Jet and Sokka dated when they were teenagers which meant that Sokka was a little dumb about it but Jet was in a bad space both physically and mentally while the relationship was going on.

It didn't go well because Jet tried to manipulate him at every turn to get whatever he wanted. Sokka broke up after a while but he really tried to make it work, now he just hates him though.

Years later when they meet again Jet says that he has changed and that it was his failed relationship with Sokka that laid the groundwork for that. Sokka doesn't believe him especially because he doesn't want to be a springboard for evil people to jump into being decent human beings.

Jet let's him and leaves but now Sokka has an eye on him to catch in him in his act. But the more he's in his espionage the more it looks like Jet really changed for the better and that makes Sokka hate him more.

It's Aang who tells Sokka that he looks at this from the wrong perspective. Instead of seeing it has him being used for a personality adjustment he should see it as his funny and accepting self just making others want to better themselves.

Sokka had a lot to grumble about that but slowly he accepts Aang's reasoning and inwardly he stops hating Jet. Not outwardly though but he makes sure to emphasize that his new hate comes from Jet's ugly hair.
