National Guacamole Day
Whether that bright green, creamy and chunky treat is piled on top of a tortilla chip or used as a garnish for a Mexican entree, guacamole is a delicious way to truly enhance a snack or a meal!
History of Guacamole Day
While the day itself doesn’t exactly seem to have any particularly poetic origin, Guacamole Day is a terrific excuse to indulge in the tastiest of dips!
However, guacamole itself seems to have its origins with the Aztec people group at some time before the 16th century. Early guacamole recipes only included mashed avocado and it became very popular due to the excellent health benefits of the avocado. Adding in the tomatoes and onions came later, which was a natural development since those are also native to the Americas. Eventually the lime juice was added, which originated in the Middle East but made its way west with the arrival of Christopher Columbus.
The word, guacamole, originally came from the word “āhuacamolli” which translates literally to mean “avocado sauce”.
Not only is it a great addition to a savoury spread, it’s also good for you! This is because “guac” is made from avocados, which are nutrient dense and packed with healthy fats that help the body lower bad cholesterol, all of which contributes to having a good ol’ time and living as long as possible.
How to Celebrate Guacamole Day
Celebrating this day is easy and can be filled with fun as well as delicious flavors! Enjoy the day with some of these ideas:
Eat Guacamole
Even if there’s no particular reason, other than it being an awesome day, go ahead and celebrate Guacamole Day by picking up some at the store! Don’t forget to grab something to put it on, such as a bag of tortilla chips, a selection of veggie sticks (carrots, celery or cucumbers), or a piece of tasty toast. Eat it with french fries, slather it on a quesadilla or use it as a filling or garnish for tacos. The options for eating guacamole are virtually endless!
Learn to Make Guacamole at Home
Freshly made guacamole is the most delicious part of this day! All it takes is buying some ripe avocados and making it from scratch at home. Blend the avocado, season with salt and it’s done!
Of course it might be even tastier to add a bit of flavor to it, such as lemon or lime juice for some zesty citrus notes. Or perhaps some tomato, garlic and onion to expand the palette, the choice is completely personal.
Find Creative Ways to Eat Guacamole
Many people associate guacamole only with corn tortilla chips. But there’s so much more to it than that! For those who are trying to get a bit healthier and forego the chips, or for those who are just looking for a bit of adventure, guacamole has a lot of creative ways it can be used for snacks and meals. In addition to using it as a dip, try out these ideas for guacamole:
Spread It On a Sandwich. Guacamole makes a great sandwich condiment. Simply pile it on top of a hamburger or chicken burger for a tasty treat. Guac is also tasty when used as a healthy addition to a grilled cheese sandwich.
Top a Pizza With It. That’s right! A boring pizza can be made delicious with guacamole. Some people like to combine it with Buffalo sauce and chicken as well.
Stuff Mushrooms with It. Keep it vegetarian by filling hollowed out mushrooms with guacamole and topping with a spicy Buffalo sauce. Yum!
Make It Into a Salad. Guacamole can make a healthy and delicious base for a salad. Create a Greek fusion by adding feta cheese, or turn it a bit sweet by piling it up with chunks of watermelon or peaches.
Have a Guacamole Day Party
Invite friends and family over for a little get together with the intention of celebrating Guacamole Day. Give a nod to guacamole’s origins by decorating and dressing up in costumes that channel Central American culture.
Of course, the table of refreshments will need to center around the guest of honor–guacamole! But it can be filled with all sorts of other south of the border treats as well. Try offering some tostadas, chips & salsa, taquitos or quesadillas. Toss in some churros or flan for a delicious dessert.

Avocados are a fruit. That’s right, technically guacamole is actually a smashed fruit salad!
Hass Avocados were banned in the US. In an effort to control pest problems, the beloved Hass Avocado was once banned in the United States. From 1914 to 1997, it was illegal to import these delicious fruits. Everyone is much happier now that they are legal again.
The World Record for Guacamole was over 3 tons. Created by a wholesaler in Jalisco, Mexico, this batch of guac took more than 800 people to make it. It contained more than 25,000 avocados, 3,500 tomatoes and 3,000 lemons.
Remember–it’s not necessary to only indulge in this tasty treat on Guacamole Day. After all, it’s good for you all year round, this is just an extra special reason to enjoy it!

Our son Matt and his girlfriend Michelle arrived in town yesterday from Santa Fe. Sheila and I picked them up at the airport. I'd never met Michelle; Sheila had met her once before.
On our way home we stopped at Matt's Bar (that's actually the name of the bar) for a Jucy Lucy (that is actually how it is spelled). I hadn't been there in a long time. Which is stupid of me because the burger stuffed with molten cheese is amazing. I thought it was a nice way to introduce Michelle to Minneapolis.

Back at our house we paused to let the dogs bark at the newcomers. Ella seemed to remember Matt. She quickly stopped barking and started shrieking happily, then gave him a big hug when he knelt to greet her. Even Oliver stopped barking pretty quickly. Sulley and Stella were a bit more rambunctious but eventually settled down.
We all hung out for a while and pet dogs. I still don't exactly understand what Matt and Michelle do at their jobs in Los Alamos. Much of it is classified or secret. Nonetheless, we had a nice time catching up with Matt and getting to know Michelle.
Later we brought them to our local brewery. The place was busy. Several groups were having holiday gatherings, as evidenced by large trays of cookies and snacks. At a table near our were several young moms with babies and toddlers.
I will say it again: I like the youngsters in breweries. Adults don't misbehave around the little ones. Two dudes who might otherwise argue and swear loudly over which Viking will play quarterback on Sunday won't do that in front of little Katlynnght (the second T is silent) and Ashlay, nor do they dare wake a baby sleeping in a stroller. The kids hold up their end of the deal too, because I never hear any crying or whining in breweries, except my own when Sheila says it's time to leave.
In the evening we went to Boom Island Brewing in Minnetonka. One of my sisters and her son met us, as did a coworker of Sheila's who is the same age as Matt and Michelle. We played trivia. Out of 18 teams ours finished mid-pack, which I found disappointing because everyone in our group of seven is smart. Or seems smart!!
There was a food truck in the brewery's parking lot. It's well known for having one of the best burgers around (besides a Jucy Lucy). The truck's burger is $17. A bit high, I think, especially when you have to leave the warm brewery and order while standing outside. But the food is good. However, a Matt's Jucy Lucy is just under $10 and a nice server sets it in front of me, next to a basket of hot fries and a cold Grain Belt Premium.
This (below) is getting ridiculous. If it keeps up, what will the real restaurants, which may charge the same price for a burger and have servers who hustle and make multiple trips to your table, start to add for a surcharge? I've already seen mandatory 18% service charges at some places.

Is there ever something Jake does that’s such an Aussie thing to do that has Amilia jumping his bones? The word mate coming out of his mouth all genuine in his Texas accent has me swooning.
Terms of Endearment // Jake Seresin
Jake Seresin looking some guy hitting on Amilia while she’s working, dead in the fucking eye and glaring a low “Mate, I’d walk away if I were you.” Would have Amilia Fisher in a fucking frenzy.
“Jake?” It’s just so perfect the way he effortlessly picks her language up, it makes Amilias heart swell ten times its normal side.
“The nerve of that guy—“ Jakes watching him walk away, he hasn’t stopped eyeing him off. “I was standing right here.” He’s huffing to himself all the while Amilia is rounding the bar with her keys in hand.
“Hungman—“ It the teasing way she says it that has Jake blinking back a bashful smile. “I’ve got the Santa Fe.” Amilia dangles the keys to her sisters car right in front of Jake. “We can put to seats down.”
“Go.” It happens a few times. “Move, before we get busted baby.” Jakes looking over his shoulder for Penny. He’s holding Amelia’s hips as she giggles and heads towards the front door.
I feel like Jake would pick up a lot of colloquialisms from Amilia. I feel like at first it would take him a while to wrap his head around the abbreviations and general slang. Arvo’ ‘Servo’ ‘Cuppa’ ‘Maccas’ ‘Esky’ ‘Thongs’ To name just a few.
But soon enough he’s letting saying slip like ‘She’ll be right’ When Rooster dints the tailgate of his Bronco and “Oh yeah it was hard yakka today.” When Chelsea’s asking how work was one particular Friday afternoon when the gang is over at Paybacks for a few drinks and some burgers.
And it drives Amilia feral. Because it just sound so funny and so endearing coming from Jake. All he needed was a mullet and a set of footy shorts and he’d home among the gumtrees in no time.
And it helps to know a few things here and there for when Jake makes his trip to Australia to win Amilia back after they combust in a spectacular fashion. Because when Inez is in a foul mood that the milks expired it’s Jake who’s offering to run to the servo.

Wellness Wednesday:
Cleaning Out My Closet Fridge
Part of my wellness journey is working on my financial wellness - What are my spending habits? What can I do differently? What can I cut out?
Couple weeks ago I challenged myself to use up as much as groceries/pantry supplies before buying more groceries - maybe meal prep here and there.
Well, I've been doing good on clearing out the freezer - working on the fridge and pantry now.
I noticed I had an abundance of deli meat and breads laying around - so - I was very conscious about eating up those foods first before they went bad.
To be honest I was little more conscious this week because not too long ago I had entire loaf of bread get moldy and I just despise when that happens.
So - I at a ton of sammies this week. Really spiced it up by changing my breads, meats, and cheeses - never got boring.
Other added benefit - I saw significant drop on my weekly grocery bill. A practice I want to entertain more in the future.
Another step to help out my pocket book is I made the decision not to buy any more expensive nuts - aka - my Wonderful's Pistachios. I am going to see if I can find a more cost effective snack alternative... Plus, I still have plenty to finish off in my cabinets.
Beyond my wallet and weekly diet - I broke the 2 week plateau streak and hit some weight loss (slightly over 4 pounds). Felt good considering I didn't do anything besides partake in some extra deli meats.
Sleep-wise - man-oh-man - I need to sleep. I hate how this is a constant battle.
Socially - saw some fam - good times/stories/jokes - and - tomorrow I plan on seeing some good friends at the movies... and hope to enjoy said movies.

Texas wants to post the Ten Commandments in public school classrooms. Other states want to bring religion back to schools and public spaces. It ought to be a no-brainer — they cannot do that. The Supreme Court long ago said all this was unconstitutional. But don’t be surprised if this Supreme Court reverses or narrows its previous precedents and allows it.
The irony here is that at a time of growing secularism in American society, the current conservative majority on the court is becoming even more pro-religion, reversing decades-old precedents. Under Chief Justice John Roberts, the court has moved away from using the Establishment Clause to enforce a “high wall of separation” to protect non-Christians and nonbelievers; it now uses the Free Exercise Clause not simply to accommodate religion but to impose the religious views of a minority upon an emerging secular majority. Call this the “New Sectarianism.”
The First Amendment seeks to ensure neither government-endorsed religion (the Establishment Clause) nor interference with individual religious belief (the Free Exercise Clause). While one may not wish to make too much of it, the first words of the First Amendment are “Congress shall make no law respecting an establishment of religion.” Perhaps priority in language reflected priority in the importance to our constitutional framers.
As late as the mid-1960s, around 98 percent of Americans expressed faith in God or mainline Christianity. American religiosity was expressed in public policy, such as blue laws that limited store openings on Sunday and regulations making extramarital and nonmarital sex illegal. Birth control was banned and abortion criminalized. To enforce this morality, public schools mandated the Pledge of Allegiance, prayers and the posting of the Ten Commandments.
But the Supreme Court came to the rescue to defend the public and the minority of non-believers. It did that first with the West Virginia State Board of Education v. Barnette decision in 1943 that declared unconstitutional a state law mandating the Pledge of Allegiance. Such a law violated the religious rights of Jehovah’s Witnesses.
But the major precedents came from the liberal Warren Court of the 1960s. In cases such as Engel v. Vitale and Abington School District v. Schempp, it ruled that school prayers and Bible readings violated the Establishment Clause of the First Amendment. The Supreme Court and other federal appellate courts issued more than 60 opinions during the 1950s and 1960s generally using the Establishment Clause to protect religious minorities and the public in general from overwhelming Christian majorities.
But the Court remained vigilant even as justices came and went. In 1980, the court under Chief Justice Warren Burger in Stone v. Graham used the Establishment Clause to strike down a posting of the Ten Commandments in a public school. Even as late as 2000 under Chief Justice Rehnquist, a majority of the Supreme Court ruled in Santa Fe Independent School District v. Doe that prayers at school, including at a football game, were an Establishment Clause violation.
The consistent rule for more than half a century was that the Establishment Clause protected the public, including the nonbelieving or non-Christian minority, from religious persecution by the majority. This was the “high wall of separation” that Thomas Jefferson and James Madison described.
Beginning slowly under the Burger and then the Rehnquist Courts, the accommodationists took over. In cases such as Lemon v. Kurtzman and Allegheny v. ACLU, the Court began to erode the wall of separation doctrines, seeking to accommodate and balance the free exercise of religion with the Establishment Clause.
But accommodation has given way to New Sectarianism. Under the Roberts Court, there has not been a single case where claims of free exercise of religion have been rejected. The court has consistently defended the rights of an individual or minority to impose its religious views on a majority.

National Totally Chipotle Day 
Each year on May 5th, National Totally Chipotle Day celebrates right alongside Cinco de Mayo and is dedicated to the chipotle, a smoked, dried jalapeno pepper.
There are different varieties of jalapenos and they vary in size and heat. At one time, chipotles were primarily found in the markets of central and southern Mexico.  As Mexican foods became more popular in the more northern areas of North America, the jalapeno production and processing expanded north into the United States.
Chipotles are often an essential ingredient and add a mild spiciness to many different dishes in Mexican cuisine. While you expect to find them in salsas and other sauces, don’t hesitate to use them in other ways, too. Add them to soups and marinades if you want to bring the heat to a dish. Bean or lentil dishes shine when you add chipotle to them. Do you like sweet and spicy flair? Add chipotle to your jellies. When pairing chipotle with a slice of smoky cheese, you won’t be disappointed. Top it on a grilled bbq chicken pizza to wow guests.
You can even add it to desserts for a surprising but delicious twist. For example, homemade dark chocolate ice cream with the hint of smoky chipotle in every bit is a real winner. You can turn down the heat by removing the seeds and membrane or leave them in for a more exciting experience.

13.10.2023 - New York, New York
Am letzten November Wochenenden war es endlich so weit. Mit einem Nachflug ging es nach New York. Ein lang ersehnter Ausflug. Natürlich hatte der Flug Verspätung und ohne Komplikationen ging es dann auch nicht. Eine junge Frau neben uns hatte einen Rotwein zu viel und erbrach sich über unsere Sachen. Das ging schon mal gut los.

Am Freitag landeten wir aber um 08.30 Uhr doch irgendwann im Regen in NYC. Was wir zu dem Zeitpunkt nicht wussten: aufgrund von massiven Regenfällen stand die Stadt unter Wasser..... Zumindest für eine Stunde. Wir bekamen davon aber nichts mit. Der Regen der auf uns wartete, rief bei den Hamburger Mädels doch Heimat Gefühle hervor.
Mit der Subway ging es für uns Richtung Manhatten. Mit offenen Mündern landeten wir direkt auf dem Times Square. Von Santa Fe direkt in die belebteste Umgebung New Yorks war dann doch was anderes. Zurückin der Großstadt haben wir uns dann aber doch direkt wieder wie ein Fisch im Wasser gefühlt. Trotz allem war es Zeit für ein spätes Frühstück und einen großen Kaffee. Schlaf ist im Flugzeug doch etwas zu kurz gekommen. Frisch gestärkt und mit Regenschirmen bewaffnet erkundeten wir New York und spazierten zum Empire State Buildung (auch nur ein weiteres Hochhaus) und dem Flatiron Buildung (auch irgendwie unspektakulär) trotz allem war eine "normale" Umgebung richtig belebend!
Irgendwann brauchten wir doch eine Pause und machten einen ausgiebigen Mittagsschlaf. Zum Glück war unser Hotel nur zwei Blocks vom Times Square, dass der Weg recht kurz war. Abends brachen wir dann doch für einen Burger und das erste Bier auf. Auf dem Rückweg sammelten wir noch andere PPPler ein, bevor es dann endgültig Zeit für das Bett war.
Den Samstag starteten wir ein komplettes Touri-Programm. Vom 9/11 Memorial, ging es zur Brooklyn Bridge. Von dort spazierten wir über die Wall Street weiter zur Statue of Liberty, genossen eine sehr teure mittelmäßige Pizza in Little Italy und ließen uns auch China Town nicht entgehen. Die Stadt ist einfach besonders. An jeder Ecke Touristen und mehr Deutsche als Amerikaner und doch hat sie ihren ganz eigenen Zauber, der uns von Sekunde 1 nicht mehr losgelassen hat. Kein "How are you?", weil es eh niemanden interessiert (herrlich ehrlich), überall Hochhäuser und doch irgendwie Platz. Man kann überall hinlaufen und an die Kaffeequalität kann man sich definitiv gewöhnen. Nach einem kleinen Päuschen ließ wir es uns dann aber auch nicht nehmen in einer Bar mit Karten, viel guter Laune und Cocktails den Abend ausklingen zu lassen.
Am Sonntag hatte jeder andere Pläne, dass alle alleine loszogen. Man hat sich doch schon fast gefühlt, als würde man dazu gehören. Mein Ziel war die 5th Ave. Absolut überbewertet und auch nur eine Straße. Allerdings ist die Lennox Libary definitiv einen Besuch wert! Nach dieser Erkenntnis traf ich Louisa im Central Park wieder. Von dort spazieren wir dann zum Broadway. Unser Nachmittags-Programm war nämlich das Broadway-Musical Hamilton. Das Theater war sehr viel kleiner als erwartet, die Show sehr minimalistisch, aber alles in allem ein großartiges Musical, was sich definitiv lohnt! Im Anschluss gab es für uns Mittag/Abendessen mit Blick auf den Times Square. Abends stand für Louisa und mich dann noch das Rockefeller Center auf dem Programm. Bis zu unserem Termin hatten wir einen Wein und viele gute Gespräche inmitten der Skyscraper.
Nach einem nächtlichen Besuch des Top of the Rock war es dann aber definitiv Zeit für das Bett. Immer noch geplättet von den Eindrücken und der Magie der Stadtlichter schliefen wir auch definitiv sehr gut.
Am Montag lagerten wir die Rucksäcke im Hotel ein, spazierten durch den Central Park zur Upper East Side. Dort genossen wir in einem Café ein Kaffee nach dem andere , beobachteten die Stadt und ihre Menschen und spielten Romme. Irgendwann war es dann aber Zeit aufzubrechen. Mit einem kurzen Schlenker über die Grand Central Station ging es erst kurz ins Hotel und dann zum Flughafen. Selbstverständlich hatte der Flug Verspätung, sodass wir erst um 03.30 Uhr am Dienstag in die Betten fielen, bevor es dann wieder zur Uni ging. Der Trip hat so viel Spaß gemacht und Energie gegeben, obwohl wir viel gelaufen sind und wenig geschlafen haben. Das ist definitiv nicht das letzte Mal New York!
