś składnika może zepsuć całość.
Składniki:
2 szklanki orzechów nerkowca 2/3 szklanki suszonych grzybów duża cebula 2-3 ząbki czosnku 4-5 łyżek oleju rzepakowego łyżeczka ciemnej pasty miso (lub 2 łyżki jasnej) pół szklanki gotowanej ciecierzycy 2 łyżki przecieru pomidorowego 3 łyżki nieaktywnych płatków drożdżowych 3 łyżki koniaku (lub brandy) 1-2 łyżki sosu sojowego 1/3 łyżeczki gałki muszkatołowej płaska łyżeczka suszonego tymianku sól i czarny pieprz do smaku
Wykonanie:
Orzechy nerkowca zalać wodą, na palec ponad ich powierzchnię. Podobnie postąpić z suszonymi grzybami. Powinny się moczyć minimum dwie godziny (maksymalnie całą noc).
Cebulę i czosnek obrać i pokroić w plasterki. Usmażyć na niewielkiej ilości oleju rzepakowego.
W kielichu robota kuchennego umieść odsączone z wody suszone grzyby i zmiksować na papkę. Dodać odcedzone orzechy wraz z miso, drożdżami i resztą składników. Zmiksować do uzyskania gładkiej masy. Jeśli będzie zbyt gęsta, wlać trochę wody po moczeniu grzybów.
Dosmakować solą i pieprzem. Jeśli potrzeba, dodać więcej którejś z przypraw.
Wiele przepisów zaleca dodanie do masy dearomatyzowanego oleju kokosowego. Jego zadaniem jest nadanie całości kremowej i jednocześnie zwartej konsystencji, która jest cechą charakterystyczną foie gras.
Przełożyć do wyparzonego słoika, szczelnie zamknąć i wstawić do lodówki (może tam stać do tygodnia).
Oszukany pasztet strasburski bardzo mi smakował na opieczonym chlebie z serem brie, śliwkowym chutneyem i rukolą.
