Buttery and fragrant, a Cinnamon Apple is so versatile it makes a wonderful topping to porridge or thick yoghurt, and a delicious side to pork or poultry. It is also very good on its own! Happy Tuesday!
Ingredients (serves 1):
1 tablespoon unsalted butter
1 apple, rinsed
1/8 teaspoon ground cinnamon
In a small frying pan or dish, melt butter over medium-high heat.
Halve and core apple, and cut it into slices.
Once the butter is just foaming, add apple slices, and cook stirring often to coat in butter, until just golden brown and tender, about 3 minutes.
Sprinkle with ground cinnamon, and cook, a couple of minutes more.
Enjoy Cinnamon Apple on its own, serve as a side to Schnitzel or on top of Ice Cream!
I want to have chicken nuggets but I only have tofu in my fridge…so I made tofu nuggets!! They are crispy on the outside and fluffy and juicy on the inside! Super tasty and I can eat so many of them!!😋
½ cup creamy peanut butter (no sugar added, or any nut butter or sunflower butter for nut free)
⅓ cup honey (or agave syrup for vegan) OR 2 spoonfuls of Truvia Monk Fruit Spoonable Jar
¼ teaspoon kosher salt
¼ teaspoon cinnamon
¼ cup vanilla or chocolate protein powder (optional; we use this one)*
3 tablespoons mini chocolate chips
Mix all ingredients together in a bowl. Freeze the bowl for 5 minutes.
Roll the dough into 20 small balls, pressing the dough together with your hands. We used a 1 1/2-inch cookie scoop (#40) to make uniform balls. You can also make smaller balls if desired. (If the texture of your nut butter makes the dough very dry, add a little more honey or a few tablespoons milk of choice until you can press it together into a ball shape.) Refrigerate for up to 2 weeks. Enjoy!

Ingredients (serves 1):
half a large, ripe pink grapefruit
2 tablespoons freshly released pomegranate seeds
1 teaspoon pure raw Manuka Honey
Using a grapefruit spoon, carefully scoop out grapefruit segments into a small bowl.
Gently pour in the juice of the grapefruit halve, without bruising the emptied skin.
Add pomegranate seeds and Manuka Honey. Give a good stir until the Honey is melted.
Spoon mixture back into emptied grapefruit skin. Chill in the refrigerator, at least an hour.
Enjoy Manuka Honey Grapefruit and Pomegranate Salad at breakfast, for dessert, or as a mid-afternoon snack.
