Spinach, Sweet Potato and Lentil Dahl (Vegan)

On a cold Winter day with dull white skies, this deliciously fragrant Spinach, Sweet Potato and Lentil Dahl is both a flavourful and colourful dinner which will warm you from the inside. A simple recipe, too; it makes good use of a lone sweet potato! Happy Thursday!
Ingredients (serves 2):
1 tablespoon sesame oil
1 tablespoon Mustard Seed Oil
1 small red onion
half a thumb-sized piece fresh ginger
a small garlic clove, minced
1/4 small Habanero chili pepper
3/4 teaspoon ground cumin
3/4 teaspoon ground tumeric
1 large sweet potato
1 cup split red lentils
1 teaspoon coarse sea salt
1 cup Vegetable Broth, warmed
2 cups water
2 “cubes” frozen spinach
Heat sesame oil and Mustard Seed Oil in a large Dutch oven, over medium heat.
Peel and thinly slice red onion. Add to the Dutch oven, and cook, stirring often until softened, about 3 minutes.
Peel and thinly slice ginger.
With rubber gloves on, finely chop Habanero chili pepper.
Increase heat to medium-high, and stir ginger and Habanero pepper into the Dutch oven. Cook, a couple of minutes.
Add ground cumin and tumeric, and fry, one minute more.
Peel and cube sweet potato. Add to the Dutch oven, along with red lentils, stirring well to coat in oil and spices. Season with coarse sea salt.
Then, stir in Vegetable Broth and water. Bring to the boil.
Once boiling, reduce heat to medium, cover with the lid, and simmer, 25 minutes.
Remove the lid, and stir in frozen spinach. Reduce heat to medium-low, cover with the lid, and cook, giving an occasional stir, a further 5 minutes.
Serve Spinach, Sweet Potato and Lentil Dahl hot, with Paratha.

We don't even know what are those "exotic" spices!
To some people, tarragon or chervil can be "exotic" and it tastes awful! Just like turmeric can also be called an "exotic" spice and it also tastes like death ?
I prefer the argument that Rhea baking cookies shows how evil she is because she gives sweets to children without any consideration for their daily sugar intake.

Smoked Tofu, Sweet Potato and Lentil Dahl (Vegetarian)

This hearty Smoked Tofu, Sweet Potato and Lentil Dahl makes a deliciously fragrant dinner for two, and excellent use of leftovers!
Ingredients (serves 2):
2 tablespoons Mustard Seed Oil
1 small onion
1/2 small red chili pepper (or less if you don’t like it too spicy)
1 teaspoon coriander seeds
1/2 teaspoon cumin seeds
1 teaspoon Garam Masala 
1/2 teaspoon ground tumeric
half a thumb-sized piece fresh ginger
100 grams/3.5 ounces smoked tofu
2 medium leftover cooked sweet potatoes (boiled)
1/3 cup split red lentils
1 teaspoon coarse sea salt
3 Whole Peeled Tomatoes + 1/3 cup of their juice
1 1/2 tablespoon demerara sugar
3/4 cup coconut milk
1 1/3 cup water
freshly picked Garden Cilantro
Heat Mustard Seed Oil in a large Dutch oven, over medium heat.
Peel and finely chop onion. Add to the Dutch oven, and cook, stirring often until softened, about 3 minutes. 
Thinly slice red hot chili pepper, and stir into the onion. Cook, a couple of minutes.
Add coriander seeds, cumin seeds, Garam Masala and tumeric, and fry, one minute more.
Peel and grate ginger.
Increase heat to medium-high, and stir ginger into the Dutch oven. Cook, a couple of minutes.
Pat smoked tofu dry, and cut into cubes. Add to the Dutch oven, and fry, coating in spices, until golden brown. Transfer tofu to a plate; set aside.
Cube sweet potatoes. Add to the Dutch oven, and fry, a few minutes, coating in oil and spices. Transfer to the plate, as well. Set aside.
 Add red lentils, stirring well to coat in oil and spices. Season with coarse sea salt.
Roughly chop Whole Peeled Tomatoes, and stir them in, along with their juice. Add demerara sugar, and cook, a few minutes until dissolved and caramelising.
Then, stir in coconut milk and water. Bring to the boil.
Once boiling, reduce heat to medium-low, cover with the lid, and simmer, 20 to 25 minutes.
Serve Smoked Tofu, Sweet Potato and Lentil Dahl hot, garnished with Garden Cilantro, with cheese naans or Podeena Paratha.
