This Coconut Rum Rice, beautifully fragrant and delightfully fluffy, makes a tasty side to any Caribbean dish, meat or fish alike!
Ingredients (serves 4):
2 cups long grain white rice
2 tablespoons desiccated coconut
1 teaspoon coarse sea salt
1/3 cup coconut flavoured rum (like Malibu)
2 cups water
Spoon rice in a rice cooker or saucepan. Add desiccated coconut and coarse sea salt; give a good stir. Stir in Coconut Flavoured Rum and water, and cook, according to rice cooker’s instructions or over medium heat, about 20 to 25 minutes, until all liquid is completely absorbed.
Serve Coconut Rum Rice hot, as a side to Jerk Chicken or with Coconut Cod Colombo.
I might just be a loser, but I don't know how you handle black rum lol Any alcohol that isn't clear just absolutely devastates me (tequila is clear, but it doesn't count because it's awful)
Hey man, it doesn't make you a loser to not like certain alcohols (or even to not like them at all)! Rum isn't for everyone and there are even a few brands I completely stay away from because I hate the taste despite enjoying rum (Captain Morgan's, for example, is awful lmfao).
If you happen to want to try a rum that doesn't taste like rum at all then I recommend the brand Twin Fin, specifically one of their flavoured bottles - I'm personally a big fan of their lychee white (clear) rum, it's sweet but not sickly and lacks the bite that rum typically has, even when you go for a double shot. It pairs great with carbonated lemonades, or sweet fizzy pop like fanta, and even fruit juices!
But yeah, I completely get not liking rum, it's really not for everyone and you shouldn't have to force yourself to enjoy something if it tastes horrible to you lol
(Also, for anyone reading this, I'm obviously not telling you to go and drink or try these rums I've spoken about unless you are of age where you live and genuinely want to try any of them lmao)
Jules is home at the moment, so I reckon the three of us watching Death in Paradise together is reason enough to throw a little Caribbean Feast, especially when Sergeant Naomi Thomas is returning on her home island of St. Barnabas for her best friend’s wedding! And these Rum and Honey Prawn and Avocado Skewers are a delicious way to start the celebrations!
Ingredients (serves 3):
half-a-thumb piece fresh ginger
1/2 lime
1 heaped teaspoon honey
1 tablespoon Ginger and Lime Rum
15 beautiful prawns, steamed and cooled
1 ripe avocado
Peel ginger. Finely grate ginger, and spoon into a bowl. Grate in the zest of the lime halve, and thoroughly squeeze in its juice. Add honey and Ginger and Lime Rum.
Peel prawns and add them to the bowl. Toss well, with clean hands, to coat in ginger, lime, honey and Rum.
Place the bowl in the refrigerator, and allow prawns to marinate, at least a couple of hours (the longer, the better!), tossing them every now and then.
Peel and halve avocado. Cut its flesh into large enough dices.
Arrange a Rum and honey prawn and an avocado dice onto each of fifteen skewers, and place them onto serving tray. Chill until serving time.
Serve Rum and Honey Prawn and Avocado Skewers alongside Féroce d'Avocat, Fried Plantain, and Accras de Morue, and chilled Planters Punch or Queens Park Swizzles!

I’m not the most well traveled person, but is rum-flavoured coffee sold in other countries too? I recently listened to a French student complain about the “surprise rum flavour” in most desserts and drinks here, and, while I wouldn’t say that most desserts have it, it can be found in quite a lot of sweets, yes. And to my knowledge Romania is the only country where McDonalds serves / served rum flavoured ice cream.
