Ingredients (serves 1):
1/2 cup coconut yoghurt
1 tablespoon chia seeds
1 teaspoon demerara sugar
Combine coconut yoghurt, chia seeds and demerara sugar. Give a good stir until well-blended.
Spoon mixture into serving bowl, cover with cling film, and chill in the refrigerator, 4 hours to overnight.
Enjoy Coconut Chia Pudding, drizzled with honey or Maple Syrup.
