Today We Honor Don Cheadle
Don Cheadle, actor, film producer and philanthropist rose to prominence in the late 1990s and the early 2000s.
Cheadle is the recipient of multiple accolades, including two Grammy Awards, a Tony Award, two Golden Globe Awards and two Screen Actors Guild Awards. He has also earned nominations for an Academy Award, two British Academy Film Awards and 11 Primetime Emmy Awards. His Emmy, Grammy, Oscar and Tony nominations make him one of few black individuals to be nominated for the four major American entertainment awards (EGOT).
Following early roles in Hamburger Hill, and as the gangster “Rocket” in the film Colors, Cheadle built his career with roles in Devil in a Blue Dress, Rebound: The Legend of Earl ‘The Goat’ Manigault, Rosewood, Boogie Nights, and Bulworth.
His collaboration with director Steven Soderbergh resulted in the films Out of Sight, Traffic, The Ocean’s Trilogy, and No Sudden Move.
Cheadle lead role as a Rwandan hotel manager in the genocide drama film Hotel Rwanda earned him an Academy Award nomination for Best Actor. He also campaigns for the end of genocide in Darfur, Sudan, and co-authored a book concerning the issue titled Not On Our Watch: The Mission to End Genocide in Darfur and Beyond.
Don Cheadle film “Miles Ahead” is based on the iconic jazz musician ‘Miles Davis. His role as War Machine is popular in the Marvel Universe, and the hit series Black Monday, has brought the best out of Don Cheadle artistry, as he plays Mo Monroe the lead character of the show.
Cheadle extended his global recognition with his role as James “Rhodey” Rhodes / War Machine in the Marvel Cinematic Universe beginning with Iron Man 2, and garnered a Primetime Emmy Award nomination for his guest appearance as the character in the Disney+ miniseries The Falcon and the Winter Soldier. He will lead the film Armor Wars as part of the franchise.

Tony Stark has passed away today.
Born an inventor, Tony rose through the expectations of many, having inherited the mind and company of his father. Tony captured the hearts of many with his charm, but became an icon once he donned the Iron Man suit for the first time following a kidnapping in Afghanistan.
Tony would continue to serve the world as Iron Man, even being a founding member of the Avengers and preventing total destruction of New York City, along with preventing rival businessmen with subpar motives, terrorist regimes, and so much more.
Tony even managed to help up and coming heroes and geniuses alike. His friend, Colonel James Rhodes is a superhero of his own. During the “civil war” that tore the Avengers apart, Tony was seen taking the (at the time) newly crowned Black Panther and an up and coming hero that we now know as Spider-Man.
In business and his industry, Tony passed down Stark Industries to his wife, Pepper. But he still played a big role in giving scholarships and taking young prospects under his wing, such as Peter Parker, a teen from Queens.
Tony Stark fought tirelessly against Thanos, trying his best to prevent the villain from causing the Blip. He was even thought dead when he was stranded in space. After being rescued, Tony retired to a family life on a farm, focusing on his daughter, Morgan. But when hope arose in a way to bring back the dead, Tony played a significant role.
When Thanos threatened our universe once more, Tony Stark made the ultimate sacrifice and gave his life so that our universe may live.
Tony Stark leaves behind a wife, daughter, countless friends and allies, and an eternally grateful world.

Top 10 Spinoffs that really need to happen
Hi, friends. I may not be a fan of cheap sequels or prequels we don't want, I do think spinoffs are underrated especially if they focus on characters that are beloved and have interesting stories to tell. I mean, look at the success of Star Wars' many series especially its two diamonds being Clone Wars and Andor. I was inspired to make this list after seeing the trailer of Daryl Dixon.
In this list, I will my top ten medias that could it even bigger if they make these specific spinoffs.

Marvel's War Machine (Film/TV Series) - Nevermind Riri. Let's focus on this guy who was not only around long before her, but since the beginning. In time where we want more black representation than ever, I think War Machine is should be the next big thing. War Machine aka James Ruper "Rhodey" Rhodes is a decorated soldier to begin and Iron Man's right hand man. Despite the similar gimmick, his personality is much more serious, professional and mannerly. He can hold out on his own and he is a hero anyone of any type can look up to.

2. Marvel's Mary Jane Watson (Mini Series) - While she started off as Gwen Stacey's replacement and would alter become Peter Parker's main woman, she has now come quite into her own. She has even gone on adventures of her own, has become more capable and even became an ally in action for Spider-Man. While the comics have gone sour, maybe TV can bring us back MJ and Spidey as not only a couple, but as equals who both have exciting stories to tell.

3. Marvel's (REAL) Spider-Girl (TV Series/Film) - Speaking of TV redeeming MJ and Spidey as soul mates, last I remember, at one point, they were not only happily married, they had a daughter Mayday Parker who had the mantle passed down to her long before Miles Morales, the other Gwen Stacey (Spider-Woman) and all these other modern incarnations. She is a very underrated heroine who fell into obscurity no thanks to how Marvel broke up one of its most iconic couples. She needs to make a comeback because she is the true Spider-Girl in every way possible,

4. Disney's Goofy kid's show (TV Series) - For a while, the Disney gang made a big comeback since Mickey Mouse Clubhouse and almost everyone got their own spinoff or reboot. Everyone, but Goofy which I find is a waste because unlike all the others with the exception of Pete, he actually is a father. So far, the only independent works Goofy has gotten are Goof Troop, the two Goofy Movies and two animated shorts in some holidays specials. I think Goofy can make for a great host in a kid's show because despite his goofiness, he is a very capable and in fact, wise father. He would be a lot like Mr. Rogers or Mr. Dress Up where instead just playing with kids, he's actually teaching them and even comforting them the way a father does.

5. Resident Evil's Billy Coen (Video Game) - I don't think there's an RE fan out there who hasn't wished to see what became of this beloved one off character. Between you and me, I think he's still alive and kicking zombie, and I would love see what became of him after RE0. He not only came from one of the few prequel media out there that was great, but he is a total badass with a compelling backstory. We even got to see what happened to Sherry Birkin later one. I think Billy is more than worth a chance in the spotlight.

6. Silent Hill's Heather Mason (Video Game) - I know what you're thinking, but hear me out. While she got her own game (technically, two if you count the first ever SH game), I don't believe her story should have ended with SH3. The Mason family is the closest thing to a true SH main protagonist as there is I would love to her a now adult Heather Mason still fighting the Order as it is still out there wreaking havoc. She was a great heroine and an underrated video game character in general.

7. Jurassic Park for grown ups (TV Series) - It's had a few spinoffs so far and the only that is a big hit is Camp Cretaceous. I think another one should be made and this time, it should be aimed for adults. In the beginning, JP showed a lot of promise when it came to making adult oriented spinoffs with the comics and the sequel The Lost World, but after that, it became more and more about the action and less about the horror factor and dinosaurs. Even the revival trilogy of Jurassic World lacked that horror element that adults appreciated in the first two movies and most importantly, the book. We need to make a spinoff that is aimed for grown ups without it feeling like it wants to be Indiana Jones.

8. DC's Batgirl (TV Series) - Nevermind Batwoman, Batgirl was around first AND she was solo before joining the bat family officially. I mean, even her father Jim Gordon got his own spinoff series before she did and she's actually a super. And apparently, her film never saw the light of day because it was not up to standard. I say, we make a TV series that does live up to standard AND we make it animated like we did Harley Quinn. Barbara Gordon set the standard for a lot lady supers came after her and she iconic. EVERYONE knows who Batgirl is. Even people who don't read comics know who Batgirl is. What I don't know is why she hasn't starred in her own solo media yet beyond comics.

9. DC's Catwoman (Film/TV Series) - Speaking of iconic DC heroines, it is funny how one of its most iconic anti-heroines, love interest's to Batman and just recently, bisexual supers still hasn't gotten any independent media beyond her comics. If there's one woman who doesn't need no Batman (let alone man in general) to stand on her own two feet and have a compelling story to tell, it's her. The only thing we have gotten are two films. One which is imposter media starring Halle Berry and another no one knows about. Seline Kyle deserves so much more than that. I say she gets her own proper show or at the very least, a proper film. She's worth it.

10. Capcom's Dino Crisis (Video Game) - I think this franchise only got one spinoff (two if you count the third instalment that went off the rails), and it wasn't a hit. Dino Crisis was clearly inspired by the original Jurassic Park especially when it came to horror and the feeling of being genuinely threatened by the dinosaurs. This game felt like the long lost twin sister of RE. With that said, it should get a spinoff because it's worth a last hurrah and who knows? It mind revive this lost gem of a series. I say we go for it and put our best foot forward doing it. Let it be true to the lore, the setting and theme. None of the dinos in space silliness.

Although being a muse was not meant to be, Jane Asher’s love life is something out of a Hallmark movie. Three years after she publicly broke it off with McCartney, she met cartoonist Gerald Scarfe. He is best known for his work in The New Yorker, The Times, and Pink Floyd’s The Wall.
Moreover, they have now been married for over 40 years, and together for over 50.

Best of all, they filmed this movie in Greece! They filmed this movie on the Greek island of Rhodes. Sir Ron Oliver directed this movie. Moreover, this is a historic movie for Hallmark. This is the first time that a movie has been filmed at the Acropolis of Lindos.

31 (Films) to Life: Once Upon a Time in America (1984) - Recap: Part One

OK, technically 3 hours and 49 minutes including credits, BUT STILL...I don’t know if I’m ready for this. But OK, let’s get this started with some backstory, as usual. Once upon a time...in the West...

...there was a director named Sergio Leone. Born in Rome in 1929, Sergio is considered one of the greatest directors of all time, as well as arguably the most influential director of the Western genre. The originator of the "Spaghetti Western" (that is, a Western film made by an Italian director), Leone grew up around film, as the child of a director and silent film actress. Breaking into the industry with low-budget films like The Colossus of Rhodes, he eventually shifted his focus to the Western, taking inspiration from the films of Akira Kurosawa as well. And thus, in 1964...

The Clint Eastwood vehicle A Fistful of Dollars revitalizes the genre, as well as establishing Eastwood as a movie star and Leone as a star director. Leone was in the money now, and followed up Fistful with For a Few Dollars More and The Good, the Bad, and the Ugly, two more insanely iconic Westerns, with Eastwood at the helm and old schoolmate Ennio Morricone as music director and composer. This trilogy, called The Dollars Trilogy or Man with No Name Trilogy after the iconic Eastwood character, would set Leone's career in motion. And hey, if it worked once...

Paramount's calling! They've seen the first trilogy, and they'd like a make a movie with Sergio! Seeing opportunity knocking (as well as the chance to visit the USA and film there for the first time YES THE FIRST TIME YOU HEARD ME), Sergio accepted, and made the film Once Upon a Time in the West, starring Charles Bronson and Henry Fonda. This almost three hour film is still considered Sergio's best...and I will watch it one day.
Anyway, because Leone loved him some sequels, he made another one: Duck, You Sucker!, starring James Coburn and Rod Steiger. Another success, it was an indirect sequel to Once Upon a Time in the West, featuring no characters in common, but set in the same time period and setting. One of his more political films, it speaks on the nature of revolution and its consequences. Sort of a forgotten film nowadays, but well-received critically. It's also his last Western, as he moved onto comedy for a little while, as the world moved past Westerns as a whole, and into...

In 1971, Leone was approached to direct The Godfather...and he turned it down. Now, you may think this was a big mistake on his part, but hold on, because Leone actually had something else in the works at the time. See The Hoods, which was another novel about a mob family had been written by mobster Harry Grey, and it fascinated Leone. Having read it in the 1960s, he'd actually been developing a screenplay for it ever since finishing Once Upon a Time in America. Leone and Grey, mutual fans, met up and discussed Leone's plans: another trilogy. Once Upon a Time in the West, Duck, You Sucker, and the film based on Grey's book: Once Upon a Time in America. The theme? Well...America itself.
The film took over 16 years from concept to release, and brought in heavy hitters Robert de Niro and James Woods to star in it. At the end, Leone's pet project was 10 hours long, edited down by Nino Baragi to a paltry 6. He planned to split it into two parts and release it, but the producers feared failure if that happened. So, they cut it down even more, to 3 hours and 49 minutes. But that was only for Europe. In the USA, well...that was a little too long and two confusing for us, apparently, because the American studios reordered shots in the film, and shortened it to 2 hours. And Leone was PIIIIIIIIISSED.

But in the end, everything worked out. And by worked out, I mean people FUCKING DESPISED the US version, saying that it essentially ruined the film. Instead, the released European version was a smash hit, first in Europe, and then in the USA. Today, that's the version people know, and are able to watch on Netflix! And it's considered one of the best films ever made.
Leone would die 5 years after this film released, legacy firmly secured in the annals of film history. The film would win 2 BAFTAs (Music by Ennio Morricone, of course; and Costume Design by Gabriella Pescucci) and a couple of other awards, but the American cut was recieved SO POORLY, even the Academy Awards didn't cut this movie a break. And that's goddamn saying something, because the movie that won that year was...oh. OH SHIT

Oof. There's a question. Is this as good as Amadeus?
Because Amadeus, if you haven't seen it, is a DAMNED good movie, and swept the Oscars for Best Picture, Director, Actor, Adapted Screenplay, Sound Editing, Art Direction, Makeup, and Costume Design. YEAH. It won 8 Oscars. So, damn, that is a question, isn't it? Is this movie as good as Amadeus? And would it have stolen any Oscars from it? Ooooooh...let's find out!
SPOILERS AHEAD!!!
Recap: Part One

New York City, 1933. A woman enters her apartment at night. On her bed is an outline of a human being, made with bullet holes, like a chalk outline showing the location of a body. It was made by a group of men, looking for a "rat" that the young woman is affiliated with. They shoot her and leave her bleeding on the bed.
The men immediately make their way to beat up and interrogate another man in a gym, beating him to a bloody pulp until he tells them where to find him: Chun Lo's Chinese Theatre. The leader of the group makes his way to the theatre, the backrooms of which are an illegal opium den. In said opium den is our guy: Noodles (Robert De Niro). Laying low, Noodles reads the paper about three bootleggers, recently caught and killed by the feds.

As the phone rings, we flash back to the night those men were found, and find that Noodles was there in the sidelines, watching the authorities bundle up their bodies and take them away. From there, we go back even further, to a raucous party complete with an end-of-prohibition cake and a lot of alcohol. The phone rings this entire time, until Noodles eventually picks up the phone to call a Sergeant Halloran, implying that he was the one to prompt the deaths of those men. Scandalous.

This was unsurprisingly, an opium-fueled fever dream, which is interrupted by a snap back to the present. The men are searching the theatre and menacing its customers (including this uncomfortable scene where a dude uses his gun to touch a woman's nipple; it seems weird out of context, but it's also weird IN context). As the men search for him, Noodles escapes out the back of the theatre, narrowly evading capture.
He rescues the tortured man from earlier, shooting one of the mobsters in the back of the head. Said man tells him that the girl, Eve (Darlanne Fluegel) is dead, prompting Noodles to take a key to a locket in the station, and flee the city with a mysterious suitcase from the locker. From there, he heads...anywhere.

Fast-forward to the future year of 1968, backed by a version of Yesterday by the Beatles. A gray-haired Noodles returns to the city and calls Fat Moe (Larry Rapp), the tortured man from the beginning of the film. The two reunite, and Noodles tells him that he was summoned here by somebody. He takes this to mean that he’s finally been found after running away, and needs to be ready...for something. He also learns that the bodies of his dead friends have been moved, with the destruction of the synagogue graveyard.
It’s also revealed that the suitcase contained nothing when he pulled it out of the locker. This, amongst other truths, are revealed as Noodles looks at a wall of pictures in Moe’s upstairs apartment, where he is to stay for the foreseeable future. He makes his way downstairs, into a backroom, where he stares through a hole in the wall and remembers the past, all the way back to 1918. And through that wall?

Hey, it’s Jennifer Connelly! And she’s playing Deborah, Fat Moe’s sister, and an aspiring dancer. We found out earlier that she’s apparently a big star in the modern year of 1968, so her future is bright. Also, while I’m at it, a young Jeniffer Connelly is, well...a young Jennifer Connelly. You ever see Labyrinth? Her acting is about the same here as it was there. So, not amazing, just saying. Giving me a lot of flashbacks.
A young David “Noodles” Aaronson (Scott Tiler) was watching from this backroom, and stops as Deborah starts to change out of her clothes, which is awkward for all involved. She also KNOWS he’s back there, telling her brother that there was a roach in the backroom. He confronts her afterwards, and she tells him off in the young Jennifer Connelly style (just trust me, it’ll get you thinking of David Bowie’s crotch faster than you’d expect).

Outside, Noodles joins up with his friends, all of whom commit street-level crimes for a local street boss, Bugsy (James Russo). After getting screwed out of a score by a kid named Max (Rusty Jacobs), Noodles returns home to an unpleasant home situation. There’s also an INCREDIBLY awkward sexual encounter with an equally underaged neighbor girl, and GODDAMN is it awkward.
After that, Noodles runs into Max, whose family is moving to Manhattan from the Bronx. Wanting revenge for the stolen score from earlier, Noodles steals a watch from him, only for it to be stolen in turn by a corrupt police officer. From that, the two form an unlikely friendship. Max, in fact, has a camera, which the two use to blackmail the policeman. How? By catching him having sex with Peggy (Julie Bowen) the neighbor girl from before, who happens to be an underage prostitute. Guhhhhhhh.

Max and Noodles convince the cop to act in their service, rather than the service of Bugsy. With their gang of kids, the five plot to start their own street-level organization, away from the influence of Bugsy, and without interference from the cops. This, by the way, is also while both Noodles have their, uh...turn with Peggy. Oh, God, I feel gross typing that, holy shit. However, Noodles is conflicted, as he’s definitely in love with young Deborah. And a short interaction between the two of them during Passover seems the indicate the feelings are mutual. They actually nearly kiss, until, Noodles is called outside by Max.
But as the two are talking, they’re approached by Bugsy and his men, who’ve heard about their plans to go independent. They beat the ever-loving shit out of them both, which also cements their desire to vengeance against the street-boss. It also ruins any chance of romance for Deborah and Noodles, as she understandably sees him as dangerous.

Time passes, and the boys enter a new scheme: bootlegging. This is the era of the Prohibition, after all, and alcohol is a big business. Noodles comes up with a way to hide alcohol in the water, using a clever delayed buoy method. The buoys are thrown in the water, where they sink until salt inside of the buoy dissolves, causing the alcohol inside to float up to the surface. It’s clever! And it works, as the boys get independently wealthy off of the scheme.
However, our child gang quickly runs into trouble, resulting in Bugsy shooting and killing Dominic (Noah Moazezi), who dies in Noodles’ arms. Yeah, uh,,,shit. This results in Noodles stabbing Bugsy to death…and then stabbing a cop that comes to break up the fight. Um. Fuck. Noodles is officially going to jail. Yikes.

It was about a month ago, when the aisles in stores that had been filled with displays of red merchandise for Valentine’s Day, quickly transformed for the next holiday –  to showcase items with hues of Emerald green.
Whether or not you are Irish, on March 17, people will be celebrating by wearing green, drinking Irish Whiskey or beer (perhaps even green beer), or eating Irish fare prepared with a brew from the iconic Guinness brewery. Come the official day of celebration, Philadelphia’s parade will have already taken place.
Wallethub.com recently released its 2023 Best Places for St. Patrick’s Day Celebrations. Two Pennsylvania cities, including Philadelphia, are in the top ten places! Although this year Boston took Philadelphia’s #1 spot from last year, Philadelphia is second, followed by Chicago, Pittsburgh, New York City, Reno, Santa Rosa, CA, Naperville, IL, Buffalo, Boise. The study looked at the parades, history, share of the Irish population and average beer prices.

And, speaking of Guinness….I am not a beer drinker, however I, as many do, use Guinness as a “secret” ingredient when cooking and baking. Always on the lookout for single subject cookbooks, and ones that use a specific brand, I was pleased to find “The Official Guinness Cookbook: Over 70 Recipes for Cooking and Baking from Ireland’s Famous Brewery,” by Caroline Hennessy and photography by Evi Abeler (2021, Insight Editions, $29.99)
More about having your Guinness and eating it too after a bit of history of the iconic brand. From the book’s timeline, I’ve paraphrased some of the fascinating history here…
It was in 1759 when Arthur Guinness signed a nine thousand year lease (yes, 9000!) on a closed brewery at St. James Gate in Dublin. Twenty years later, he concentrates on brewing porter (in 1810 the company started to brew a stronger beer they called a “stouter kind of porter” that over time became known as stout). In 1803, Arthur passes away and his son, Arthur II takes over. Guinness is introduced to the United States in 1817, initially delivered to a port in South Carolina. In 1855, Arthur II dies and his son Benjamin takes the helm. In 1868 Benjamin passes and his son Edward takes over and doubled the size of the brewery. The brewery’s 200th anniversary is celebrated in 1959 and Guinness Draught is introduced as the world’s first nitro beer. In 2018, The Open Gate Brewery opened in Baltimore, combining their Irish brewing know-how and American beer creativity. Baltimore Blonde became the brewery’s flagship beer.
After some history, details are given about the four ingredients in Guinness beer: barley, hops, yeast and water. Just like pairing wine with food, it was interesting to learn how to best pair beer and food. The five principles are balance, cut, complement, contrast and seasonality. An example for the “cut” principle; “The bitterness of hops and roasted barley is a weapon in beer’s particular arsenal, cutting through rich dishes. The traditional Irish pub lunch of creamy seafood chowder worked well with Guinness Draught for that exact reason.”
As with wine, there is an art of tasting beer; what to look for, how to swirl and sniff, sip and aftertaste are explained. Proper serving temperatures for the various brews, glassware to use, and perfect pour techniques provide information to best enjoy your Guinness. Tasting notes of six brews are shared along with perfect food pairings for the brews.
Whether it be traditional beef and Guinness short ribs, Malted Guinness Draught no-churn ice cream, Baltimore Blonde lime fish tacos,  Foreign Extra stout baked beans, Guinness Draught onion soup with Irish cheddar toast,  Dublin Guinness Storehouse soda bread, or Traditional Irish Porter cake, or an espresso stout martini, the author writes, “Guinness is an integral part of Irish cuisine, with many a glass of stout bypassing the cook and instead ending up in a stew or fruitcake.” It was interesting to read about the author’s mention that in 1983, the prestigious Culinary Institute of America held a Guinness stout cooking competition that resulted in some creative dishes: Guinness cheese phyllo triangles, chicken Guinnessto, stout pumpernickel soup and the winner…a rich creamy shrimp stout.
The section on how to cook with Guinness taught me to use only full-fat dairy products if a recipe calls for dairy ingredients. The reason is that the acid in beer can curdle the low-fat type.
Don’t be afraid to add beer to your recipes. As the author said, “adding Guinness to your repertoire of ingredients brings a slew of new, complex flavors to the pot.”

DUBLIN GUINNESS STOREHOUSE SODA BREAD
The headnote says, “At the Guinness Storehouse in Dublin, Chef Sean Hunter loves the way that Guinness adds depth of flavor to their soda bread recipe. Customers love it, too, especially the way Chef Hunter presents it: “We bake small loaves in empty bean tins. After cooking, they pop out perfectly cylindrical loaves, which we slice into perfect circles of bread.” Tried, tested, and true, this is a recipe that Chef Hunter has used for more than twenty years.”
5 ½ cups   whole wheat flour
1 ½ cups all-purpose flour
⅔ cup old fashioned rolled oats, plus more for garnish
¼ cup caster or granulated sugar
1 teaspoon sea salt
1 teaspoon baking soda
3 sticks (12 ounces) butter, melted
1 pint buttermilk
1 cup Guinness Foreign Extra Stout
1 egg
Preheat the oven to 425 degrees. Line two 5-by-9-inch loaf pans with parchment paper.
In a large bowl, combine the whole wheat flour, all-purpose flour, oats, sugar, salt, and baking soda, mixing well.
In a separate large bowl, combine the butter, buttermilk, stout, and egg, mixing well. Slowly add the flour mixture to the buttermilk mixture, stirring to combine to form a dough.
Divide the dough evenly between the two prepared pans. Tap the pans on the counter to remove any air bubbles. Sprinkle additional oats over the top of each. Bake for 15 minutes. Drop the temperature down to 350 degrees and bake for 45 minutes more, turning once halfway through so one side doesn’t burn, until the top of the loaves are a rich, dark brown and the sides are lighter brown. Remove the bread carefully from the pans and allow to cool on a wire rack. Makes two 5-by-9-inch loaves.

GUINNESS DRAUGHT ONION SOUP WITH IRISH CHEDDAR TOAST
The headnote says, “Sweet, silky caramelized onions and dark malty Guinness goodness are a soup combination made in heaven. Top with melted cheese on bread for full-on comfort. This is a great dish to make in advance, as the flavors improve overnight.”
Melt the butter in a large heavy-bottom saucepan over medium low heat. Add the onions, season well with salt and black pepper, and cook, stirring often, for about 1 hour, until the onions are soft, sticky, and deep brown. Stir in the flour and thyme, and cook, stirring, for 3 to 4 minutes.
Whisk in the beer and stock, increase the heat to medium-high, and bring to a boil. Reduce the heat to medium-low and simmer for about 1 hour. Add the whiskey (if using) and season with salt and black pepper as desired.
Heat the broiler to high. Spread the baguette slices with the mustard. Ladle the soup into four ovenproof dishes, top each with a slice of baguette, and sprinkle with the cheese. Broil for 4 to 5 minutes, until the bread is toasted and the cheese is melted and bubbling. Serve immediately. : Makes 4 servings.

Traditional Irish Porter Cake
The headnote says, “Visit any grandmother’s house in Ireland, and you will find a porter cake, made with Guinness, in a tin somewhere in the kitchen. This version of the classic recipe includes a drizzle of Roe and Co. Irish whiskey over the cake when it comes out of the oven, adding an extra note of warm spice and fruit.”
1 cup plus 2 tablespoons Guinness Draught Stout
1 cup packed light brown sugar
2 sticks (8 ounces unsalted butter, plus more for greasing pan
1 ¾ pounds mixed dried fruit, such as raisins, sultanas (golden raisins), and chopped prunes
4¾ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon fine sea salt
1 ½ teaspoons mixed spice or
pumpkin pie spice
½ teaspoon freshly grated nutmeg
3 eggs, beaten
3 tablespoons Roe & Co. Blended Irish Whiskey (optional)
Preheat the oven to 325 degrees. Grease a 9-inch round springform pan with butter and line it with parchment paper.
In a large saucepan over medium heat, combine the beer, sugar, and butter. Stirring frequently, heat until the butter is melted and the sugar is dissolved. Add the dried fruit and bring to a boil.
Reduce the heat to low and simmer for 5 minutes, until the fruit is plump and soft. Remove the pan from the heat and transfer the fruit mixture to a large bowl to cool quickly.
In a medium bowl, sift together the flour, baking soda, salt, mixed spice, and nutmeg. Stir the eggs into the cooled fruit mixture, then add the flour mixture, mixing well to combine.
Scrape the batter into the prepared springform pan and bake for 1½ to 1¾ hours, or until the cake is well risen, dark golden brown, and a cake tester comes out clean from the center. Remove the pan from the oven and drizzle the whiskey (If using) on top while the cake is hot.
Cool the cake on a wire rack before removing it from the pan. Wrap it in parchment paper and store in an airtight container. Keep the cake for two to three days—if you can resist!—before serving it. Makes one 9-inch cake.
