I’m finally back and going to catch up on all the new recipes I’ve tried the past 3 years.  We’re going to start it off with a very unhealthy recipe for all those who have already given up on your New Year Resolutions.

S’mores Pie

Adapted from Donel Skehan’s S’mores Pie: https://donalskehan.com/recipes/smores-pie/

Recipe 14 oreos 14 graham cracker squares 85g unsalted melted butter 180g marshmallow creme fluff 300g milk chocolate chips 255 mL heavy cream marshmallows

Crush the cookies and crackers until they are crumbs (Use a food processor if you have one).  Add butter and blend until combined.  Press the mix into a 9″ pie dish.  Pour the marshmallow fluff into the pie dish and broil for a couple minutes until the top is lightly toasted.  In a sauce pan, heat the heavy cream until bubbles and pour hot cream over the chocolate and whisk the mixture until smooth.  Let it cool slightly and then pour it into the pie crust.  Let the mixture set for 4 hrs.  Just before serving it, top the pie with marshmallows and toast the marshmallows lightly until golden brown.  Return the pie to the refrigerator to let the chocolate ganache to set.
