Port Turkey and Mushroom Pasta

These hearty and creamy Port Turkey and Mushroom Pasta may be easy to prepare; they make a notheless tasty lunch on a busy weekday. Happy Thursday!
Ingredients (serves 4):
450 grams/1 pound whole-wheat farfalle (or penne, or both!)
1 tablespoon olive oil
300 grams/10.5 ounces turkey breast
1 ½ tablespoon unsalted butter
½ tablespoon olive oil
450 grams, one pound large chestnut mushrooms, dusted
1/2 small onion
1 garlic clove
1 teaspoon dried rosemary
1/2 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 tablespoon plain flour
2 tablespoons good quality White Port
1/2 cup semi-skimmed milk
1/2 tablespoon demerara sugar
In a large pot of salted boiling water, cook farfalle according to package’s directions, about 9 to 11 minutes until al dente.
In the meantime, heat olive oil in a large, deep skillet, over medium-high heat.
Cut turkey breast into small chunks, and add to the skillet. Cook, over medium-high heat until well browned. Transfer to a plate; set aside.
Return skillet over mdeium-high heat, and melt butter with olive oil in it.
Cut chestnut mushrooms into thick slices. Once the butter is foaming, add mushrooms to the skillet, and sauté, a couple of minutes.
Peel and chop onion and stir into the skillet, cook one minute more. Mince in garlic. Stir dried rosemary into the mushrooms. Season with fleur de sel and cracked black pepper. Reduce heat to medium. Cook, a couple of minutes more, then, sprinkle with flour. Cook out, 1 minute, and deglaze with White Port. Stir in milk, gradually, until sauce thickens. Stir in demerara sugar.
Once the pasta is cooked, drain, saving about 1/4 cup of its starchy water, and add both to the skillet. Stir well to combine and coat in sauce. 
Serve Port Turkey and Mushroom Pasta hot.

Day 7: Venice 🚌 Assisi
This is the earliest morning we’ve had yet. We need to leave the hostel at 7:45am to catch our ferry back to the port, so I’m up by about 6:25. I sneak downstairs to find an open shower and then finish packing up the last of my belongings. Breakfast is quick and rather sparse, but it’s something. Our boat picks us up a little ways down from the hostel, and we’re on our buses and officially leaving Venice by 9:00am. It’s nice to be back with our yellow group after having been divided into different groups for our hostel situation in Venice. Finally our group is getting better at our daily count-off to make sure everyone is present and accounted for (I’m number 23, or ventitré).
Nearly everyone spends the first hour or so of our bus ride sleeping, and after we make a (lengthy) stop so folks can us the restroom at small gas station/cafe, Mauro begins to talk to us about the regions of the country we’ve traversed to far. Italy is divided into about 20 regioni (regions or provinces), and each region has several communi (akin to townships). Florence is in the Toscana region (Tuscany), Venice is in Veneto, and Assisi is in Umbria. Today we are passing through the region of Emilia-Romania, where Ravenna is located along the eastern coast.
We stop in Ravenna for the afternoon on the way to Assisi. Ravenna was the capital of the Western Roman Empire until around the early fifth century. The city is known for its mosaics (made largely of glass inlaid in a mortar made from limestone and marble dust), so we are going to see a few examples in churches built around 1500 years ago.
We meet a local guide (whose name I never learn or hear mentioned) who takes us on a walking tour of Ravenna and couple of its churches. Along the walk, she talks about how many of the buildings and bell towers throughout Ravenna are leaning or sinking over time because the city is build on a foundation of sand and silt due to its location just a few miles from the coast and the mouth of the Po River (the longest river in Italy, whose valley we have been driving through this morning).
The first church we visit, Basilica di Sant’Apollinare Nuovo, was formerly the palace church for the emperor Theodoric. The ceiling and upper walls along the nave are covered in intricate mosaics depicting scenes from the Old Testament and gospel, with dozens of saints in procession toward heaven. Interestingly, many of the mosaics have been altered after the empire fell, around the late fifth/early sixth centuries. Where members of the emperor’s family used to be depicted, there are now gold walls, decorative curtains, or images of other Christian figures; faint shadows hint at the mosaics’ original composition. Our guide mentions that the floor of the church where we are standing is four feet higher or lower than it used to be (I’m rather tired and don’t ask for clarification about this detail).
Next, we walk across the city center of Ravenna to get to the Basilica di San Vitale. Along the way, we pass by the Ravenna opera, which is named for the Alleghieri family (Dante). Dante’s tomb is just down the road. (Back in Florence, I thought we’d seen Dante’s tomb in Santa Croce, but Mauro tells me this was in fact just a memorial, since his body is actually buried here in Ravenna. The Florentines have been trying for years to bring Dante’s remains back to Florence, where he was born, but to no avail.) Our guide says that Dante almost certainly wrote at least part of Paradiso here in Ravenna and that next year in 2021, Ravenna will have a celebration for the 700-year anniversary of Dante’s death.
The Basilica di San Vitale is an octagonal church, which is rare for this locale and time period. The bishop who decided to build this church was inspired by those he saw with similar designs in Constantinople. The floor, upper walls, sanctuary, and choir are covered in more mosaics. These, too, depict scenes from the gospel, parables, and symbolism of the evangelists and other important Christian figures. The central dome of the church is covered in frescoes and the walls in marble. An opening in the floor shows how close the natural water table rises beneath the church—just inches below where we’re standing. Again I’m confused about how the city has dealt with this sinking problem, but I don’t ask for clarification from our guide.
While explaining the meaning behind the various mosaics in the basilica, our guide briefly tells us about the process of making mosaics, which takes years and involves a team of specialized artists. First, the illustration must be complete, usually with direction from the bishop. Then, the illustration is translated onto the wall or space where the mosaic will live. A painter fills in the exact color for the illustration before a team of glass-layers will color-match and set the small glass tiles to comprise the final mosaic. All together, our guide says the mosaics in this church took 6-8 years to complete, while the entire building was constructed in about 20 years.
We exit the church to visit another building on the grounds: a mausoleum built for Galla Placidia. She had her tomb prepared here in Ravenna just in case she died there, but she later left to live out the rest of her life in Rome, where she died and is buried. So, this mausoleum is empty but has beautiful mosaics covering every inch of its ceiling and upper walls. They depict the evangelists and apostles, imagery from psalms, and the scene of St. Lawrence’s death by grilling.
We walk back to the main square next to a large indoor marketplace and break for a late lunch (it’s now past 2 o’clock). A staple of Ravenna is paladine, a kind of flatbread sandwich. I have one with Parma ham and some kind of stinky cheese that I pick off after a few bites. Since I didn’t have much for breakfast and we have another couple hours of bus ride ahead of us, I also get a slice of pizza from another shop.
Ravenna is a lovely town, small and much quieter than Florence or Venice. Many of the streets are paved, which is different from the cobblestones we’ve had underfoot everywhere else. One street we walk along to get back to the train station where our buses are parked reminds me of a college town with its wide boulevards and well kept trees. There doesn’t seem to be much else going on here, but it makes a nice stop for the day while we’re en route to Assisi.
Back on the bus now, Mauro tells us arriving in Assisi will be like stepping into a time machine back to 1200. It’ll take about two more hours to get there pending traffic. I use the time to catch up on writing from yesterday and today. We drive through the Appelline Mountains as the sun is setting, and it reminds me of driving through the Rockies in western Montana and Idaho on family vacations, though these mountains are more ragged and the road is elevated 50 feet in the air for long stretches at a time.
When we arrive in Assisi, we have a bit of a hike up through the town to get to our hotels (the group is split across two hotels thanks to our large numbers). Assisi is built on the side of a mountain, so all the streets are sloped. This makes for good exercise while moving throughout the city and even better views of the valley below.
We have a three-course dinner at the other group’s hotel: pasta with sausage and mushrooms, turkey stuffed with pesto and a side salad of red cabbage, and some sort of creamy fluff with fruit and cake for dessert. Bed comes easy, exhausted from the day’s travels and eager to recharge for tomorrow’s adventures.

Pasta sauce recipe from a friend of mine
- 2 Zuchini, sliced. (Optional. Tasty though.)
- Tomatoes, chopped (Use canned if you can't get fresh; they make big cans that're about fourish inches across; three of those will work. Otherwise, be prepared to prep about 20 medium tomatos.)
- 1-2 lbs Ground beef, fried in a bit of olive oil and a splash of red wine (wine is optional if you're underage/don't like it; isn't it cool how the alcohol boils off? Anyway, I usually use either masala or port.)
- Button mushrooms, some grated and some quartered (About one small box)
- Kalamata olives, quartered and pits removed (optional but tasty)
- Splash of red wine (Roughly 1/4 cup.)
- 1 White onion, minced
- Garlic, minced (Mum uses six heads; I hate garlic so I use six cloves unless they're small - so I may use one head.)
- Rosemary, chopped (a sprinkle from a jar of dried'll do)
- Salt (a pinch. A literal pinch. Martha Stewart is a bad example here.)
- Parsley, chopped (Again, a sprinkle from a jar of dried will work.)
- Chives, chopped (Optional, can be replaced with spring onions)
Mix in a pot until it looks like sauce, serve over the noodle of your choice. Except ramen. That's. No. Please don't.
Lmao, he makes for like. Four people. So expect a lot of sauce. It's really good tho??? Stuff he added after the initial message tho -
- You can swap in lamb, pork or turkey for the beef tho you may want to go for a pink wine with these for tradition's sake. He's made it with veal too which is good, never tried it with tofu but thinks it could probs be done - firm tofu would probs work better.
- It's really fluid so you can add spices if you want/swap out some stuff (like how he labelled some stuff as optional)
- It takes all day if you make it from fresh bc tomatos take f o r e v e r to boil down, that's why he suggests cans instead
- Works with meatballs or sausages, or neither, whatever suits you

I am so sorry to say that I forgot to take photos of today’s daily schedule.  On all of my previous cruises, I brought home all of the daily schedule papers so if I forgot to take any photos, or if I realized one of the photos was blurry and needed a re-do, I could flip through the pile of papers and get what I needed. This time, we were very tight on space and weight in our bags so I decided to leave all the papers behind. I thought I had taken all the photos I needed, and I almost never refer back to the originals once I get home, so why bother schlepping all of that extra weight?  Well, it looks like I did accidentally miss taking photos of the schedule for today, so I apologize for that.  
After going to sleep so early last night, I was awake at 7:15am today.  I couldn’t fall back asleep and I didn’t want to wake up DH, so I quickly got dressed, grabbed my camera, and left the cabin to walk around the ship taking lots of photos of the public spaces while they were still vacant.  I already posted all of these photos at the start of the review, so I won’t repost them here.  About an hour later, I arrived at the Solarium.  I was getting hungry so I stopped by the Aqua Spa Café for a light breakfast.  They have a bunch of options set out on individual plates, and the options remained the same for the whole cruise.

I picked out a muffin and an apricot and nut bar, and I ordered one of the juices from the menu.  This was the Purple Rain, made with blackberry, blueberry, pear, apple, and acai.  Everything was light and tasty, and it was a nice change from the breakfast I ordered from room service on all of the port days.

After my light breakfast, I continued walking around the ship, snapping more photos.  At 8:45, I went back to the elevators outside of the buffet, planning to head down to the cabin and see if DH was awake yet.  When the elevator doors opened, guess who stepped out… DH!  We had perfect timing!  I asked how he knew where to find me and he had a funny story to tell me… When he first went to look for me, he went to the MDR to see if I was eating breakfast there.  Cervine was standing at the hostess stand and she told DH she had seen me stop by at 8am when the MDR first opened so I could take some photos, and then I left. Glad to see she was keeping track of me and that she let DH know I had been there!  That’s when DH decided to go up to the buffet because he was planning to wait for me up there, assuming that I would need to eat breakfast eventually. When I ran into him, I told him that I had already eaten a light breakfast at the Aqua Spa Café.  He thought that sounded good so we went back down there so he could get something to eat.  Of course I couldn’t let him eat by himself, so I took another mini-muffin and fruit and nut bar.  I also ordered a pina kale juice, made with pineapple, kale, cucumber, and I skipped the ginger.

After breakfast #2, we went back to the cabin and relaxed on the balcony for a few hours, just gazing out at the endless ocean and watching the waves pass by.  At noon, it was time for our next feeding so we went down to the buffet for lunch.  The theme was Falafel and Kebabs, and they had a station set up with several kinds of each.

I tried 2 kinds of falafel but didn’t care for them. The lamb kebab with tzatziki sauce and hummus was quite tasty, as was the pasta and pizza of the day.

We took some dessert to go and brought it downstairs to eat by the pool.  I love red velvet cake, but this was very dry and I didn’t like it at all.  They made a huge apple pie in one of the paella pans, and that was delicious!  I was tempted to go back upstairs to get more but restrained myself.

There is a section of upright chairs and couches when you first enter the pool area on the starboard side.  Whenever we had trouble finding a vacant lounge chair, we could usually find a place to sit over here.  It was close enough to all of the action in the pool and with the DJ and activities team, but still far enough away that we could have our own little quiet corner.

We pulled 2 of the chairs to the side and relaxed there until it was time for pool volleyball.  DH really wanted to play pool volleyball, but he was disappointed to learn it is only offered this one time through the whole 2 week cruise. They have a tournament where several teams compete and the winning team goes on to then compete against a team of ship officers.  Flory was hosting the event and when he asked for volunteers to play, DH ran right over to him.  They had enough people to form 3 teams, so Flory divided the players up and DH’s team was playing in the first round.  They had a few minutes to practice, and then started the game.

DH’s team won this round, so they got out and the losing team played against the third team.  I think the third team won that round, so DH’s team got back in the pool and they played each other to determine who goes on to play against the officers.  DH’s team was really strong and they won the tournament!  They had a few minutes to rest, then Flory introduced the officers and it was time for the final round.

The teams were pretty evenly matched so the score kept going back and forth for who was in the lead, but in the end, the officers pulled away with a victory.  To be fair, they probably have more practice considering they get to play pool volleyball on every cruise, whereas the people on DH’s team likely haven’t had as much experience.  In the name of good sportsmanship, everyone walked away with a medal and Flory lead the crowd in a rousing rendition of “We Are The Champions”

Volleyball ended with just enough time for DH to get dried off before we had to go up to the Sky Lounge for music trivia.  At this point in the cruise, our teammates were counting on us showing up to help with the more current songs, so we couldn’t let them down!  There was no real theme today, just a bunch of random songs, but our team did really well. We scored 24 out of 30 points, but of course another team scored 29 points and beat us.  We were okay with that though because we were proud of our team’s performance.
After trivia, I wanted to go watch the hot glass show because this was the last one on our cruise, and DH went back to the cabin to change out of his bathing suit.  When I arrived, Tom was working on a vase with a pretty twisting pattern on the outside.

It is so impressive how these guys work together so seamlessly.  This was Tom’s project, but Jeremy jumped right in there to do the blowing work. They worked together as a team with an almost unspoken knowledge of what needed to be done.

Right around then, DH showed up with a little treat. We get drinks like this at one of our favorite restaurants at home in San Jose, so he was super excited to find it on the ship.  This was the Margarita Coronita from the new menu at the Sunset Bar, and DH drew a lot of attention as he carried it over to the hot glass area, with everyone wanting to know what that was and where he got it lol

At the end of the show, the gaffers raffled off 4 of the pieces they made during the cruise.  Since the next cruise would be the last one with the Corning Museum on the Eclipse, they wanted to clean out some of the older projects.  I really hoped we could win one of these because they were all so beautiful, but unfortunately, we were not that lucky. The man sitting right next to me did win, so I was close, but not close enough!  This would have made an incredible souvenir to bring home from the cruise.

There is a funny story about that larger piece on the far right side.  That is a giant bowl with an irregular shape.  Tom gave a disclaimer when he picked that piece to be part of the raffle. They usually give out some bubble wrap to protect the pieces for transport home, but he warned us that the larger piece would not survive airline travel.  He said he normally puts a piece that large into a crate for special shipping, and that if we were flying home after the cruise, we could not have that piece.  He said that if the first 3 tickets he pulls belong to people who are flying home, they must pick the 3 vases, and then he would do another raffle for only the people traveling by car to try to win that large piece.  As it turned out, the very first ticket he picked belonged to a lady who lives in Florida, would be driving home from the cruise, and who really wanted that big piece! It was fate for her to get it!  I would love to see how she put that on display in her home because it was really quite large and heavy!
Tonight was our last Elegant Chic night, so after the raffle ended, we went back to the cabin to get ready.

After a quick photo shoot outside the entrance to Blu, we went to the World Class Bar for a few pre-dinner drinks.  DH had the Zacapa Old Fashioned and I had the Celebrity No. Ten.  I love how it worked out that they are on the same page of the menu for easy photographing hehe

We skipped dessert tonight because we wanted to hear Back Before Sunset playing in the Grand Foyer.  They always put on a lively set that is worth checking out.

On most cruises, they do one of the big production shows on formal nights.  Eddy said that he likes to save that for the last night of the cruise to end on a high note, so tonight’s show was more subdued.  It featured the 6 core singers from the shows, each singing a Broadway showtune of their choosing, backed by the Eclipse Orchestra.  As I’ve already mentioned, we are big fans of Broadway shows, so we were looking forward to this performance.  They all have wonderful voices so it was great to see them show it off!  They sang songs from Motown, Les Mis, Cabaret, Guys and Dolls, Jersey Boys, and a few others.

The ladies sang a “Single Girl’s Medley” where each sang one of these songs:  On My Own from Les Mis, Maybe This Time from Cabaret, and I Don’t Know How to Love Him from Jesus Christ Superstar.

After the show ended, they had another event called the Liar’s Club.  This is a game hosted by one of the women from the activities team, and the contestants are Eddy, Captain Leo, and the comedian from last night’s show, Dan Wilson. They pick a word that most people have never heard of, but it is really a real word, and the 3 contestants try to convince the audience of what the definition is.  After all 3 have had a chance to say what they think the word means, the audience votes by applause as to who we think said the correct definition, and then they reveal who really got it right.  They used 4 different words, and the contestants did everything from just stating “oh, I know that word, the definition is ****”, to telling a big long-winded story to explain the meaning of the word.  Some of their replies were funnier than others, but it was a clever game and we learned a few new words in the process!

The show ended around 11pm, and we went back to the cabin to rest up for our last full day of the cruise.

AUGUSTA, MAINE — This week, the Boston Globe tells the story of the Red Barn in Augusta, which bounced back from financial struggles by offering free food and donating proceeds to charity. Through the process of giving away money, owner Laura Benedict began to make it back and has been able to keep the restaurant running — and it’s become an institution.
PORTLAND, MAINE — Two Fat Cats Bakery(47 India St.) opens its second location on April 14 at 740 Broadway in South Portland, featuring the same menu of pies, pastries, and more sweet treats as at the India Street location, but this one will have ample seating for patrons. On opening day, the bakery will be offering free slices of cake while supplies last and will donate a portion of its proceeds from the day’s pie sales to the South Portland Food Cupboard.
The long-planned Lio (3 Spring St.)— from chef Cara Stadler and her mother, Cecile, who are also behind BaoBao Dumpling House (Portland) and Tao Yuan (Brunswick) — is under construction. When it opens, the restaurant will have a heavy focus on wine, and its menu will change daily based on available ingredients.
Paciarino (470 Fore St.)will open a new location in the former Zapoteca space down the street at 505 Fore St. Owners Enrico Barbiero and Fabiana de Savino plan to serve the restaurant’s pasta, brick oven pizza, and other Italian classics at the new space, while converting the original location into a retail space. The new Paciarino is slated for a May opening.

DANBURY, CONNECTICUT — Barrister’s Coffee Co.(1 West St.) opened earlier this year, and it serves coffee and tea, plus pastries, bagels, and baked goods brought in from New York. The shop is spacious with seating at tables, in leather chairs, and in cubicle nooks.
GORHAM, MAINE — Portland’s Bier Cellar, which has been around since 2012, now has a second location in the works for 593 Main St. in Gorham. “We are incredibly excited to bring our love of beer, wine, cider and mead to the rapidly growing community of Gorham,” the owners wrote in a blog post on the website. “We want to be a part of making Gorham a craft beer mecca just like we have watched the City Of Portland became one of the best craft beer destinations in the United States since we opened in 2012.”
PORTLAND, MAINE — Kittery’s famous Bob’s Clam Hut is in the process of expanding to Portland, at 109 Cumberland Ave. The restaurant has been in business since 1956, and owner Michael Landgarten hopes to open the new location in time for summer. Bob’s is known for its fried seafood baskets, fish sandwiches, burgers, and sides.
Union Bagel Co. opened a second location in the East Deering neighborhood of Portland (46 Veranda St.), serving its familiar variety of bagels, spreads, and breakfast sandwiches. The restaurant also offers vegan spreads.
PROVIDENCE, RHODE ISLAND — “It’s time to meet the waffle of your dreams,” and Providence’s Waffle(45 Weybosset St.) is ready for introductions. The restaurant, which opened about two months ago, serves a variety of waffles, including liege-style, gluten-free, and in the form of ice cream sandwiches. There’s also a pizza waffle topped with marinara sauce, cheese, crushed red pepper, and basil.
The Lotus Garden (223 Atwells Ave.) is open in Federal Hill with a selection of Southeast Asian dishes, including pho, sushi, stir fry noodles, rice bowls, and more. The restaurant also offers cocktails, beer, and wine.
SEABROOK, NEW HAMPSHIRE — Brown’s Lobster Pound(407 State Rd. 286) at long last has reopened following a fire in August 2017. This week, the restaurant will operate Friday, Saturday, and Sunday (April 6, 7, and 8), and then starting April 13, Brown’s will be open for the summer season, per a post on Facebook. Brown’s first opened in 1950 and serves a menu of fried seafood boxes and platters, sandwiches, and more.
WETHERSFIELD, CONNECTICUT — Kaliubon Ramenis now open at 1323 Silas Deane Hwy., serving a menu of shoyu, tonkotsu, and miso ramen, along with assorted bao filled with pork, lamb, or tofu. There are also wings, dumplings, lettuce wraps, and salad.

HOPKINTON, NEW HAMPSHIRE — Lakehouse Tavern (157 Main St.) has opened with some sustainable practices in place. In addition to serving a broad selection of dishes ranging from wings and lobster fritters to wraps, sandwiches, burgers, and steaks, the restaurant roasts its own turkey, ham, and prime rib and recycles its cooking oil with Newport Biodiesel.
PORTLAND, MAINE — A restaurant and bar at the Danforth Inn (163 Danforth St.) will close at the end of the month, as the business prepares to file for bankruptcy, per the Portland Press Herald. Tempo Dulu and Opium — the restaurant and bar, respectively — shut down for good on March 31. Co-owner Raymond Brunyanszki cited the niche of the Southeast Asian restaurant as a contributing factor to the closure, along with profitability. Opium also drew ire for its name upon opening. When the business makes it through the bankruptcy filing, the bar will resume operation, perhaps under a new name.

Ice It Bakery (502 Stevens Ave.) now has a new location up and running to go along with its original location in Yarmouth, Maine. The bakery serves specialty cupcakes, cookies, pastries, coffee cakes, and gluten-free concoctions, and it offers decorating parties for kids.
Sagamore Hill(150 Park St.) is coming to Portland with the spirit of Teddy Roosevelt. The restaurant takes its name from an area of New York the president called home. The space is currently under construction, and when it opens it will accommodate 100 people inside with 40 on a patio outdoors.
SEBAGO, MAINE — Sportsman’s Kitchen & Keg (46 Sebago Rd.) is on the way to Sebago Lake, courtesy of father-and-son team Paul and Rocco Severino, slated for a summer 2018 opening. The restaurant labels itself an “homage to Portland’s old Sportsman’s Grill,” which previously operated at 905-911 Congress St., according to the Portland Food Map.

BIDDEFORD, MAINE — A new arm of the Big Tree Hospitality group — which runs the acclaimed Eventide restaurants, Hugo’s, and The Honey Paw — has made its official debut. Little Spruce Baking Co.has taken croissants to a new level, appearing at Elements: Books, Coffee, Beer (265 Main St.) in Biddeford on Fridays, Saturdays, and Sundays, along with the Saco River Farmers Market on Saturdays. There are several types of croissants available, most notably a pizza version made with tomato jam, ricotta, and pepperoni. There’s also a Moonstruck version with egg, mushroom, and mustard greens, a PB&J version, and more.

AUGUSTA, MAINE — This week, the Boston Globe tells the story of the Red Barn in Augusta, which bounced back from financial struggles by offering free food and donating proceeds to charity. Through the process of giving away money, owner Laura Benedict began to make it back and has been able to keep the restaurant running — and it’s become an institution.
PORTLAND, MAINE — Two Fat Cats Bakery(47 India St.) opens its second location on April 14 at 740 Broadway in South Portland, featuring the same menu of pies, pastries, and more sweet treats as at the India Street location, but this one will have ample seating for patrons. On opening day, the bakery will be offering free slices of cake while supplies last and will donate a portion of its proceeds from the day’s pie sales to the South Portland Food Cupboard.
The long-planned Lio (3 Spring St.)— from chef Cara Stadler and her mother, Cecile, who are also behind BaoBao Dumpling House (Portland) and Tao Yuan (Brunswick) — is under construction. When it opens, the restaurant will have a heavy focus on wine, and its menu will change daily based on available ingredients.
Paciarino (470 Fore St.)will open a new location in the former Zapoteca space down the street at 505 Fore St. Owners Enrico Barbiero and Fabiana de Savino plan to serve the restaurant’s pasta, brick oven pizza, and other Italian classics at the new space, while converting the original location into a retail space. The new Paciarino is slated for a May opening.

A Portland Bakery Adds a Second Location This Weekend, and There Will Be Free Cake
And other regional food and beverage updates from New England, beyond the borders of Massachusetts
Broadening the scope a bit, here’s the latest restaurant news from beyond Massachusetts; we’re keeping an eye out for dining developments throughout the rest of New England. This piece is updated on a weekly basis, covering restaurant openings, closures, and more in Portsmouth, Providence, Portland, and elsewhere. (Find the archive of winter 2017-2018 news here.)

AUGUSTA, MAINE — This week, the Boston Globe tells the story of the Red Barn in Augusta, which bounced back from financial struggles by offering free food and donating proceeds to charity. Through the process of giving away money, owner Laura Benedict began to make it back and has been able to keep the restaurant running — and it’s become an institution.
PORTLAND, MAINE — Two Fat Cats Bakery(47 India St.) opens its second location on April 14 at 740 Broadway in South Portland, featuring the same menu of pies, pastries, and more sweet treats as at the India Street location, but this one will have ample seating for patrons. On opening day, the bakery will be offering free slices of cake while supplies last and will donate a portion of its proceeds from the day’s pie sales to the South Portland Food Cupboard.
The long-planned Lio (3 Spring St.)— from chef Cara Stadler and her mother, Cecile, who are also behind BaoBao Dumpling House (Portland) and Tao Yuan (Brunswick) — is under construction. When it opens, the restaurant will have a heavy focus on wine, and its menu will change daily based on available ingredients.
Paciarino (470 Fore St.)will open a new location in the former Zapoteca space down the street at 505 Fore St. Owners Enrico Barbiero and Fabiana de Savino plan to serve the restaurant’s pasta, brick oven pizza, and other Italian classics at the new space, while converting the original location into a retail space. The new Paciarino is slated for a May opening.

DANBURY, CONNECTICUT — Barrister’s Coffee Co.(1 West St.) opened earlier this year, and it serves coffee and tea, plus pastries, bagels, and baked goods brought in from New York. The shop is spacious with seating at tables, in leather chairs, and in cubicle nooks.
GORHAM, MAINE — Portland’s Bier Cellar, which has been around since 2012, now has a second location in the works for 593 Main St. in Gorham. “We are incredibly excited to bring our love of beer, wine, cider and mead to the rapidly growing community of Gorham,” the owners wrote in a blog post on the website. “We want to be a part of making Gorham a craft beer mecca just like we have watched the City Of Portland became one of the best craft beer destinations in the United States since we opened in 2012.”
PORTLAND, MAINE — Kittery’s famous Bob’s Clam Hut is in the process of expanding to Portland, at 109 Cumberland Ave. The restaurant has been in business since 1956, and owner Michael Landgarten hopes to open the new location in time for summer. Bob’s is known for its fried seafood baskets, fish sandwiches, burgers, and sides.
Union Bagel Co. opened a second location in the East Deering neighborhood of Portland (46 Veranda St.), serving its familiar variety of bagels, spreads, and breakfast sandwiches. The restaurant also offers vegan spreads.
PROVIDENCE, RHODE ISLAND — “It’s time to meet the waffle of your dreams,” and Providence’s Waffle(45 Weybosset St.) is ready for introductions. The restaurant, which opened about two months ago, serves a variety of waffles, including liege-style, gluten-free, and in the form of ice cream sandwiches. There’s also a pizza waffle topped with marinara sauce, cheese, crushed red pepper, and basil.
The Lotus Garden (223 Atwells Ave.) is open in Federal Hill with a selection of Southeast Asian dishes, including pho, sushi, stir fry noodles, rice bowls, and more. The restaurant also offers cocktails, beer, and wine.
SEABROOK, NEW HAMPSHIRE — Brown’s Lobster Pound(407 State Rd. 286) at long last has reopened following a fire in August 2017. This week, the restaurant will operate Friday, Saturday, and Sunday (April 6, 7, and 8), and then starting April 13, Brown’s will be open for the summer season, per a post on Facebook. Brown’s first opened in 1950 and serves a menu of fried seafood boxes and platters, sandwiches, and more.
WETHERSFIELD, CONNECTICUT — Kaliubon Ramenis now open at 1323 Silas Deane Hwy., serving a menu of shoyu, tonkotsu, and miso ramen, along with assorted bao filled with pork, lamb, or tofu. There are also wings, dumplings, lettuce wraps, and salad.

HOPKINTON, NEW HAMPSHIRE — Lakehouse Tavern (157 Main St.) has opened with some sustainable practices in place. In addition to serving a broad selection of dishes ranging from wings and lobster fritters to wraps, sandwiches, burgers, and steaks, the restaurant roasts its own turkey, ham, and prime rib and recycles its cooking oil with Newport Biodiesel.
PORTLAND, MAINE — A restaurant and bar at the Danforth Inn (163 Danforth St.) will close at the end of the month, as the business prepares to file for bankruptcy, per the Portland Press Herald. Tempo Dulu and Opium — the restaurant and bar, respectively — shut down for good on March 31. Co-owner Raymond Brunyanszki cited the niche of the Southeast Asian restaurant as a contributing factor to the closure, along with profitability. Opium also drew ire for its name upon opening. When the business makes it through the bankruptcy filing, the bar will resume operation, perhaps under a new name.

Sagamore Hill(150 Park St.) is coming to Portland with the spirit of Teddy Roosevelt. The restaurant takes its name from an area of New York the president called home. The space is currently under construction, and when it opens it will accommodate 100 people inside with 40 on a patio outdoors.
SEBAGO, MAINE — Sportsman’s Kitchen & Keg (46 Sebago Rd.) is on the way to Sebago Lake, courtesy of father-and-son team Paul and Rocco Severino, slated for a summer 2018 opening. The restaurant labels itself an “homage to Portland’s old Sportsman’s Grill,” which previously operated at 905-911 Congress St., according to the Portland Food Map.

BIDDEFORD, MAINE — A new arm of the Big Tree Hospitality group — which runs the acclaimed Eventide restaurants, Hugo’s, and The Honey Paw — has made its official debut. Little Spruce Baking Co.has taken croissants to a new level, appearing at Elements: Books, Coffee, Beer (265 Main St.) in Biddeford on Fridays, Saturdays, and Sundays, along with the Saco River Farmers Market on Saturdays. There are several types of croissants available, most notably a pizza version made with tomato jam, ricotta, and pepperoni. There’s also a Moonstruck version with egg, mushroom, and mustard greens, a PB&J version, and more.

Sagamore Hill(150 Park St.) is coming to Portland with the spirit of Teddy Roosevelt. The restaurant takes its name from an area of New York the president called home. The space is currently under construction, and when it opens it will accommodate 100 people inside with 40 on a patio outdoors.
SEBAGO, MAINE — Sportsman’s Kitchen & Keg (46 Sebago Rd.) is on the way to Sebago Lake, courtesy of father-and-son team Paul and Rocco Severino, slated for a summer 2018 opening. The restaurant labels itself an “homage to Portland’s old Sportsman’s Grill,” which previously operated at 905-911 Congress St., according to the Portland Food Map.

Little Spruce Baking Co.has taken croissants to a new level, appearing at Elements: Books, Coffee, Beer (265 Main St.) in Biddeford on Fridays, Saturdays, and Sundays, along with the Saco River Farmers Market on Saturdays. There are several types of croissants available, most notably a pizza version made with tomato jam, ricotta, and pepperoni. There’s also a Moonstruck version with egg, mushroom, and mustard greens, a PB&J version, and more.

Broadening the scope a bit, here’s the latest restaurant news from beyond Massachusetts; we’re keeping an eye out for dining developments throughout the rest of New England. AUGUSTA, MAINE — This week, the Boston Globe tells the story of the Red Barn in Augusta, which bounced back from financial struggles by offering free food and donating proceeds to charity. Through the process of giving away money, owner Laura Benedict began to make it back and has been able to keep the restaurant running — and it’s become an institution.
PORTLAND, MAINE — Two Fat Cats Bakery(47 India St.) opens its second location on April 14 at 740 Broadway in South Portland, featuring the same menu of pies, pastries, and more sweet treats as at the India Street location, but this one will have ample seating for patrons. On opening day, the bakery will be offering free slices of cake while supplies last and will donate a portion of its proceeds from the day’s pie sales to the South Portland Food Cupboard.
The long-planned Lio (3 Spring St.)— from chef Cara Stadler and her mother, Cecile, who are also behind BaoBao Dumpling House (Portland) and Tao Yuan (Brunswick) — is under construction. When it opens, the restaurant will have a heavy focus on wine, and its menu will change daily based on available ingredients.
Paciarino (470 Fore St.)will open a new location in the former Zapoteca space down the street at 505 Fore St. Owners Enrico Barbiero and Fabiana de Savino plan to serve the restaurant’s pasta, brick oven pizza, and other Italian classics at the new space, while converting the original location into a retail space. The new Paciarino is slated for a May opening.

DANBURY, CONNECTICUT — Barrister’s Coffee Co.(1 West St.) opened earlier this year, and it serves coffee and tea, plus pastries, bagels, and baked goods brought in from New York. The shop is spacious with seating at tables, in leather chairs, and in cubicle nooks.
GORHAM, MAINE — Portland’s Bier Cellar, which has been around since 2012, now has a second location in the works for 593 Main St. in Gorham. “We are incredibly excited to bring our love of beer, wine, cider and mead to the rapidly growing community of Gorham,” the owners wrote in a blog post on the website. “We want to be a part of making Gorham a craft beer mecca just like we have watched the City Of Portland became one of the best craft beer destinations in the United States since we opened in 2012.”
PORTLAND, MAINE — Kittery’s famous Bob’s Clam Hut is in the process of expanding to Portland, at 109 Cumberland Ave. The restaurant has been in business since 1956, and owner Michael Landgarten hopes to open the new location in time for summer. Bob’s is known for its fried seafood baskets, fish sandwiches, burgers, and sides.
Union Bagel Co. opened a second location in the East Deering neighborhood of Portland (46 Veranda St.), serving its familiar variety of bagels, spreads, and breakfast sandwiches. The restaurant also offers vegan spreads.
PROVIDENCE, RHODE ISLAND — “It’s time to meet the waffle of your dreams,” and Providence’s Waffle(45 Weybosset St.) is ready for introductions. The restaurant, which opened about two months ago, serves a variety of waffles, including liege-style, gluten-free, and in the form of ice cream sandwiches. There’s also a pizza waffle topped with marinara sauce, cheese, crushed red pepper, and basil.
The Lotus Garden (223 Atwells Ave.) is open in Federal Hill with a selection of Southeast Asian dishes, including pho, sushi, stir fry noodles, rice bowls, and more. The restaurant also offers cocktails, beer, and wine.
SEABROOK, NEW HAMPSHIRE — Brown’s Lobster Pound(407 State Rd. 286) at long last has reopened following a fire in August 2017. This week, the restaurant will operate Friday, Saturday, and Sunday (April 6, 7, and 8), and then starting April 13, Brown’s will be open for the summer season, per a post on Facebook. Brown’s first opened in 1950 and serves a menu of fried seafood boxes and platters, sandwiches, and more.
WETHERSFIELD, CONNECTICUT — Kaliubon Ramenis now open at 1323 Silas Deane Hwy., serving a menu of shoyu, tonkotsu, and miso ramen, along with assorted bao filled with pork, lamb, or tofu. There are also wings, dumplings, lettuce wraps, and salad.

PORTLAND, MAINE — Two Fat Cats Bakery(47 India St.) opens its second location on April 14 at 740 Broadway in South Portland, featuring the same menu of pies, pastries, and more sweet treats as at the India Street location, but this one will have ample seating for patrons. On opening day, the bakery will be offering free slices of cake while supplies last and will donate a portion of its proceeds from the day’s pie sales to the South Portland Food Cupboard.
The long-planned Lio (3 Spring St.)— from chef Cara Stadler and her mother, Cecile, who are also behind BaoBao Dumpling House (Portland) and Tao Yuan (Brunswick) — is under construction. When it opens, the restaurant will have a heavy focus on wine, and its menu will change daily based on available ingredients.
Paciarino (470 Fore St.)will open a new location in the former Zapoteca space down the street at 505 Fore St. Owners Enrico Barbiero and Fabiana de Savino plan to serve the restaurant’s pasta, brick oven pizza, and other Italian classics at the new space, while converting the original location into a retail space. The new Paciarino is slated for a May opening.

GORHAM, MAINE — Portland’s Bier Cellar, which has been around since 2012, now has a second location in the works for 593 Main St. in Gorham. “We are incredibly excited to bring our love of beer, wine, cider and mead to the rapidly growing community of Gorham,” the owners wrote in a blog post on the website. “We want to be a part of making Gorham a craft beer mecca just like we have watched the City Of Portland became one of the best craft beer destinations in the United States since we opened in 2012.”
PORTLAND, MAINE — Kittery’s famous Bob’s Clam Hut is in the process of expanding to Portland, at 109 Cumberland Ave. The restaurant has been in business since 1956, and owner Michael Landgarten hopes to open the new location in time for summer. Union Bagel Co. opened a second location in the East Deering neighborhood of Portland (46 Veranda St.), serving its familiar variety of bagels, spreads, and breakfast sandwiches. The restaurant also offers vegan spreads.
PROVIDENCE, RHODE ISLAND — “It’s time to meet the waffle of your dreams,” and Providence’s Waffle(45 Weybosset St.) is ready for introductions. The restaurant, which opened about two months ago, serves a variety of waffles, including liege-style, gluten-free, and in the form of ice cream sandwiches. There’s also a pizza waffle topped with marinara sauce, cheese, crushed red pepper, and basil.
The Lotus Garden (223 Atwells Ave.) is open in Federal Hill with a selection of Southeast Asian dishes, including pho, sushi, stir fry noodles, rice bowls, and more. The restaurant also offers cocktails, beer, and wine.
SEABROOK, NEW HAMPSHIRE — Brown’s Lobster Pound(407 State Rd. 286) at long last has reopened following a fire in August 2017. This week, the restaurant will operate Friday, Saturday, and Sunday (April 6, 7, and 8), and then starting April 13, Brown’s will be open for the summer season, per a post on Facebook. Brown’s first opened in 1950 and serves a menu of fried seafood boxes and platters, sandwiches, and more.
WETHERSFIELD, CONNECTICUT — Kaliubon Ramenis now open at 1323 Silas Deane Hwy., serving a menu of shoyu, tonkotsu, and miso ramen, along with assorted bao filled with pork, lamb, or tofu. There are also wings, dumplings, lettuce wraps, and salad.

In addition to serving a broad selection of dishes ranging from wings and lobster fritters to wraps, sandwiches, burgers, and steaks, the restaurant roasts its own turkey, ham, and prime rib and recycles its cooking oil with Newport Biodiesel.
PORTLAND, MAINE — A restaurant and bar at the Danforth Inn (163 Danforth St.) will close at the end of the month, as the business prepares to file for bankruptcy, per the Portland Press Herald. Tempo Dulu and Opium — the restaurant and bar, respectively — shut down for good on March 31. Co-owner Raymond Brunyanszki cited the niche of the Southeast Asian restaurant as a contributing factor to the closure, along with profitability. Opium also drew ire for its name upon opening. When the business makes it through the bankruptcy filing, the bar will resume operation, perhaps under a new name.

SEBAGO, MAINE — Sportsman’s Kitchen & Keg (46 Sebago Rd.) is on the way to Sebago Lake, courtesy of father-and-son team Paul and Rocco Severino, slated for a summer 2018 opening. BIDDEFORD, MAINE — A new arm of the Big Tree Hospitality group — which runs the acclaimed Eventide restaurants, Hugo’s, and The Honey Paw — has made its official debut. Little Spruce Baking Co.has taken croissants to a new level, appearing at Elements: Books, Coffee, Beer (265 Main St.) in Biddeford on Fridays, Saturdays, and Sundays, along with the Saco River Farmers Market on Saturdays. There are several types of croissants available, most notably a pizza version made with tomato jam, ricotta, and pepperoni. There’s also a Moonstruck version with egg, mushroom, and mustard greens, a PB&J version, and more.

Ice It Bakery (502 Stevens Ave.) now has a new location up and running to go along with its original location in Yarmouth, Maine. The bakery serves specialty cupcakes, cookies, pastries, coffee cakes, and gluten-free concoctions, and it offers decorating parties for kids.
Sagamore Hill(150 Park St.) is coming to Portland with the spirit of Teddy Roosevelt. The restaurant takes its name from an area of New York the president called home. The space is currently under construction, and when it opens it will accommodate 100 people inside with 40 on a patio outdoors.
SEBAGO, MAINE — Sportsman’s Kitchen & Keg (46 Sebago Rd.) is on the way to Sebago Lake, courtesy of father-and-son team Paul and Rocco Severino, slated for a summer 2018 opening. The restaurant labels itself an “homage to Portland’s old Sportsman’s Grill,” which previously operated at 905-911 Congress St., according to the Portland Food Map.

BIDDEFORD, MAINE — A new arm of the Big Tree Hospitality group — which runs the acclaimed Eventide restaurants, Hugo’s, and The Honey Paw — has made its official debut. Little Spruce Baking Co.has taken croissants to a new level, appearing at Elements: Books, Coffee, Beer (265 Main St.) in Biddeford on Fridays, Saturdays, and Sundays, along with the Saco River Farmers Market on Saturdays. There are several types of croissants available, most notably a pizza version made with tomato jam, ricotta, and pepperoni. There’s also a Moonstruck version with egg, mushroom, and mustard greens, a PB&J version, and more.
PORTLAND, MAINE — Black Cow(83 Exchange St.) is now open in the former Sonny’s space in Old Port, from the same team, featuring burgers and shakes.
PORTSMOUTH, NEW HAMPSHIRE — Cup of Joe (31 Market St.) has opened in Portsmouth with a lengthy lineup of beverages, pastries, and other snacks. The shop serves all kinds of coffees and espresso beverages, plus kombucha on tap, chai lattes, and more.
SACO, MAINE — The Lady and the Mensch (172 Main St.) has a selection of cocktails, craft beer, and more on the menu in Saco. The recent opening is pegged as a community hangout spot, with a lounge area and a central location in the neighborhood.
YORK, MAINE — First Hill Restaurant (369 US Rte 1.) is now open in York and serving a varied menu including brunch. Dishes range from avocado toast and a Greek yogurt waffle to salmon burgers, sticky Thai fried chicken, and steamed mussels.
