I accidentally deleted it when trying to respond: rwby very much is a show made with a teen audience in mind. Majority of the shows Monty took inspiration from were shows for teenagers, the show had no cursing or blood for the first few seasons with the action being incredibly tame. The lead singer of almost all the songs was a teenage girl, and any fanservice for the show was incredibly minor especially when compared to most ecchi shows aimed at teen boys.
"Yang grabbed juniors junk" yes and that trope has been done before in other anime for teens. One piece to name one had a major gag about a dude running after some people who stole his pants and in that scene his junk gets grabbed. It's not a mature show, it's a show made to be enjoyed with teens in mind. Rwby very much fits into a shounen genre, shounen being aimed at teenage boys.
Dirty jokes in general are incredibly common even in kids media, so pretending like they're the way to prove something is adults is just incorrect.
Just because roosterteeth makes mature content doesn't suddenly mean all their content is mature. So many animation studios have variety in the content they make, especially in anime. Not every studio that makes tv-ma content exclusively makes TV-ma. Rwby is a show made to be consumed by teens. If adults enjoy it then great, roosterteeth had a large adult fanbase.
Also the creators being weird about their teen characters behind the scenes doesn't suddenly make the actual content itself mature.
Edit: I also want to add western animation specifically makes incredibly dark content for kids. Look at things like Centaurworld, infinity train, over the garden wall, atla/lok and several arcs in teen titans as just some examples. Rwby in many cases is almost on the same level in how it handles dark subject matters as some of these shows. Kids and teens can handle heavy content.
