Sage Balsamic Mushroom and Feta Quiche (Vegetarian)

After spending a day on the road, returning from our holiday, this rich and flavourful Sage Balsamic Vinegar Quiche, fragrant with herbs, makes a more-ish and deliciously comforting dinner to tuck into! Happy Sunday!
Ingredients (serves 4 to 6):
375 grams/13 ounces chilled Rosemary Pastry
2 tablespoons unsalted butter
1/2 tablespoon olive oil
1 Green Onion
200 grams/7 ounces cremini and button mushrooms
a dozen leaves fresh sage
1 1/2 tablespoon Modena Balsamic Vingar
a pinch of salt and freshly cracked black pepper
4 large eggs
1 1/2 cup crème fraîche or sour cream
¼ teaspoon salt
½ teaspoon freshly cracked black pepper
4 small leaves fresh sage
100 grams/3.5 ounces Feta Cheese
Preheat oven to 200°C/395°F.
Roll Rosemary Pastry out thinly onto a lightly floured surface. Fit into a buttered 20cm/8″ tart tin, letting the pastry overhang on the edges. Prick the base with a fork. Place a sheet of baking paper onto the Rosemary Pastry and fill with dried beans or rice. Blind bake the Rosemary Pastry crust  at 200°C/395°F, 10 minutes. Carefully remove the beans and baking paper, and bake another 5 minutes, at the same temperature. Remove from the oven. Let cool slightly before trimming the edges. Set aside.
Whilst the Pastry is blind-baking, melt butter with olive oil in a large, nonstick skillet, over medium-high heat. 
Thinly slice Green Onion. Once the butter is just foaming, add white part of the Green Onion, and cook, a couple of minutes.
Slice cremini and button mushrooms into thick slices. Add mushrooms to the skillet, and sauté, coating in butter and oil, about 3 minutes.
Finely chop sage leaves, and stir them in as well. Cook, a minute more or so, until mushrooms are well-browned. 
Then, deglaze with Balsamic Vinegar. Cook, 1 minute. Season with salt and black pepper. Remove from the heat and allow to cool.
In a medium bowl, whisk eggs together with crème fraîche. Whisk in salt and black pepper. Finely chop sage leaves, and whisk them into the batter, along with chopped green part of the Green Onion. Set aside.
Scatter Balsamic mushrooms onto the tart crust. Crumble Feta liberally on top. Pour egg and cream mixture evenly all over.
Place in the warm oven, and bake, at 200°C/395°F, 25 to 30 minutes, until cooked through and crust is beautifully golden brown.
Serve Sage Balsamic Vinegar Quiche warm, with dressed lettuce.

Still had some duck in my freezer since the rillettes recipe, so this one hit the docket.
In the instructions, Tony says the cabbage only gets better the following day, so I made my cabbage the day before the duck. This is definitely an autumn dish. Hunter style.

Starts with a half pound of chopped up bacon, rendered but not drained of the fat. Then cook the onions and cabbage in the bacon pan.
I just now realized how phallic my sachet looks. I accidentally put all the rosemary I had in the sachet. I needed some for the duck brine, so after the cabbage cooked, I removed the sachet and chopped up the cooked rosemary and added that to the brine. A bit of cheating, but it's better than no rosemary at all.

The cabbage was veryyyy wine heavy. Even the following day.

Only 4 degrees over temp, though I went a little too hard on the sear. The meat was tender and still pink, very tasty. Next time I would fully rinse off the brine instead of just scraping it off, and patting it down with paper towel.

I also baked the wings, which weren't very good if I'm being honest. But they weren't part of the recipe. I also added some potatoes as a side, I felt it needed a starch.
The sauce was fully a waste of time. It was tasty enough, but it was very loose. Even after reducing by half. Then he tells you to strain out all the mushroom you spent time dicing?? So I served the diced mushroom on the side. I even mixed it in to the leftover cabbage, and it helped tone down the wine flavour. I'm not about to waste perfectly good mushrooms.

Taste is a 2.5 out of 5. The duck was king.
Difficulty is a 3 out of 5. Duck is finicky, the cabbage was easy.
Time was about an hour and fifteen minutes. Brine the day before.
The duck does all the heavy lifting here. I think it would go better with some sautéed mushrooms, and/or mashed potatoes. The cabbage is just too tart for me.

if you take recipe suggestions, i just made probably the best pasta sauce i ever have for dinner it was sooooo good. basically the recipe is:
roast 1 lb cherry tomatoes seasoned w olive oil, salt, and pepper at 450 for ~25-30 min (until most have split)
sautee 1 red onion and ~6 cloves garlic in olive oil, add roasted tomatoes, let cool ~15 min, and then blend until smooth (you may need to add a little water, i did like 1/4 cup)
put back on mid heat and add 1/2 tbsp brown sugar, 1 tbsp balsamic vinegar, and chopped mushrooms, cook for 5 ish min
add a handful spinach and cook until wilted
serve over pasta
it tastes so bright and tart delicious and i feel like you could add even more veggies than i did, and it makes enough to have for multiple days, i love it so much!!

Chicken Pot Pie Recipe
I wanted to share my secret chicken pot pie recipe because I'm having a really bad day and wanted to spread some joy. It has a wonderful fall feel and a wonderful surprise of tart apples and I hope it will brighten your day.
Filling: 1 chicken leg + wing + drummette 1 granny smith or pink lady apple 1 red potato 3tbs butter 3tbs flour 1 bunch beech mushrooms 3 sticks celery 1 large carrot + greens 1 small white or yellow onion or shallot 3 cloves garlic 1 cup milk 1tsp salt (to taste) 1tsp dried herbs (to taste) 1tsp white or black pepper (to taste)
Boil chicken for 15mins in minimal water Remove from water and allow to cool - Do Not Discard broth Chop vegetables & apple and dice onion & potato Peel, crush, and chop garlic  Remove chicken from bones and shred
Make a roux (brown butter in pan, add flour and whisk, add milk) Add chicken broth to roux and simmer until thickened Add vegetables, potato, apple, and chicken meat  Simmer and thicken, keeping an eye on it while you make the crust
Crust:  1/2 cup butter 2 cups flour 1/4tsp baking powder
Mix flour and butter in a large mixing bowl, texure should be pliable and not sticky Divide into two portions, 2/3 & 1/3 Roll thin on a floured cutting board
Making up: Butter and flour pie tin and cover larger peice Fill with thickened filling Cover with smaller peice Make several knife slashes in cover to vent steam Bake for 15-25 minutes or until browned (filling is already cooked)
I reccommend serving with a glass of sparkling cider (hard or NA) and baked apples make a wonderful desert after this, which is a recipe I can also share.

Im aussie and got interested in thanksgiving food this year and thought i'd have a crack at making a meal. What are some of your fave thanksgiving dishes and foods?

HMMMM My favorite Thanksgiving dishes... Im a sucker for a good turkey with stuffing tbh!! Im suuuuch a slut for stuffing (which is also called 'dressing'? I dont necessarily know if there is a difference, both are made with bread, broth, aromatics and herbs, my family also would have diced onion and I thiiiink celery? in ours? idk I love it. BEST Savory side dish!!!)
After moving to Texas my in-law family also introduced me to casserole items that... well they're not EXCLUSIVE to Thanksgiving but I really fucking love them... Broccoli Cheddar Casserole (name is deceiving, its primarily rice and cheese with Some Broccoli LMAO) and Green Bean Casserole (green beans, cream of mushroom soup, and topped with french onion crunchie bits OMNOMNOM...)
both are SO SO good,,, raaaaa
.... man im a slut for side dishes!
To recap: Stuffing, Broccoli Cheddar Caasserole, and Green Bean Casserole are my favorites, and yeah some white turkey meat is pretty baller, too!
I'll also tell you an extra I liked, but its from my culture up in French Acadian Territory (aka, Maine and New Brunswick, Canada lol): Sugar Pie or Tarte Au Sucre. If you look specifically for an Acadian recipe, follow it, you will have an amazing sweet desert. Dont cut it into 8 slices, cut it into 16, it is VERY SWEET but its. The epitome of my childhood growing up. It was for Thanksgiving + Christmas, but worth shouting out.

I'm going to list some cooking recipes I own here. But idk, whatever you cook, it won't be noted on the recipe in game tho...have to buy, I guess? But idk...I forgor. But that aside, this is the list I own. Gonna add from time to time.
You can get a kitchen after the first house upgrade. After that, go buy the utensils in the restaurant. Then you can cook~.
Apple Pie [OVEN] : Apple + Flour + Honey.
Butter Butter [WHISK] : Milk
Pudding [WHISK] : Milk + Egg
Baked Yam [OVEN] : Yam
Puffy Egg Soup [FRYING PAN] : Horsetail + Egg + Royal Fern
Roasted Chery Salmon [OVEN] : Chery Salmon + Shimeji
Pasta [STEW SET] : Flour + Oil

Strawberry, Turnip, Cucumber, Pea are Spring plants.
Lemon and Chocolate are from Summer sapling.
Tomato, Onion, Pumpkin, Melon, Watermelon, Bellpepper/paprika (?), Pineaple, Corn, are Summer plants.
Flour, can be bought from store, or mill it your own once you got the device from Prince Lumis.
Oil, Yogurt, spices, red beans etc can be bought from the store/restaurant. I think mayo also available there in summer.
Honey got it from the honey bee after you build the...the farm. I forgot. gonna edit once i remember HAHAHHA.
Milk and Egg, got it after you buy Chiken and Cow, obviously.
Horsetail, Bamboo Shoot, Mugwort, Shitake, and Royal Fern are Spring forageable vegies.
Chery Salmon, I got them on Spring. Fishing them around the river area.
Ginger can be found in summer.
Shimenji (or is it Shimeji) is Autumn mushroom, forageable in the mountain.
PS: GINGER AND MUGWORT ARE RARE THINGS. YOUR RNG LUCK IS NEEDED TO GET THEM.
(I still know about 2 of them since I am still in summer 1st year. I shall update more in the future.)

For the ask game what about onions? I was inspired by the red pepper ask
ooh! very big fan of onions. u can eat em raw like apples for a fun and exciting crunch. put em in just about anything cooked and they’re so delicious. caramelize them for the ultimate onion experience. for your enjoyment i have shared below my favorite onion recipe.
onion walnut tarte tatin
very easy and delicious. looks fancy but it’s not hard
ingredients
3 tbsp olive oil
4 or 5 small yellow onions, halved top to bottom
1+½ tbsp dark brown sugar
kosher salt
4 oz mushrooms, stemmed, rinsed, & chopped if large
½ cup walnut halves
8 oz defrosted packaged puff-pastry dough
6 oz blue cheese
instructions
Heat oil in an ovenproof skillet over medium heat. Place onions cut side down in pan. Reduce heat to medium-low; cook onions 20 minutes, until bottoms color slightly. Sprinkle on brown sugar; season onions lightly with salt. When sugar begins to melt, stuff mushrooms and walnuts into caps between onions. Cook 5 to 7 minutes. Remove from heat.
Preheat oven to 375°F. Unfold pastry dough and roll out between sheets of parchment to a 10-inch round.
Dot pan with pinches of cheese. Lay dough over pan and tuck in around edge of filling. Roast on middle rack of oven until evenly browned, 25 to 35 minutes. Set a serving plate over pastry, then carefully invert pan to transfer tart to plate. Filling should be nicely caramelized; if not, roast tart 5 minutes more on a foil-lined baking sheet.
Cut into wedges; serve warm. Makes 4-6 servings.

Onion and Artichoke Tart

Clearing the refrigerator, or “cooking from inventory” creates an opportunity to use ingredients you many not normally think of putting together.
Onion and Artichoke Tart is a recipe from Mary Berry of The Great British Bake Off fame. This veteran of the food world has published 70 cookbooks and appeared on numerous television series and shows. She has a calm positive manner about her and knows how to make a recipe approachable.
I do try to keep frozen puff pastry on hand so this gave me a starting point on deciding what recipe I would make. Mary Berry’s recipe uses mushrooms, which I didn’t have but I did have some fresh spinach and Feta Cheese that needed to be used up. I used milk instead of the cream called for in the recipe and dried oregano as my herb. 
And I gave my long rectangular tart pan some exercise.
