Honey Fig and Dried Fruit Rum Baba

Our New Year’s Day lunch ended gloriously, with this beautifully risen, perfectly soaked Honey Fig and Dried Fruit Rum Baba, crowned with drunk dried fruit and honey gazed figs; a delicious start to 2023!!! I wish you all a very Happy New Year!!
Ingredients (makes 4):
1/2 cup soft dried apricots
1/4 cup sultanas
1/4 cup almonds
1 cup good white rum (like Guadeloupe’s Damoiseau)
220 grams/8 ounces strong white flour
50 grams/1.75 ounce caster sugar
1 tablespoon active dry yeast
½ teaspoon salt
2 large eggs
¼ cup milk
100 grams/ 3.5 ounces unsalted butter, at room temperature
1/4 cup caster sugar
2 heaped tablespoons pure local honey
1 cup water
½ cup double cream
1 tablespoon unsalted butter
6 or 7 fresh figs, rinsed
1 heaped teaspoon pure local honey
The day before, chop dried apricots. Combine, in a medium bowl, with sultanas and almonds. Pour white rum over dried fruits and cover wit cling film. Let infuse overnight.
In a large bowl, combine strong white flour, caster sugar, yeast and salt, making sure you don’t put the salt on top of the yeast, as it might kill it. Give a good stir; set aside.
In a smaller bowl, whisk the eggs and the milk together until well-blended.
With a wooden spoon, gradually stir egg mixture into flour mixture, until a soft, sticky dough forms. Tip dough out onto a lightly floured surface, and knead, a good 10 minutes, until dough becomes smoother. Then, gradually knead in softened butter, until you have an elastic, shiny dough. Return to the bowl, and cover with a tea towel. Prove, one hour, or until doubled in size.
Generously butter a 20cm/8” baba tin.
Once proved, knock back the air, and spoon dough into a piping bag. Pipe dough prepared tin. Prove again, until doubled in size.
Preheat oven to 180°C/355°F.
Once the baba has risen, place in the middle of the warm oven, and bake, 25 to 30 minutes at 180°C/355°F, until a nice golden brown colour.
Drain rum-soaked, plumped-up dried fruit in a fine mesh sieve. Keep the fruit for later.
Whilst baba is baking, combine demerara sugar, honey, 3/4 of the dried-fruit-infused rum and water in a large saucepan, and heat over medium-high heat, stirring until sugar and honey have completely dissolved. Boil rapidly, a couple of minutes. Remove from the heat and stir in remaining dried-fruit-infused rum. Cover with a lid.
When the baba is baked, remove from the oven, and let cool, 15 minutes, before gently releasing from the tin. Then, carefully soak the sponge in the warm rum syrup, gently turning it to soak evenly. Gently lift out of the saucepan, and transfer to serving plate; set aside. Keep about a couple of tablespoons of the dried fruit rum syrup.
Let rum-soaked sponge cool at room temperature.
Drizzle reserved rum-soaked dried fruit with two tablespoons of the remaining rum syrup, to coat and glaze.
In a medium bowl, beat double cream with an electric beater until soft peaks form. Add four tablespoons cooled rum syrup, and continue beating until stiff peaks just form. Gently fold in three-quarters of the rum-soaked dried fruit. Set aside.
Melt butter in a small frying pan. Halve figs. Add to the butter when it is just foaming, and sauté, a couple of minutes. Drizzle with honey, and cook, a few minutes more until just glazed.
To serve, spoon Rum-soaked dried fruit whipped cream  in the centre of cooled baba. Garnish with honey fig halves and remaining rum-soaked dried fruits.
Enjoy Honey Fig and Dried Fruit Rum Baba immediately.

You like baking, right? What have you done recently? Any favorites you like to make but not eat or vice versa? (respite from "discourse") ;)

I do, but my oven has been broken for months. The top of the stove still works, so I haven't replaced it yet.
I enjoy making scones. Probably my favorite recipe is an almond cake with whipped egg whites as a raising agent and an orange booze sauce. I presume it's originally Medieval given the eggs, but I got it from The Foods and Wines of Spain.
I don't really make anything I don't like to eat. For things I want someone else to make... I'd say galaktoboureko and anything similar from the regions that's eaten in. Filo is way too fiddly! I once made a rum baba for a Victorian dinner party, and it was pretty fun, but I think I'll generally leave double-rising cakes to the professionals.

Appetizer: Bruschetta
Every Italian region has its own bruschetta recipe that starts with a slice of homemade crunchy bread seasoned with extra virgin olive oil and salt, and enriched by unique ingredients. The girls went for the all time classic with a wheat bread as the base, ripen tomatoes, fresh basil leaves, mozzarella and garlic. 
Main dish: Eggplant parmigiana
(Parmigiana di Melanzane in Italian) has layers of eggplant, tomato sauce, basil and cheese, baked until bubbly. Think of Eggplant Parmigiana as a pasta-less vegetarian Lasagna, made with thin slices of eggplant instead of pasta, layered with tomato sauce, fresh basil and plenty of molten cheese. Due to the dietary restrictions the classic parmesan and mozzarella required for the recipe were switched to vegan cashew parmesan and vegan mozzarella with as delicious results
Dessert: Baba Napoletano
Babà al rum are delicious sponge cakes soaked in a sticky, citrus-scented boozy syrup with a rum base.  The Neapolitan Baba is an amazing cake in its simplicity. Once done it can be paired with whipped cream and fresh fruits.

A distant, richer cousin to the brioche, baba au rhum is a cylinder-shaped, buttery, raisin-filled yeast dough cake soaked in sugar syrup flavored with rum. - We open this week with a shot of The Ring set, now with the halls fully decked for the holiday season. An aluminum Christmas tree complete with color wheel, melted plastic popcorn wall hangings, bubble lights, and blow molds covered the stage. Daphne Oz, Veda Scott, Sam Leterna, and Alyssa Marino entered and made their way to the desk. In the middle of the desk was a mountain of Christmas cards. Our hosts welcomed us in and began discussing Christmas cards and how you never know what to do with them, you feel too guilty to throw them away but what do you do with all the cards you save? Veda Scott shared some tips on how to up-cycle your old cards, such as making a DIY notebook or unique handmade ornaments and gift tags.

folkstyle (Shaw Mason and Hunter Holdcraft) vs. The Andersons (Brock Anderson and CW Anderson) - With his team in trouble, Brock Anderson retrieved an international object from his tights, wrapped it around his left hand, and took a swing at Hunter Holdcraft. Holdcraft ducked the blow and floored Brock with a gutwrench suplex which sent the object flying to the mat. Holdcraft eyed the object, debated picking it up to give Brock a taste of his own medicine, but instead kicked it out of the ring. This hesitation allowed Brock to tag in CW Anderson and Holdcraft turned around into a spinebuster. Anderson went for the cover but Shaw Mason made the save. Mason was tagged in and applied the ankle lock to CW until he tapped out. folkstyle defeated The Andersons via submission with an ankle lock from Mason on CW Anderson

- Daphne Oz welcomed us back inside The Ring and brought us over to the kitchen set where she wanted to share some of her favorite holiday cocktails. First Daphne showed us how to make Hot Buttered Rum. Daphne then shared her recipe for homemade eggnog. Next Daphne mixed up a Brandy Alexander, not to be confused with former pro-wrestler Brandi Alexander. Finally Daphne began to give her tips for making the perfect Christmas Punch, but realized she'd need someone to help her drink all these cocktails. Daphne brought out special guests Kerry Morton, Silas Mason, and Alex Taylor of the Southern 6. Taylor had a match next and his partner Starboy Charlie walked onto the set to discourage him from drinking. That wasn't an issue as Kerry and Silas quickly downed all the mixed drinks and even broke into the spirits Daphne had set aside for her punch. A visibly inebriated Kerry Morton called out The 37KAMIINA and said the Southern 6 want the match with them on Christmas night in Bethlehem.

Starboy Charlie and Alex Taylor vs. Giant Baba Yaga and Fuego Del Sol - Giant Baba Yaga and Fuego Del Sol showed off their impressive tag team skills, isolating Starboy Charlie which caused Alex Taylor to get increasingly frustrated on the apron. When they cut Charlie off yet again, Alex Taylor threw his hands in the air and walked back toward The Ring set to enjoy some punch with The Southern 6. Halfway there Alex Taylor was intercepted by Marcus Mathers who dragged him back toward the ring just in time for Starboy to make the tag. Alex Taylor soon fell to the running neckbreaker from Giant Baba Yaga and was pinned in the middle. - The hosts of The Ring started their next segment on tinsel trends before the ring of a doorbell cut them off. It is the holiday season after all and they wondered who their special guest could be. It was Smashing Pumpkins frontman and president of the NWA, William Patrick Corgan. William Patrick Corgan joined the Ring Crew and had a major announcement. The National Wrestling Alliance will be joining The Co-Op this April in Philadelphia, Pennsylvania. And not just that, CORE will be hosting the very first CORE Rage Party that weekend featuring some of your favorite wrestlers and live music including a special one night only reunion performance by Zwan!

The two men wanted to thank Hyan and Kylie Paige for saving them from an attack at the hands of The TrustBusters on Thanksgiving night. Big Dan chugged a glass of Daphne Oz's eggnog while Bishop asked if they'd like to keep sharp between rounds and team with them next week in an eight-man tag match. Hyan and Kylie accepted their offer and Sam Leterna wondered if Kylie and Hyan may be stretching themselves too thin heading into the semi-finals.

Mack Cooks Sunday Lunch and Kerry Reveals a Secret Romance.
Mackenzie Boyd Fanfic.
"Right Moira you're going to rest today and I'm cooking Sunday roast" said Mack.
"That's kind of you Mack" said Moira pouring herself a whisky.
"And that won't help" Mack said "Look where it landed me. Always in trouble"
"OK I'll just have a couple" said Moira.
"Save some for the pudding I'm going to make" said Mack putting Moira's pinny on.
"What's that then?" Moira asked.
"Whisky Baba" Mack replied.
"Thought it was rum baba" Laughed Moira.
"Well it is but I'm improvising" Mack replied "Lawrence gave me the recipe when he was here"
"Sounds good to me" said Moira. "There's a joint of topside in the fridge"
"Would you mind if I asked Kerry and Chloe for dinner?" Mack asked.
"That could be a bit awkward but go on then" said Moira.
"And there'll be Aaron of course" said Mack.
"Whatever" said Moira pouring another whisky. "Haven't you asked Chas?" Moira asked.
"No way" Mack replied "Her and Aaron have fallen out big time"
"What's going on there?" asked a curious Moira.
"Ask no questions and I'll tell no lies" Mack replied.
"Well you just think on and dont mention anything about Kyle or Cain to Kerry" said Moira.
"Well I might have a pretty face but I'm no Bimbo so no need to worry" said Mack.
"You sure about that?" Moira teased
"Need any help?" Lucy asked.
"No thank you darling." Mack answered putting the meat in the oven.
"You know what the secret of great roasties are?" Mack asked Moira and Lucy.
"No" They replied "Go on surprise us"
"Cut them into triangles and par boil them" Mack answered.

"And I'm going to boil some yams with the potatoes and mash them with plenty of butter" Mack said showing off.
"Something smells good" said Aaron as he came in with Kerry and Chloe.
"Everything is coming along nicely" said Mack. "I made some stock earlier with the bones from the meat orders for the gravy" said Mack "Another tip from Lawrence. If you want great gravy you have to make it with a good stock and bones"
"And that lad certainly knew how to make delicious gravy" said Moira.
"We met him when he came to the bar Mackenzie" said Kerry "Chloe was quite taken with him"
"Did you have to say that Kerry" said an embarrased Chloe.
"He had a thing for Amelia at one time" said Mack "And he was quite hurt when he saw her with Noah"
"Right everyone. Dinner is about to be served" said Mack.

"You alright Chloe?" said Mack "Expecting a phone call?" he asked as Chloe kept checking her phone.

"No he won't be interested" said Chloe.
"Try me" said Mack.
"Her and Lawrence have a thing going" said Kerry much to Chloe's embarrassment.

"Well they're both the same age,19, said Kerry. So it's not surprising" Kerry answered.
"Well what do you think of that Mack?" Aaron said after he had dropped Kerry and Chloe off. "Lawrence and Chloe"
"Not sure" said Mack "She's a nice enough girl but she went with Nate for a while and she was a bit weird when he broke it off"
"It's probably just a flash in the pan with him living so far away" said Moira.
"Suppose so" said Mack.
"Don't tell me you're going to be the possessive father" teased Aaron.
"No not at all but they are both young and as you say Moira they live miles apart" said Mack. "Maybe I should have had a fatherly talk with him about you know what"
"What you?" Laughed Aaron "Someone needs to have a fatherly talk with you about you know what"
"Hey you" said Mack "You give me fatherly talks all the time"
"Well someone has to keep you in order" Aaron joked.

Baba, Baby!!!
Today is my sister’s birthday! Since I first baked a couple of individual rum babas a few years ago --actually four, and we both ate two in one sitting, watching Vera on telly!-- she has declared the tipsy soaked sponge one of her favourite cakes! So whenever she visits, or on occasions like her birthday, I make one, and we both relish it!! Here are all the babas I’ve baked thus far --minus the jar of mini ginger rum babas that was part of her Christmas gift, because, she has not tried them yet, and all my recipes are tried and tasted!)

Hey there, well on Sunday we had a halloween party and i made lots of spooky hors d'oeuvres for everyone. i made some "red rum" babas, salt and chilli calamari tentacles, and, "eyes on sticks" (mozeralla &cherry tomatoes !!!!!!!) Some great ideas there if you want to use them.And if you have any kids you can let them think theyre helping by getting them to line up the sticks in alphabetical order or whatever. Its pretty funny

Baba, or Wine Cake
The recipe makes two loaves. Weigh out one pound of flour and ten ounces of butter. Soften a yeast cake in one-fourth a cup of scalded-and-cooled milk. Then mix in flour from the pound taken to make a little ball of dough that may be kneaded. Knead this until very smooth and elastic. Then drop it into a small saucepan of lukewarm water. At once put the rest of the flour into a mixing-bowl. Add the butter, softened by the heat of the room (but not melted), half a teaspoonful of salt, one tablespoonful of sugar, and three eggs (unbeaten). Work the whole together with the hand, beating towards the eggs, beating the mixture very smooth between the addition of each of the eggs. By this time the little ball of yeast and flour will be very light. Lift it with a skimmer (take not water with it) to the butter and egg mixture, and beat the two together, thoroughly, in the same manner as before. Beat in also a cup of fruit, sultana raisins, citron, cherries, or a mixture of these. Turn into two buttered, Turk’s head moulds, half filling the moulds. When light, bake about half an hour. Have ready for one loaf a hot sauce. Pour this over a loaf of the cake as soon as it comes from the oven. Baste the cake with the syrup until the whole has been absorbed. Set onto a serving-dish. Spread the top of the cake with currant jelly or apricot marmalade. Sprinkle this with chopped pistachio nuts, and finish with whipped cream (unsweetened), and, if desired, preserved peaches or pine-apple. 
Rum Sauce for One Loaf of Baba
Boil two cups of granulated sugar and one cup of water about six minutes, or to make a syrup of good consistency. Add half a cup of rum, and use at once. This is the sauce used on the continent of Europe with this celebrated cake, but a rich (sweet) fruit syrup of any description may replace the rum sauce.

As of late, Kyle has been drinking more alcohol than usual. You worried for his health, and every time you asked him about it, he would brush it off and say that he was fine. This was far from the truth; he had begun to replace food with booze, and you could see the effect it was having on his body and mind.
          You didn’t like what he was doing to himself, but he only pushed you away and filled the void with more alcohol. He wouldn’t listen to Zero, Edgar, Jonah, or even Lancelot himself. Because of this, you took it upon yourself to remove all temptation away from Kyle to start the slow and difficult process of getting him clean. Or at least semi-clean.
         It started with taking all of his alcohol away; all the drinks that were open to the army was placed in a cabinet and locked tightly – only Jonah had the key and he would open it on special occasions. You snuck into Kyle’s messy room to steal the entirety of his personal collection (with Edgar’s help) and then you went to the clinic and removed everything from there as well.
         He noticed immediately that his drinks were disappearing rapidly, so he angrily approached you about it, demanding that you return it all.
         “No,” you state firmly. “It’s not good for you, and you won’t listen.”
         Kyle growls and pushes you against a wall in the main hall of the castle. His breath doesn’t smell like gin for once, but actually like mint… he brushed his teeth? You don’t flinch when his face is inches away from yours, but rather, you meet his harsh and cold gaze with a soft one.
         “Stop it. I don’t need help.”
         Part of you wants to slap some sense into him, but you know that would just make things worse.
         “Kyle, pleas-”
         But he’s already turned away to leave. You slouch against the wall and exhale shakily. You never thought that he would be so forceful about it… you really thought that he would want to get better.
         Zero comes from around the corner and makes sure that you’re alright.
         “He didn’t lay a hand on you did he?”
         You shake your head.
         “(Y/n)... you can’t remove all of it from him immediately though. He needs to be waned off of it. Little by little.”
         “Oh…” you reply, biting your lip.
         “Is there any way you can combine reducing his alcohol intake with actual food? He’s also not doing the training, so it’s putting him behind in the physical exercises.”
         You think about what Zero suggested for a few days until you come up with a perfect idea – a dessert that requires an alcohol syrup. If Kyle really should be waned off of alcohol, this would be a good start because the way the flavours were paired in the recipe you found would make it taste stronger while using less alcohol than he likely drank.
         Smiling contently to yourself, you started to prepare the most beautiful rum baba you possibly could. You add a little bit less rum than the directions call for, mainly because you plan to soak the berries for the top a bit in the same alcohol.
         After mixing the batter together, you pour it into the twelve tins and put it into the oven to bake. You lean back a bit and think about what fruits you should decorate the rum babas with. Strawberries were always a safe choice… you found a small box of strawberries and put them into a mason jar before filling it with water and rum.
         The tarts baked for a bit and you took them out when they were golden-borderline-brown. The batter smelled beautiful and it sprung back to the touch – just perfect. You turn them out of the tins and leave them to cool for five minutes before you put them back into the containers to soak them.
         Another hour later, you have a small box of four perfect rum babas and are on your way to the clinic to hand deliver them to Kyle.
         You knock on the door and become a bit worried when no one replies.
         When you reach for the handle, the door jerks open, revealing Kyle rubbing his eyes. He probably just woke up from a nap… he looked so tired.
         “What do you want?” he spits.
         You almost regret showing up, but you’re here to help him.
         “I made you some food.”
         “I don’t want it,” he grunts. Kyle tries to shut the door, but you push it open and brush past him. You take a seat on the messy cot, confirming your suspicions that he had been napping.
         “Please try one…” you say softly, opening the box. “I made them… for you. So you’d actually eat something for once.”
         Kyle covers his face and sighs. “Why do you have to bother about me? All I do is push you away…”
         You set the box of rum babas on the desk. “Because I worry about you.” You sigh as well, clasping your hands together and rubbing your thumbs together against the fabric of your skirt. “You’re supposed to be a doctor, Kyle, but you act like a child sometimes… especially about your drinking habits. It’s especially concerning when you deny something that is clearly an issue.”
         He tries to conceal the guilty expression by turning his face away from you.
         “So I had to interfere. I know it won’t get better overnight, and I made you some rum babas to helps ease into a more regular diet. When was the last time you actually ate solid food?”
         “Rum what?”
         “Rum babas. Don’t change the subject.”
         Kyle takes a seat on his swivel chair and leans forward against what was supposed to be the back of it. He grips the top of it and rests his chin on the edge.
         Even now, he was guarding himself against you.
         You don’t want to ask again, so an awkward silence passes between you before Kyle mumbles, “Like three days ago or something… I had an apple…”
         “If you like fruit, eat a rum baba. It’s got some strawberries and kiwis. Soaked in liquor, but at least they’re still semi-fruits. And go out into the sun for once. Sleep at night, not,” you look around you, trying to make your point about him sleeping in the clinic cots, “in the middle of the day whenever you feel bad.” You look up and meet his gaze directly. “Please, Kyle…”
         You stand up and start to walk to the door. You hope that he’ll catch your hand or say something to keep you from leaving, but he doesn't. So you cluck your tongue and leave.
         Because you’ve left, you don’t see tears prickling in Kyle’s eyes – the first time he’s had a proper cry in a very long time. He leans back slightly and picks himself up to try one of your rum babas. He bites into it and is surprised by the flavor that is packed into the small cake. It tastes good – the fruit and the rum combined. He couldn’t get drunk from only eating four of them, but it would satisfy him for at least a few hours… but then Kyle thought about what you said about pacing himself. Despite wanting another one, he closes the lid and makes the bed properly so he doesn’t have the urge to go back to sleep.
         You hear a gentle knock at your door, so you get up to answer it. You’re surprised when no one is at the door. A small white envelope catches your attention. It has your name written in short script and a wax seal on the back. The imprint has the seven of hearts is in the golden-red wax, making your heart flutter for a second.

         This letter will be short because I’ve tried to write it about ten times, but ripped up every attempt. I apologize for being… well, the way I am. Thank you for caring for me and for helping me. Your resolution has inspired me, and I’ll listen to you.
         I can’t really voice everything else I want to say, so can we please meet in the garden tonight?

Sfogliatelle („little leaves”) from Napoli are made by rolling out dough and forming it into a log, then trimming the ends so that the layers separate when baked, creating flaky “leaves.” They are filled with cream and topped with fruit and powdered sugar. Today, they stand chief among a group of Neapolitan pastries that have brought the city fame as a center for sweet treats. These include: • Baba au rhum: yeast cake soaked in rum syrup, served plain or sweetened with cream, ricotta, or Nutella • Torta caprese: flourless chocolate cake, a specialty of the island of Capri, made with almond flour, dusted with powdered sugar • Zeppole di San Giuseppe: fried or baked dough balls stuffed with pastry cream, ricotta, or custard, sometimes made with dried fruit, traditionally served on St. Joseph’s Day, March 19, which pays homage to this patron saint of pastry chefs • Sfogliatella Santa Rosa, considered by many to be the original recipe, often incorporates dried fruits like cherries or raisins, along with a little liqueur • Sfogliatella riccia (curly) forms many layers that curl up as the pastry cooks • Sfogliatella frolla (smooth) is a less time-consuming version that does not form the layers but preserves all the flavor • Sfogliatella aragosta (lobster tail) resembles the curled tail of a crustacean and often incorporates a very sweet whipped cream
