Most vegetables taste pretty great coated in a bit of oil (olive for preference, but most any will do) and some salt and pepper, then roasted at 400 F until brown outside and soft inside. (20-30 minutes for most things.)
Line a pan with aluminum foil and there's no cleaning.
If you have the spoons to cut veg like carrots or potatoes, great, if not look for a bag of baby carrots or whole green beans, or asparagus which you can roast whole, or buy precut veg if you can.
Brush oil on the veg or put veg and oil in a zipper bag and turn it over a couple times to coat everything and pour into the pan. And roast for 20-30 minutes depending on what you have and how big the pieces are.
You can do green beans and asparagus under the broiler in 3-5 minutes too.
Try the beans with garlic salt and the asparagus with lemon juice.
Roasted carrots are sweet, but add some honey to the oil and salt mix to make them even sweeter.
Roasted broccoli is great with grated parmesan cheese.
Roast zucchini and cherry tomatoes (halved if you can) with some Italian seasonings and you have a veggie pasta sauce.
