This was good! Bridge loved it, especially that it was different flavors from what we usually cook Don’t cover it unless it tells you too and don’t add extra liquid- I did and it made it too wet in the end. Fairly flavorful and not too difficult to make. Comfort food. Too sweet for me at first so I added soy sauce. Used sake instead of mirin. Would cut the sugar next time.

The speciality of every Filipino nanay– adobo. A delicious staple among Filipino households, also known as the national dish of the nation. It's tasty. It’s meaty. It’s simply delicious and heartwarming. There’s no exact recipe for the dish but it is typically marinated in a mixture of vinegar, soy sauce, and garlic. The meat varies from chicken, pork, and even seafood! Unpopular opinion: I typically enjoy dipping it in calamansi; 10/10 would recommend! Paired with white rice and soft drinks, it surely has warmed the hearts of many Filipinos. 
Adobo has been around for as long as the entire colonial history of the Philippines. It was first documented in the year 1613 by a Spaniard named Pedro de San Buenaventura but historian Raymond Sokolov asserts that the adobo recipe already existed before Ferdinand Magellan arrived in the Philippines. But because no one recorded the original name of the dish, it inherited the term adobo which came from the Spanish term adobar. Filipino natives preserved the dish by cooking and marinating it in plenty of salt and vinegar. Chinese traders later introduced soy-sauce into our culture, which replaced the salt altogether. It is important to note, however, that the Spanish adobo sauce is more spicy compared to the Filipino adobo sauce, comprised mostly of vinegar. 
The Philippines holds yearly celebrations for the dish in Negros Occidental to celebrate the beloved Filipino dish. Not only does it show Filipino appreciation for the home staple, but one of the main reasons for doing so is to celebrate the many cultural ties that Filipinos associate with the dish. However, the celebrations in the national setting do not stop there. Many Filipinos overseas, specifically in the United States, also celebrate the dish. Truly the dish reaches far and wide, into every Filipino – the symbol of our culture and identity.
Whenever I eat my mom’s specialty adobo flakes, I’m not simply tasting the delight of the marinated pork. I am living the adobo history in the making! I am part of what preserves this Filipino dish, alongside other families who enjoy their own ways of cooking and serving adobo. My mom was also in the process of preserving the historical significance of this dish when she taught me the recipe for it. Someday, I’ll also be doing the same once I have my own family.

“The Different Kinds of Kakanin”

Have you imagine the taste of sweetness, chewy and sticky snacks made by Filipinos called Kakanin? The name derived from the two Tagalog words “Kain” means to eat and “Kanin” means rice. Filipinos has a unique Kakanin recipes that span across provinces. Some Kakanin was adopted from Spaniards when they came in the Philippines, but we have to hand it to our ancestors who’ve came up with not only one, but dozens of unique Kakanin recipes.

The Puto is the mother of all Kakanin noted by Doreen Fernandez, and it is the most easily identifiable Kakanin. It is commonly white but today we had different variations. The most popular are cheese flavored and salted egg-topped puto. The puto is slightly sweetened and steamed and also can be paired with hot coffee or a good combination of puto and Dinuguan(blood stew). The best known makers of puto in Biñan are located in Barangay of San Vicente. The City renowned for “The Home of the Famous Puto in Biñan In Laguna”

In Quezon province Pichi-pichi was oriented, it is sweet and sticky , springkle with coconut and made from cassava. Biko is sweet made from rice (Malagkit) and coconut milk and topped with latik. Biko served especially during Fiesta’s, Christmas, New Year’s Eve and All Souls’ Day. Bibingka is in demand when the Christmas is near, a lot of vendors built a stall near church and sell bibingka . It is best to eat after the Holy evening mass before Christmas. And Bibingka was traditionally prepared in a clay oven heated by coal placed top and spread with butter and sprinkled with sugar and granted coconut top.
In Pangasinan province Tupig is very popular. It is covered with banana leaves and cooked in charcoal. If your a traveler and commuters a lot of vendors are passing in streets or sometimes they go up to the bus and sell Tupig to present their own version of their Kakanin. Aside from Tupig, Suman also wrapped with banana leaves and Filipinos had been making the Suman since pre-colonial times. The one of the best dessert made through bamboo tubes is Puto-bumbong it is served with cheese and granted coconut and also condensed milk, Puto-bumbong is the best to eat when hot can be eaten as meriendas.
Filipino’s had so many different version or style of Kakanin. Filipinos are unique when it comes to this dishes. Anyone can create their own kind of dessert and this undeniably one beacause in generations after generations, we are sure that all people could love Kakanin. Kakanin is made by simple ingredients from root vegetables and used banana leaves for wrapping and most of Kakanin is cooked with love and should be appreciated because it is part of our culture as a Filipino citizen. Kakanin is mostly served in different occasions such as Parties,Fiestas,and so on. From Luzon,Visayas and Mindanao they have their own recipes of Kakanin. This are just few among many different kinds of Kakanin in the Philippines.

Siargao Island in Surigao del Norte, northeastern Mindanao, is a popular tourist destination. It is one of the most popular tourist locations due to the quantity of offshore marine life, which makes it an excellent diving and fishing spot. Surfing is one of the main features of Siargao Island that attracts visitors. One of the coolest things to do in the Philippines is go surfing in Siargao. Siargao Island is the Philippines' surf capital and one of Asia's top surfing destinations. There are numerous surfing areas on the island's beaches, suitable for both beginners and experts. Cloud9 is the name of the signature break, and most resorts are within walking distance.
