Really feeling the height dysphoria tonight y'all... :))))))
#seriously there is only one grown adult man in the world alive who i know is shorter than me#most children are taller than me an adult dude of 24 fuckin years old#i can only buy children's shoes and often online because they dont really sell those in stores#i am swimming if i get an adult medium shirt and pants are always far too long for me because 30in is way too much#working anywhere is so hard because all equipment abd surfaces are far too high up for me#and then the job refuses to buy a stool or ladder tall enough to accommodate me#my father renovated the kitchen around 2 years ago and raised everything in height#the counters are now up to my neck and the cabinets are entirely unreachable but for all other folks theyre fine#even with a stool i cant reach beyond the front of the second shelf for anything#i cant even sit down in chairs unless they are table chairs and not restaurant or bar stool height#if they are i just straight up fall over trying to sit in them or the chair falls down or both#if im going to a seated event i have to research the venue first to be sure they have tiered seating and its tiered enough#otherwise i wont see anything because the person in front of me regardless of age is always far taller#the entire world already is run by folks who are against trans people like me and who dont accommodate me#doctors dont accommodate my chrochic conditions and pain at all and never have so i just suffer#and the entirety of every place house and establishment is specifically built for people above my height by tons#so i basically live in a world that wasnt made for someone like me and i just already feel like i dont belong here#and this lack of accommodation just makes it worse

Literally cannot comprehend that some people just... go places.. I know someone who just got back from a 2 week vacation and then the day they came home they went out to eat at a restaurant (at a busy time mind you, like 7pm on a saturday night!!) and then went to a mall to shop and then woke up early for brunch the next day and were at a bar in the afternoon and so on and so on and it’s like... god don’t you get tired of being places? If I go grocery shopping for 20 minutes on monday and then have a doctor appointment on tuesday, I am SO tired of leaving the house that I want to do nothing for the next two weeks lol...  Doing multiple major tasks/trips in one day and ENJOYING it and SEEEKING IT OUT is utterly inconceivable to me..  we are different creatures entirely lol
#not even regarding how irresponsible it is to be constantly doing stuff during the pandemic and etc. etc. like EVEN before the pandemic#I felt this way exactly the same. I just do not understand the human compulsion to be Doing Things (tm). And it's not that I don't enjoy#SOME things#like very hyperspecific things in controlled environments scheduled 10 days ahead of time and intricately planned lmao#but like there is some stuff I enjoy so it's not like I just hate everything but it's just... ghghhhhhhhhhh#like what are you running away from something? is it unberable for you to be alone with yourself so you have to be like#constanly up and out and finding new sensory shit to throw yourself into or like???#I am legitimately not exaggerating comepltely 100% fine not leaving my house for months at a time (aside from going on walks to get excercis#e just around the block/still within the neightbohood and occasional necessary grocery trips to stock up on food obviiously)#I simply do not posess the impulse to go out to restaurants or bars or go to clubs and dance or go to parties or concerts#OR even travel like...?? idk I guess it's not terrible but in the past when I have traveled I've found that the only things#I could name that I enjoyed about the experience were like.. I like being on hotels because you get free breakfast sometimes and they have#TV and air conditioning and better beds than I do at home. I like people watching from my room windows. I like being in airports because#of the way they;re designed and I like to pearch somewhere and watch people and watch clouds and planes taking off.#I enjoy being on airplanes because the windows feel cold and you can look at clouds and sometimes have gingerale.#but I dont enjoy the traveling or going places itself. I'd rather be at home working on my hyper-specific interest hobbies lol#legit not joking at al if I won tickets to like an all expenses paid super luxury tropical getaway I would sell them and use the money to#buy craft supplies. I would get 10000x more personal fulfilment and joy being able to work on a new project or having the money to pay off#bills or buy better groceries or get an apartment with a better bathroom or something like that than I would having the one time#experience of like wow I looked at a cool beach and some sunsets and ate at restaurants a lot#And maybe the thing is like. I don't value experiences? I value resource security and pratical progress at things#and not in a like workaholic capitalist way but just in a like.. I value more what's going to make me happy in the LONG run than temporary#expeirences that are somehow supposed to mean something to me in the moment (yet I usually derive no pleasure or meaning from at all)#Like I would rather use money to invest in my niche hobbies or crafts or personal improvement or getting a more comfortable#bed or better shoes for my foot pain or etc. etc. than I would spending the money to go out to a resuarant or travel or etc.#ALSO again like.. in addition to it simply not seeming worth it because my brain rarely is able to conceptualize the value of those sorts of#experiences.. it's also just SO tiring to do things! Even a grocery store trip can be overwhelming with sensory stuff and social things#and etc. etc. and I just realize like.. all the things people have told me are Fun are not Fun for me. I grew up and realized you actually#have no obligation to do things. I found out you can spend your birthday at home alone eating a waffle and playing your favorite video game#and I have never went anywhere or done an activity on my bday since lmao.. 'Doing Things' is just hard for me to grasp still really lol

Yknow what I don't get... counters/bar seating where it's you sitting with several strangers usually, (or alone) and the bartender/server staring at you 😭
I know it's for people who drink or dine alone and that they feel comfort in that bc they can talk to the server or bartender, or their neighbor, or just watch tv. But it to me is hell 😭
I hate my back being to the door, I hate people watching me eat, and I would feel like I had a spotlight on me. Especially since the bar is usually in the middle/front of the place.
For me, my ideal seating is in a booth, away from other customers if possible (but I know that's not always available)
I guess they get spinny chairs and that's cool

AUGH! My town only has ONE teeny-tiny piddly bookstore. Half of the books are about racism, the other half are about psychology. The music is perverse. I want to go book shopping so badly, but in the entire area we have no used bookstores. HELP!

I really hate how much my brain hates to do new things sometimes
#oops i’m ranting in the tags apparently#tw for uhh depression and anxiety and eating difficulties in the tags if you read them#i made it to the door of a cafe two blocks from my flat#i’ve walked past it a dozen times in the six months i’ve lived here#and the menu looks good it’s coffee and breakfast foods and sandwiches#and they have donuts from a donut place i like#but it’s in a building with like three doors right next to each other and i didn’t know which one it was#and now i do bc i thought to check the address online#and made it to the door but it looks small and there were People there because it’s like noon duh#and i couldn’t see if there was more table just by peeking through the window while trying to look like i wasn’t peeking in#so i stood a foot away from the door and then left and went to my normal coffee place one block in the other direction#but i still haven’t gotten FOOD which is … not great i haven’t eaten anything in a couple days#i mean i had chinese food that i split between sat and sun as my lunch at work#but i should probably eat something but i’m tired of only going to the chipotle near safeway or the pizza bar which isn’t open yet anyway#which leads us back to i hate my brain and i’ll probably just end up getting chipotle again#but there are so many local restaurants that i want to try!! but i’m so picky about food while also hating to ask for modifications#and i used up most of the energy today dragging myself into the shower for the first time in dayss#and i need to do laundry and go grocery shopping and do the dishes and and and#and i’m still fucking exhausted even though i passed out on the couch last night and didn’t drag myself out until like 11 am#and i have work tomorrow so laundry NEEDS to happen because i worked eight days in a row and have zero clean work clothes#and i can hear my stomach growling at me because coffee was not enough and i know better and i’m really not trying to starve myself to death#but goddamn i just don’t want to have to do anything#i hate this#why brain why#mental health: deteriorating#my ramblings

My coworker and I are both enjoying Adderall today but we're also dealing with starting a project and concentrating so hard that you can't stop, even though it's taking so much longer than you thought you just gotta keep concentrating and concentrating until your coworkers are worried because you've been scrubbing the rack that holds fry baskets for at least thirty minutes and refuse to stop even though it's really not an important task, you gotta finish. You have no choice in the matter.
#this morning i arrived and he was cleaning up the line#like the place where we keep all our bins of food to make the sandwiches and stuff#he took out all the bins and cleaned under them and reorganized and refilled foods#and took out the sauce bottles and cleaned the container and everything#i arrived an hour after he did and he was still working on it#then i started scrubbing cupboards and stuff. i plopped myself on the floor and cleaned the lower parts#where stuff had fallen or there were crumbs. forgotten cubbies#when i finished that i turned to the fry basket holder#its a bunch of metal bars together to throw the baskets on and it gets covered in grease. i mean covered#today i made it my personal mission to clean it up. then i realized how hard it is to clean up months old grease#but i couldnt give up. i got spray. a rag. a scrubbie pad. and just went to town#for like 45 minutes. and my coworker laughed at me because he saw i was stuck with that same problem as him#my manager put me on break a bit ago which is good#because my right hand has given up. i can't properly hold the scrubbie anymore. ive been cleaning for 3ish straight hours now#this restaurant is going to be so damn clean#next im going to clean the side of the fry freezer. its a little freezer we keep in the front to hold our fries and other fried products#its right next to the garbage can so its filthy#see that wouldve been a more useful project than the fry basket rack but whatever#i wish my doctor wasnt a pos and believed me about ny symptoms and gave me my own damn adderall#because i recognize that i shouldnt be using other people's medicine#but its making my life easier and rn I'll take anything that helps

line cook here. ACCURATE
if you don't get the hate, here's what you don't understand.
it takes up to 2 hours to close down the kitchen.
The last 60-90 minutes before closing time you do almost no cooking because the restaurant doesn't have many people in it and you've already cooked most of their diners.
So if someone walks in during, like, the last hour, the cook is in the middle of an industrial deep clean of the kitchen.
(these numbers can vary quite a bit from place to place but i have worked several restaurants with these actual times and the concept remains the same)
Say the place closes at 10. If you wait til the restaurant is already closed to start all your cleaning duties, you'll be there until at least midnight.
More than that your boss knows that on an average night you can start your clean up as soon as the last rush ends and get out of there around 10:45, even 10:15 on a slow night if you get lucky. That means there are plenty of restaurants where if you do take until midnight the manager is going to come up to you at some point that week and ask you what went wrong that night, and you'd better have an answer.
So this example restaurant closes at 10 pm. The dinner rush ends around 8:30, and shortly after that the cook is going to start getting every single dish possible over to the dishwasher because the dishwasher always gets hit hard and late, and the machine runs for 2 full minutes and only holds so many dishes, so the way that works out is if you wait an extra 30 minutes to give the dishwasher all your stuff it can mean adding like 60 minutes to the end of his shift. And you're gonna KEEP finding shit to send to the dishpit right up until you leave probably.
all these little square and rectangle containers in this cold table have to be pulled out and changed over into new containers, replaced by new full ones, or in some cases filled from larger containers in the back, which can result in even more empty containers to send to the dishwasher.

while it's all pulled apart to do this, you have to clean up all the spilled food and sauce and juices and stuff from the joints and ledges and shelves and drip trays
Once you get your line changed over in this way, and fully stocked, anytime someone orders something that makes use of a bunch of that stuff, you have to restock and re-clean it some. It might already be covered in plastic. Some of it might already be stuck in the back to make room to take apart your cutting board counter to clean. To cook a dish isn't TOO much of a problem at this point, but you're really hoping for zero orders because you still have so much other cleaning to do.
Meanwhile the salad bar and appetizer section and server station and everybody are all doing the same thing. Even the bartenders are stocking olives and lemons and sending back whisks and stir spoons and shakers and empty 4quart storage containers that used to hold the back-up lemons and olives and things. Every section is dumping their must-be-cleaneds to the dishpit as fast as possible because early and fast is the only thing they can do to to help that dishpit not absolutely drown into overtime.
The poor dishwasher is always the last to clock out, soaking wet and exhausted.
Around this time you probably scrub the flat top, which has turned black from cooked on grease and is still about 500 degrees. Line cooks are divided in opinion on water-based or oil based cleaning methods for this, but they all involve scrubbing with (usually) a brick of pumice stone using every ounce of your strength while you try not to burn yourself

you scrub it from fully blackened to gleaming silver and now if somebody orders something that needs the flat top to cook, you can either fuck up your cleaning job or fake it in a couple frying pans and pass that tiny fuck you down to your dishwasher (who usually understands, especially if you help them take the garbage out or clean your own floor drain later)
If there's deep fried stuff on the menu then the fryers have to be cleaned out, which includes straining the oil out into enormous and super-heavy pots full of oil so hot that if you spill on yourself then it's probably a hospital visit and if you slip and fall face first into it it'll be the last thing you ever do.

Then you gotta scrub out the fryer. Like you gotta take the (hot) screen out and reach your arm down into the weird rounded pipes and curved areas (so hot, burn you if you brush against them hot) and scrub off whatever is down there

Depending on your kitchen you might have to do up to four of these. Then you'll have to pour the (dangerously hot) oil back in
oh, and if you didn't dry the pipes and get ALL the water out of the trap and tank?
water reacts with hot oil in a sort of mentos and coke way that can send a tidal wave of oil past the open flame of the pilot light ...HUGE dangerous mess and/or burn down the kitchen if the oil lights up.

Unless! If the oil has been used too hard and needs to be changed, it's time to carry those open topped super heavy pots full of will-kill-you-hot oil and dump them in the barrel outside by the dumpsters so you can put room temp fresh oil in the fryers. whew!
The clean up is not just some light wiping down that can be easily interrupted, is what i'm saying.
You might have to do some kind of walk-in duty (moving around 50lb cases of lettuce and 50lb bags of onions to get to the stacks of five gallon buckets full of salad dressings and sauces to move so you can reach the giant metal pots and bus tubs full of prep and get it all organized and make sure it's all labeled and i have to stop now i'm having flashbacks)
THE POINT IS
by 15 or however many minutes to close, the line cook is doing an intense deep clean and probably has the whole stove taken apart to detail.
For some industrial stoves this means lifting off large cast iron plates that weigh like 20 lbs each and are still quite hot. Whatever metal burners are on there, you gotta take off and clean, you can see here the lines that indicate the large thick cast iron rectangles that sit on top of the burners to allow heavy pots to rest on. Those five (each has one front burner hole and one back burner hole, see?) have to be lifted off and cleaned with soap and a wire brush usually, and then the underneath area also has to be cleaned because a lot of shit falls through the burner holes on a busy night.

if you didn't do it when you did the flat top you have to do the grease trap (which can be like a full five minutes and is always disgusting).. You gotta clean out all the little gas jets in each burner with a wire or something so the burners all flame evenly, and sometimes you have to remove some of the natural gas piping that connects the burners to access where you have to clean.
you gotta clean out the bottom of the oven and the wire racks, and, oh gods, you gotta take down the filter vents from the hood fans above the stove.

those are hood vents, and as they pull air up they also pull a lot of grease and they have to be taken down and cleaned, then you gotta climb up there and scrub where they go before you put them back...

And then there's the mopping and floor drains and...
Anyway, that's what the line cook is doing when you walk in fifteen minutes before closing and order something that needs to be cooked on that stove. They are doing an entire industrial cleaning of a professional kitchen.
In some restaurants maybe one or two of these jobs will be every other night or even only twice a week, but in many, possibly most kitchens, ALL of these things happen EVERY night. You don't want to leave any food mess that might attract insects or rodents for one thing, so a really good kitchen is as close to brand new as you can get it every night.
IF YOU ABSOLUTELY HAVE TO ORDER SOMETHING ANYWAY, HERE IS WHAT TO DO
open with an apology and ask the server to go ask what the cook would prefer you to order.
Any good server will already know what the cook is hoping for and what will make their line cook go into the walk in and scream. If it's significantly less than an hour to close and they say some variant of "oh anything is fine" they are either telling the lie their boss wants them to say, or they actually do not know what their line cook wants, and you can either use human connection and a conspiratorial just-between-us tone to get them to drop the customer-is-always-right act, or get them to actually go ask the cook.
It might be as specific as "the lasagna is easiest on the kitchen" or it might be a simple guideline like "nothing that requires the flat top" or "any of the sautés are easy" but a good line cook will probably have a system for if they have to make a couple of the most popular items after they start their close, so the answer is likely to include something most people like and you should be good to order that.
but for the love of all that's holy, please only do so at great need. Leave that last 30-60 minutes to the truly desperate and the crew's duties.
